GRILLED CHOPS WITH BOURBON GLAZE AND SWEET POTATO FRITTERS



Grilled Chops with Bourbon Glaze and Sweet Potato Fritters image

1/2 cup liquid (I'm using cider)
1/4 cup bourbon
1/4 cup honey
1 stick (8 tablespoons) butter, cut into pieces
2 pounds grilling meat (I'm using pork chops)
Olive oil, for the meat
1 teaspoon cracked coriander
Kosher salt and freshly ground black pepper
2 medium sweet potatoes
1 tablespoon fresh thyme
2 cloves garlic, minced
1 small onion, grated (I'm using yellow)
1 lemon, zested
1 large egg
3 tablespoons all-purpose flour
Canola oil, for frying
Kosher salt and freshly ground black pepper

Steps:

  • For the chops: Preheat a gas grill to medium-high heat on one side and low on the other side. If using a charcoal grill, bank very hot coals on one side of the grill.
  • Put the cider, bourbon and honey in a small saucepan and cook over medium heat until reduced by half. Whisk in the butter and hold the sauce in a warm place
  • Rub the chops with some olive oil, then sprinkle with the coriander and 1 teaspoon each salt and pepper. Grill on the hot side of the grill for 3 minutes per side. Move the chops to the cooler side of the grill, cover with the lid and cook, occasionally brushing with the glaze, until they reach desired tenderness and temperature, 145 degrees F for pork. Let rest for 5 minutes.
  • For the fritters: While the meat is cooking, grate the sweet potatoes on the large holes of a box grater into a clean kitchen towel. Wring as much liquid out of the sweet potatoes as possible and discard the liquid.
  • In a medium bowl, combine the sweet potatoes, thyme, garlic, onion and lemon zest. Stir in the flour and egg and mix to combine.
  • In a large cast-iron pan, add enough canola oil to reach a depth of 1/4 inch (enough oil to come halfway up the sides of the fritters) and place over medium-high heat.
  • Form the fritters by hand or using a 1/4-cup measure. In batches, fry the fritters until golden-brown, about 2 minutes per side. Transfer to paper towels to drain. Season with salt and pepper. Serve with the chops.

4 large sweet potatoes (about 3 pounds)
1 cup pecans
4 tablespoons unsalted butter, plus more for the dish
1/2 cup agave nectar (preferably amber)
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon cayenne pepper
1/4 cup whiskey
Kosher salt
3 crisp apples (such as McIntosh or Cortland), peeled, halved, cored and cut into 1/2-inch-thick slices

Steps:

  • Preheat the oven to 375 degrees F. Place the sweet potatoes on a baking sheet (do not pierce) and bake 30 to 40 minutes. Lightly squeeze the potatoes: If they're slightly soft, they're done. Let cool.
  • Lightly toast the pecans in a medium saute pan over high heat, shaking the pan occasionally, about 3 minutes. Add the butter, then reduce the heat to medium and stir in the agave, cinnamon, nutmeg and cayenne; let simmer 4 to 5 minutes. Add the whiskey and 1/2 teaspoon salt; simmer 5 more minutes.
  • Butter the bottom and sides of an 8-inch-square baking dish. Remove the peel from the sweet potatoes and cut crosswise into 1/2-inch-thick slices. Arrange the sweet potato and apple slices in the prepared pan, alternating. Pour the whiskey-pecan mixture over the top. Cover with aluminum foil and bake 15 minutes. Remove the foil and baste the top with the whiskey sauce that's collected in the bottom of the pan; continue baking until the apples are soft and glazed, about 18 more minutes.

3/4 cup molasses
1/2 cup light brown sugar
Pinch cayenne pepper
1 cup bourbon
Salt and freshly ground black pepper
8 large sweet potatoes, par cooked and cut into 2-inch dice
3/4 cup toasted chopped pecans

Steps:

  • Preheat the oven to 375 degrees F.
  • Combine the butter, molasses, brown sugar and cayenne in a medium saucepan and cook over medium heat until smooth, about 5 minutes. Increase the heat to high, add the bourbon and cook for 2 minutes to allow alcohol to burn out. Season with salt and pepper.
  • Put the potatoes in a large baking dish, pour the molasses mixture over and toss to coat. Roast in the oven, stirring a few times, until the potatoes are cooked through and glazed, about 20 minutes. Remove to a platter and top with the pecans.
  • Alternatively, this can be done in a large saute pan: Melt the butter, molasses, brown sugar and cayenne over medium heat. Add the bourbon and let the alcohol cook out. Add the potatoes and cook until glazed over medium-high heat. Transfer to a platter and top with the pecans.

4 sweet potatoes, peeled and cut into thin fries
1/2 stick butter, melted
4 tablespoons olive oil
2 teaspoons seasoned salt
Ground pepper
Minced fresh parsley

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the fries in a bowl and drizzle over the melted butter, olive oil, seasoned salt and pepper to taste, and toss together. Tip onto a baking sheet and bake for 10 to 15 minutes. Sprinkle over the parsley before serving.

3/4 teaspoon kosher salt, plus more to taste

3 pounds sweet potatoes (about 4 large)
1 cup pecans
4 tablespoons unsalted butter, plus more for preparing baking dish
3/4 cup agave syrup, preferably amber
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon cayenne pepper
1/2 teaspoon kosher salt
1/4 cup whiskey
2 cups crisp apples, peeled, cored, and sliced into 1-inch pieces

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the potatoes on a baking sheet and cook the potatoes whole, do not pierce. Bake for 45 minutes to 1 hour. Lightly squeeze the potatoes - if they are soft, they are done. Let cool.
  • In a small saute pan over high heat, add the pecans and lightly toast. Add 4 tablespoons of butter, reduce the heat to medium, add the agave and spices, and allow to simmer for 4 to 5 minutes. Add the whiskey and continue to simmer for 5 minutes more.
  • Peel the potatoes and cut into 1/2-inch slices. Butter the bottom and sides of an 8 by 8-inch baking dish. Arrange the sweet potatoes, alternating with the apples. Pour the whiskey-pecan mixture over the top and place in the oven.
  • Bake for 30 minutes, basting the top with the whiskey sauce once at 15 minutes.
  • Remove and serve immediately.

This Christmas I was looking for a sweet potato recipe that did not have the melted marshmellow topping. We found this on gumbopages and have to thank "The Oregonian Food Section" for such a wonderful recipe. The bourbon cooks off and leaves a very rich flavor to complement the pears and sweet potatoes. YUMMY! NOTE: Cane syrup can be difficult to find; I made my own using 1-1/4 cup sugar and 1/4 cup water. Boil until syrupy.

  • Bake until the sweet potatoes are nearly tender, about an hour. Uncover and bake until sweet potatoes are completely tender, check with a toothpick or knife point to make sure the sweet potatoes are completely tender.
  • Recipe can be made 1 day ahead. Cool, cover with foil and refrigerate. Reheat covered in a 350°F oven for about 30 minutes; spoon the syrup over the sweet potatoes and pears and serve hot.

1/2 cup fine aged Kentucky bourbon whiskey
2 eggs, beaten
1/2 cup pecans, chopped
1/2 cup sugar
2 tablespoons butter

1/4 teaspoon grated nutmeg

Steps:

  • Preheat the oven to 350 degrees F. Mix all of the ingredients with an electric mixer at a medium speed until smooth. Pour all of the ingredients into a well oiled baking dish. Bake, lightly covered with foil, for 45 minutes.
