1 pie crust, room temp
1/2 cup unsalted butter
1 1/2 cups sugar
3 eggs beaten
4 teaspoons fresh lemon juice
1 teaspoon vanilla extract
1 1/2 cups sweetened shredded coconut
additional coconut (optional)

Steps:

  • Preheat oven to 450 degrees, press crust into 9" pie plate and trim edges. Bake until golden brown, about 9 minutes; transfer to rack and cool. Reduce heat to 350 Melt butter in heavy medium saucepan over low heat. Add sugar and stir just until heated through. Transfer to bown. Add eggs, lemon juice and vanilla and whisk to combine. Stir in 1 1/2 cups coconut. Pour filling into crust. Bake until filling is deep golden brown and set, about 45 minutes. Cool on rack. garnish with toasted additional coconut, if desired.

Dough for single-crust pie
1-1/2 cups whole milk
1 cup sugar
3/4 cup sweetened shredded coconut
2 large eggs, lightly beaten
3 tablespoons all-purpose flour
1 tablespoon butter, melted
1/4 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. , In a large bowl, combine milk, sugar, coconut, eggs, flour, butter and vanilla. Pour into crust. , Bake until a knife inserted in the center comes out clean, 45-50 minutes. Cool to room temperature on a wire rack. Refrigerate leftovers.

  • Heat oven to 350°F. Grease 9-inch pie plate with shortening or cooking spray.
  • In medium bowl, stir all ingredients until blended. Pour into pie plate.
  • Bake 50 to 55 minutes or until golden brown and knife inserted in the center comes out clean. Cover and refrigerate any remaining pie.
