1 lb(s) lean ground beef
2 Tbsp olive oil
1 large red onion, chopped
½ green pepper, chopped
½ red pepper, chopped
½ yellow pepper, chopped
2 large carrots, chopped
4 stalks celery, chopped
2 cloves garlic, minced
corn kernels from 2 cobs of corn
1 jalapeno pepper, chopped
2 Tbsp chili powder
2 Tbsp chili powder
1 Tbsp paprika
1 Tbsp ground cumin
1 cup brewed coffee
1 cup red kidney beans
1 cup white beans
1 can (540 mL) crushed tomatoes
2 cans (1.5 L total) diced tomatoes
salt and pepper
1 bunch (8-10) basil leaves

Steps:

  • In a large pan, add oil, and heat to medium-high.
  • Once heated, add meat, cooking until browned.
  • Add garlic, onion, peppers, carrot, celery, and corn, along with spices. Cook for 8-10 minutes, until everything becomes fragrant, and onions begin to turn slightly translucent.
  • In a slower cooker, add ingredients from your pan, then return the pan to your element, deglaze with coffee, and add to slow cooker.
  • Add in the beans, and tomato, cooking on low for around 8 hours, or high for about 4 hours. If you are using unsoaked beans, you will likely need to cook for a longer time period on low, for the beans to soften up (I cooked the chili this way, and cooked for about 8 hours on low).
  • Once cooked, serve with a some shredded cheese, a dollop of sour cream, diced red onion, and some nice bread.

3 tbsp olive oil
500g beef mince
1 onion , finely chopped
1 celery stick , finely chopped
1 large red pepper , thickly sliced
2 garlic cloves , finely grated
2 tsp ground cumin
1 tsp smoked paprika
2 tsp dried oregano
2-3 tbsp chipotle chilli paste
3 tbsp tomato purée
400g can chopped tomatoes
400ml beef stock
2 x 400g can black beans , drained
4 small squares dark chocolate
tortilla chips or cooked rice and soured cream, to serve

Steps:

  • Set the slow cooker to low. Heat 1½ tbsp oil in a large, non-stick pan over a high heat and fry the mince for 10-12 mins or until evenly browned. Tip into the slow cooker.
  • Heat the remaining oil in the pan. Fry the onion, celery and pepper for 10 mins or until softened. Add the garlic, cumin and paprika and fry for 1 min. Tip into the slow cooker.
  • Stir in the oregano, chipotle paste, tomato purée, tomatoes and stock. Season. Cover and cook for 6-8 hrs.
  • Stir in the beans and chocolate during the final 30 mins of cooking. Serve with a bowl of rice or tortilla chips and a dollop of soured cream.

2 cans (16 ounces each) kidney beans, rinsed and drained
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
2 medium onions, chopped
1 green pepper, chopped
2 garlic cloves, minced
2 tablespoons chili powder
1 teaspoon salt
1 teaspoon pepper
Shredded cheddar cheese and thinly sliced green onions, optional

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. , Transfer to a 5-qt. slow cooker. Add the next 9 ingredients. Cover and cook on low for 8-10 hours. If desired, top individual servings with cheese and green onions.

One of my most popular recipes and for good reason! This is the best chili I've ever tasted! Slow cooking it allows for the flavors to meld and the most tender beef. Try it tonight and see why everyone loves this! Recipe makes about 12 cups.

1 Tbsp olive oil
2 lbs lean ground beef
1 large yellow onion, (finely chopped)
3 cloves garlic, (finely minced)
2 (14.5 oz) cans diced tomatoes with green chilies*
3 (8 oz) cans tomato sauce
1/2 cup beef broth
2 Tbsp chili powder
2 1/2 tsp ground cumin
2 tsp paprika
2 tsp unsweetened cocoa powder
1 tsp granulated sugar
1/2 tsp ground coriander
Salt and freshly ground black pepper
1 (15 oz) can dark red kidney beans, (drained and rinsed)
1 (15 oz) can light red kidney beans, ( drained and rinsed)
Shredded cheddar cheese, (for serving)

Steps:

  • Heat olive oil in a large and deep non-stick skillet over medium-high heat.
  • Add onion and saute 3 minutes, then add garlic and saute 30 seconds longer. Pour onions into a 6 or 7 quart slow cooker (I like this one HERE).
  • Return skillet to medium-high eat, add beef and cook stirring occasionally until beef has browned.
  • Drain most of fat from beef, leaving about 2 Tbsp in with beef (this is optional, I think it ads flavor but you can drain it all if you'd prefer). Pour browned beef into slow cooker.
  • Stir in diced tomatoes, tomato sauce, beef broth, chili powder, cumin, paprika, cocoa powder, sugar, coriander and season mixture with salt and pepper to taste.
  • Cover with lid and cook on low heat for 5 - 6 hours.
  • Stir in dark and light red kidney beans and allow to heat through, about 2 minutes. Serve warm with desired toppings.

3 tablespoons canola oil
2 pounds ground beef chuck, broken apart
Kosher salt
2 medium yellow onions, finely chopped
8 medium cloves garlic, minced
1 Fresno chile, halved, seeded, cut into 1/2 inch slices
1 red bell pepper, halved, seeded, cut into 1/2 inch slices
3 tablespoons tomato paste
1 (28 ounce) can whole, peeled tomatoes
2 tablespoons chili powder
1 bay leaf
1/2 teaspoon ground cumin
1/2 teaspoon allspice
2 teaspoons red pepper flakes
2 tablespoons apple cider vinegar
1 (15.5 ounce) can black beans, drained and rinsed
Shredded cheddar
Sour cream
Sliced avocado
Thinly sliced scallions
Lime wedges
Tortilla chips

Steps:

  • Brown the meat: In a large saute pan heat 1 tablespoon of the oil over medium heat. When the oil begins to smoke lightly, add the beef and season with salt. Cook over medium heat, stirring with a wooden spoon, until the meat browns, about 5 minutes. Transfer beef to a large mixing bowl.
  • Brown the vegetables: In the same pan, stir in the onions and the remaining oil. Add the garlic, chiles, bell pepper, tomato paste, and a generous pinch of salt. Cook until the vegetables start to brown, about 5 minutes.
  • Cook the chili: While the vegetables are cooking, to the slow cooker add the tomatoes, chili powder, bay leaf, cumin, allspice, red pepper flakes, and 2 cups of water; stir to combine. Add the vegetables to the bowl of meat and stir to combine, then add to the slow cooker. Stir in the vinegar. Cover and set the cooker to low; cook for about 8 hours. Check after a couple of hours. Stir and taste for seasoning. Thirty minutes or so before serving, turn the slow cooker to high and stir in the black beans and cook for an additional 30 minutes.
  • Serve: Allow it to "rest" for about 15 minutes before serving. Stir in the scallions. Taste for seasoning. Serve with any or all of the following: cheddar, sour cream, avocado, scallions, lime wedges, and tortilla chips.

1 tbsp rapeseed oil
1 large onion, finely chopped
2 garlic cloves, crushed
2 tsp ground cumin
1 ½ tsp sweet smoked paprika
1 tsp mild chilli powder (optional)
2 carrots , diced
2 sticks celery, diced
1 courgette, diced
1 red pepper, diced
400g lean beef mince
3 x 400g cans chopped tomatoes
1 beef stock cube
1 tbsp tomato purée
1 x 400g can green lentils, drained and rinsed
1 x 400g can flageolet beans, drained and rinsed
a selection of the following to serve: rice or tacos, soured cream, grated cheese and sliced avocado

Steps:

  • Heat the oil in a heavy-based pan. Cook the onion for 10 mins until softened and starting to caramelise. Add the garlic and spices and cook for a further 1-2 mins.
  • Transfer to a slow cooker, along with the diced vegetables, mince, chopped tomatoes, stock cube and tomato purée. Stir well. Cook on low for 6-7 hours. About half an hour before serving, take off the lid and use a stick blender to blend in the vegetables (if your children aren't keen to eat veg) or leave chunky. Stir through the lentils and flageolet beans. Replace the lid and heat through for a further half hour. Stir and serve with rice or tacos, soured cream, grated cheese and sliced avocado.

This is my favourite version of chili, that I make often. It freezes wonderfully for a great make-ahead meal or freeze the leftovers for lunches or a quick dinner. It is not overly spicy so my daughter will eat it! If you like things spicy, increase the chili powder and cumin. One tip if your child still finds it too spicy, is to add additional canned beans in tomato sauce to their portion. It works! :) This is great with corn bread on the side. NOTE: You can substitute part of the ground beef with TVP (textured vegetable protein, SOY) without reconstituting first. I substitute 1/4 - 1/2 lb of the ground beef with 1/4 - 1/2 cup TVP bits. Add this into the pot with the other ingredients, do not saute with the ground beef.

  • In frying pan, saute ground beef, onions and garlic until beef is browned and onions are translucent. Transfer to slow cooker.
  • Add all other ingredients to pot and mix well.
  • Cook on low for 6-8 hours.
  • To FREEZE: Cool completely, freeze in desired portions in freezer bags or containers.
  • To REHEAT: Thaw in refrigerator overnight. Heat in saucepan until heated through, OR reheat it in the microwave after it's defrosted, and if it's not fully defrosted I use the microwave defrost first, then reheat on high until hot, really quick. :).
