Tamale Pie is a Mexican-inspired one-pot dish full of ground beef, cornbread, and cheese!

1 pound lean ground beef
1 onion (chopped)
1 bell pepper (diced, green or red)
2 cloves garlic (minced)
2 tablespoons taco seasoning
¼ cup water
¾ cup enchilada sauce
2 cups cheddar cheese (shredded, divided)
1 box corn muffin mix (8.5 oz)
½ cup sour cream
½ cup corn kernels (canned, fresh, or frozen)
⅓ cup milk
1 egg
fresh cilantro (chopped, for garnish)

Steps:

  • Preheat oven to 350ºF.
  • Combine beef, onion, bell pepper, and garlic in a 10" ovenproof skillet. Cook until no pink remains. Drain any fat.
  • Add taco seasoning and ¼ cup water. Simmer until water evaporates. Stir in enchilada sauce. Top with 1 ½ cups of cheese.
  • Combine corn muffin mix, sour cream, corn, milk ,and egg. Spread over the beef mixture.
  • Top with remaining cheese and bake 35-40 minutes.
  • Garnish with cilantro and serve.

Keep these individual tamale pies on hand in the freezer to bake on busy days. Using Make-Ahead Mexican Ground Beef makes this recipe extra speedy!

6 (5x1 5/8-inch) aluminum foil pot pie pans
2 cups frozen Make-Ahead Mexican Ground Beef
1 can (15 oz) black beans or pinto beans, drained, rinsed
1 can (14.5 oz) diced tomatoes, undrained
1 can (8 oz) tomato sauce
1 can (4.5 oz) Old El Paso™ chopped green chiles
1 cup yellow cornmeal
3/4 cup water
3 1/4 cups water
1 teaspoon salt
3/4 cup shredded Cheddar cheese (3 oz)

Steps:

  • Spray foil pans with cooking spray. In large bowl, mix frozen beef, beans, tomatoes, tomato sauce and chiles. Divide mixture evenly among pot pie pans, about 3/4 cup each.
  • In small bowl, mix cornmeal and 3/4 cup water. In 2-quart saucepan, heat 3 1/4 cups water and the salt to boiling. Add cornmeal mixture, stirring constantly. Cook over medium heat 4 to 5 minutes, stirring constantly, until mixture thickens and boils; reduce heat.
  • Cover and simmer about 10 minutes, stirring occasionally, until very thick; remove from heat. Stir until smooth. Spoon and spread about 2/3 cup cornmeal mixture over each pie, sealing to edges.
  • Cover loosely with foil; freeze about 1 hour. Place in freezer container or resealable freezer plastic bags; seal well and label. Freeze up to 2 months.
  • To bake, heat oven to 350°F. Do not thaw. Place desired number of pot pies on cookie sheet. Bake uncovered 40 to 50 minutes or until filling is hot and bubbly. Sprinkle each with 2 tablespoons cheese; bake 3 to 5 minutes longer or until cheese is melted.

It's back to school and back to work-all the more reason to have dinner ready in the freezer. This gluten-free recipe is made with ground dark-meat turkey, jalapeño chiles, crushed tomatoes, and shredded Monterey Jack cheese.

3 tablespoons olive oil
2 pounds ground dark-meat turkey
1 large onion, finely chopped
2 minced jalapeno chiles (seeds and ribs removed for less heat, if desired)
1 tablespoon ground cumin
Coarse salt and ground pepper
1 can (28 ounces) crushed tomatoes
4 cups fresh (from 6 ears) or thawed frozen corn kernels
Cornmeal Crust
1 cup shredded Monterey Jack cheese (4 ounces)

Steps:

  • Preheat oven to 375 degrees. Make filling: Heat 2 tablespoons oil in a large nonstick skillet over medium-high heat. In two batches, brown turkey, stirring occasionally, about 10 minutes. Transfer to a bowl.
  • Reduce heat to medium. Add remaining tablespoon oil to skillet. Cook onion, jalapeno, and cumin, stirring occasionally, until soft, about 5 minutes; season with 2 teaspoons salt and 1/4 teaspoon pepper. Return turkey to pan; stir in tomatoes and corn until combined.
  • Make Crust. Pour 1/8 of the crust (1/4 cup) into the bottom of each of eight 10- to 12-ounce ramekins. Smooth tops with a spoon; cool 5 minutes. Top each with turkey filling, dividing evenly; sprinkle with cheese.
  • Bake on a rimmed baking sheet until filling is bubbling and cheese is melted, about 30 minutes.

While this tamale pie has very little to do with its south-of-the-border namesake, it's a really delicious recipe all the same.

2 pounds ground beef
2 cups diced poblano peppers
1 teaspoon salt
1 (16 ounce) jar salsa
½ teaspoon dried oregano
1 teaspoon ground dried chipotle pepper
2 (8.5 ounce) boxes dry corn muffin mix (such as Jiffy®)
2 eggs
⅔ cup milk, divided
4 ounces shredded Cheddar cheese, divided
4 ounces shredded Monterey Jack cheese, divided
8 ounces frozen corn, thawed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Spray a 9x13-inch casserole dish with cooking spray.
  • Cook and stir ground beef in a Dutch oven over medium-high heat until meat starts to brown and release juices, about 5 minutes.
  • Reduce heat to medium and stir in poblano peppers, salt, salsa, oregano, and chipotle powder; cook and stir until seasoned beef is crumbly and no longer pink, about 10 minutes.
  • Mix one package of corn muffin mix in a large bowl with 1 egg and 1/3 cup of milk. Whisk to combine. In a separate large bowl, mix the second package of corn muffin mix with 1 egg, 1/3 cup of milk and half the Cheddar and Monterey Jack cheeses.
  • Spread the prepared corn muffin mixture without cheese into the prepared baking dish. Sprinkle corn over the muffin mix, followed by remaining half of the cheeses, then the beef mixture.
  • Spoon the corn muffin mix with cheese on top of the beef and carefully spread over the top with a fork, leaving about half an inch from the edges of the pan.
  • Bake in the preheated oven for 50-60 minutes, until golden brown.

  • Preheat the oven to 400 degrees F. Spray one 9 X 13-inch baking dish with nonstick cooking spray. Set aside.
  • Filling: Heat a large skillet over medium heat. Add ground beef, onions, and red bell pepper and cook until beef is cooked through and onions are softened. Season with beef bouillon and all seasoning. Add garlic and sauté 30 seconds. Add corn, black beans, diced tomatoes, green chiles, tomato paste and beef broth and stir until well combined. Heat over medium heat to warm through then stir in cheese; set aside.
  • Topping: Whisk together all the dry ingredients (masa harina, baking powder, salt) in a large bowl. In another bowl, beat the egg and chicken broth until combined, then mix that into the bowl of dry ingredients. Stir in the melted butter followed by cheese.
  • Assemble: Remove 1/2 cup of the masa batter and stir it into the filling then transfer the filling into prepared pan and spread into an even layer. Transfer the remaining masa batter to the 9x13 and evenly spread over the filling. Bake for 30-40 minutes. Note that the topping may not look cooked so make sure to check it anyway with a toothpick; tamale pie is done when a toothpick inserted into the center of the masa topping comes out clean. Serve warm with sour cream, salsa, hot sauce, tomatoes, avocados, etc.
