Number Of Ingredients 8

2 tablespoons olive oil, divided
4 (8 ounce) shoulder lamb chops
salt, to taste
fresh ground pepper, to taste
3 medium onions, chopped
3 garlic cloves, minced
1 teaspoon ground cinnamon
1 (28 ounce) can tomatoes, chopped, in juice

Steps:

  • Heat 1 tablespoons olive oil in a large skillet over medium-high heat.
  • Season the lamb chops with salt and pepper and add to the skillet, and cook, turning once, until browned on both sides, about 5 minutes.
  • Transfer chops to a platter.

  • Stir in the cinnamon and tomatoes with their juice.
  • Return the lamb to the skillet and bring the sauce to a simmer. Reduce heat to medium-low. Cover and simmer until the lamb chops are almost tender, about 30 minutes.
  • Uncover and cook until the sauce thickens, about 15 minutes more.
  • Serve hot.

HERBED LAMB CHOPS WITH HOMEMADE KETCHUP

Herbed Lamb Chops with Homemade Ketchup image

Provided by Giada De Laurentiis

Time 1h52m

Yield 4 servings

Number Of Ingredients 12

1 (15-ounce) can tomato sauce or tomato puree
1 small onion, peeled and quartered, root end left intact
1/2 cup apple cider vinegar
1/2 cup light brown sugar, packed
3 tablespoons tomato paste
1 tablespoon kosher salt
1 cinnamon stick or a pinch of ground cinnamon
1 pound (about 8 or 9) baby lamb chops
1 tablespoon kosher salt
1/2 teaspoon freshly ground black pepper
2 tablespoons olive oil
1 1/2 tablespoons herbes de Provence

Steps:

  • For the ketchup: Place the tomato sauce, onion, vinegar, sugar, tomato paste, salt, and cinnamon stick (or ground cinnamon, if using) in a medium saucepan. Bring the mixture to a simmer and cook, stirring occasionally, until thick, about 1 hour. Remove the onion and cinnamon stick and discard. Cool for 30 minutes and refrigerate until ready to use (can be refrigerated for up to 1 week).
  • For the lamb chops: Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Season the chops on both sides with salt and pepper. Drizzle with oil and sprinkle the herbes de Provence on both sides. Grill on each side until medium-rare, 2 to 3 minutes. Cool for 5 minutes and serve with the ketchup.
  • Cook's Note: The lamb chops can also be roasted or broiled in a preheated 475 degrees F oven for 6 to 7 minutes.

GRILLED MARINATED LAMB CHOPS WITH BALSAMIC CHERRY TOMATOES

Grilled Marinated Lamb Chops With Balsamic Cherry Tomatoes image

This is a really simple and delicious meal. Since lamb chops can vary so much in size, please adjust cooking times accordingly. For the tomatoes, a disposable aluminum pan works really well. Cook time includes marinating time.

Categories     Lamb/Sheep

Time 2h30m

Yield 4 serving(s)

Number Of Ingredients 8

2 tablespoons honey
2 tablespoons red wine vinegar
2 garlic cloves, finely chopped
1/2 teaspoon salt
1/4 teaspoon pepper
8 lamb chops, rib, bones frenched
1 1/2 lbs cherry tomatoes, preferably on the vine
1 1/2 tablespoons balsamic vinegar

Steps:

  • Stir together honey, vinegar, garlic, salt, and pepper and transfer to a sealable plastic bag.
  • Add lamb, then seal bag, pressing out excess air and turning to distribute marinade.
  • Marinate lamb, chilled, turning occasionally, 1 hour.
  • Bring lamb to room temperature.
  • Prepare grill for cooking. If using a charcoal grill, open vents on bottom of grill and on lid.
  • Remove lamb from marinade, reserving marinade.
  • When fire is medium-hot (you can hold your hand 5 inches above rack for 3 to 4 seconds), grill lamb on lightly oiled grill rack, turning once, about 4 minutes total for medium-rare.
  • Transfer to a platter and keep warm, covered.
  • Cook tomatoes (still on vine, if using) in disposable roasting pan, covered with grill lid, carefully turning, until softened and just beginning to split, about 8 minutes.
  • Drizzle balsamic vinegar over tomatoes, turning to coat, then cook, uncovered, until vinegar is reduced by about half, about 2 minutes.
  • Remove from grill.
  • Bring reserved marinade with any lamb juices accumulated on platter to a boil in a small heavy saucepan, covered.
  • Drizzle lamb with marinade and serve with tomatoes.
  • Cooks' note:
  • Lamb and tomatoes can also be grilled in batches in a lightly oiled well-seasoned ridged grill pan over moderately high heat (tomatoes will take less time to soften, about 3 minutes).

Number Of Ingredients 11

1 tablespoon extra-virgin olive oil (for beans)
1 teaspoon extra-virgin olive oil (for lamb)
1 medium yellow onion, chopped
2 tablespoons chopped of fresh mint or 2 teaspoons dried mint, divided
1/2 teaspoon ground cinnamon
1 teaspoon salt, divided
1/4 teaspoon fresh ground pepper, plus more to taste
3 cups diced tomatoes (4-5 medium)
1/3 cup water
12 ounces green beans, trimmed
8 lamb loin chops, trimmed (1 1/2-1 3/4 pounds total)

Steps:

  • Preheat oven to 400°F

  • Add tomatoes and water and increase heat to high. Cook, stirring occasionally, until the tomatoes begin to break down, 2 to 3 minutes. Stir in green beans. Reduce heat to medium, cover and cook, stirring occasionally, until the green beans are tender, about 12 minutes.

Add the lamb chops and cook until browned on one side, about 2 minutes. Turn them over and transfer the pan to the oven.
  • Roast until an instant-read thermometer inserted horizontally into a chop registers 140°F for medium-rare, 6 to 10 minutes, depending on thickness.
  • Stir the remaining mint into the green bean mixture.
  • Serve the lamb chops with the green beans and to complete your meal, add bulgur or rice pilaf.

LAMB CHOPS WITH MINT, TOMATO AND GARLIC SAUCE

Lamb Chops With Mint, Tomato and Garlic Sauce image

This recipe is from Williams-Sonoma "Essentials of Roasting." DH and I really enjoyed it. Prep time does not include resting time for the meat.

Provided by Dr. Jenny

Categories     Lamb/Sheep

Time 40m

Yield 4 serving(s)

Number Of Ingredients 17

8 thick-cut bone-in lamb loin chops (each 1.5 inches thick and 2 to 2.5 lbs total weight)
extra virgin olive oil, for coating
1 tablespoon extra virgin olive oil
kosher salt, to taste
fresh ground pepper, to taste
2 tablespoons flat leaf parsley, chopped
2 tablespoons fresh basil, chopped
1 tablespoon extra virgin olive oil
1 small shallot, minced
2 garlic cloves, minced
3 tomatoes, peeled seeded and coarsely chopped
2 teaspoons balsamic vinegar
kosher salt, to taste
fresh ground pepper, to taste
6 -8 fresh basil leaves, cut into narrow strips
6 -8 fresh mint leaves, cut into narrow strips
1/4 cup dry red wine

Steps:

  • Using a sharp knife, trim away as much of the surface fat from the lamb as possible. Brush or rub the chops on both sides with olive oil, and season generously with salt and pepper.
  • Press the parsley and basil firmly into both sides of each chop. Let stand at room temperature for 20 to 30 minutes before roasting.
  • Preheat an oven to 450 degrees F.
  • Meanwhile, start making the sauce: In a small saucepan over medium-low heat, warm the olive oil. Add the shallot and saute until softened, 3 to 4 minutes. Add the garlic and cook for 1 minute.
  • Increase the heat to medium-high, add the tomatoes and cook, stirring frequently, until the tomatoes soften and release their liquid, 3 to 4 minutes.
  • Add the vinegar and season with salt and pepper. Cook until most of the liquid has evaporated, 3 to 4 minutes.
  • Remove from heat, stir in the basil and mint, and set aside until the lamb chops are roasted.
  • Preheat a large, heavy ovenproof fry pan over high heat until very hot. Add the 1 Tb olive oil, and then add the lamb chops and sear for 2 minutes. Turn the chops and sear for 1 minute on the other side.
  • Immediately transfer the pan to the oven and roast the lamb until an instant-read thermometer inserted into the thickest part of the meat, away from the bone, registers 125 to 130 F for medium-rare, 5 to 6 minutes.
  • Remove the pan from the oven, transfer the chops to a warmed platter and cover loosely with aluminum foil. Let rest while you finish the sauce.
  • Pour off any excess fat from the pan. Set the pan over medium-high heat, pour in the wine and cook, stirring to scrape up the browned bits from the pan bottom.
  • Add the tomato sauce and any juices that have accumulated on the platter and bring to a boil. Remove from the heat.
  • Divide the chops among warmed plates. Divide the sauce evenly among them, spooning it over the top. Serve immediately.
