FOUR PROVINCES BROWN SODA BREAD
A soda bread recognizable in Irish households! Easy to make, right densitiy/lightness ratio, with just enough sweetness.

- Preheat oven to 400 degrees F (200 degrees C). Grease two baking sheets.
- Whisk together the egg, buttermilk, and molasses in a bowl until evenly blended; set aside. Stir together the whole wheat flour, all-purpose flour, bran, cream of tartar, and baking soda in a separate large bowl, and make a well in the center. Pour the buttermilk mixture into the well, and stir until a soft dough forms. Stir in the golden raisins, then turn the dough out onto a well floured work surface, and knead 8 to 10 times before dividing into two round balls. Place the balls on the baking sheets and use a sharp knife to cut a 1/2 inch deep X into the tops of the dough balls. Brush with melted butter.
- Place the loaves into the preheated oven, and reduce the temperature to 325 degrees F (165 degrees C). Bake for 25 to 30 minutes until golden brown. Wrap the loaves in light cotton towels for 10 minutes after they are removed from the oven.

EASY IRISH SODA BREAD (BAKING SODA BREAD)

Steps:
- Preheat oven to 350º F and choose your preferred baking pan, sheet or cast iron skillet. I just used a parchment lined baking sheet.
- In a large bowl add the flour, sugar, baking powder, baking soda, and salt. Whisk to combine.
- Add the butter and mix until crumbly.
- Add the buttermilk (not all at once) and mix with your hand until moist.
- Turn dough onto floured surface and blend until it forms a round ball. Flatten with your hand slightly to form a disc about 7-8 inches across.
- Place on baking sheet. Score an X on the top with a sharp knife (about 1/2 way through the bread.
- At this point, you can top with the coarse salt if you like.
- Bake in the oven for about 50 minutes. Check with a cake tester. The top should be browned, and the bread will have a hollow sound when you tap on the bottom.
- Remove to a wire rack to cool. At this point, I am ready to rip off a chunk!!

BROWN SODA BREAD
This is typical Irish brown soda bread very popular in Ireland. Full of flavor and high in fiber. Great with soup or just with a butter.

Steps:
- Preheat oven to 375°F.
- Spray loaf pan 9"x5".
- In a large mixing bowl mix all dry ingredients.
- Melt butter add molasses and stir well.
- Mix buttermilk and eggs together.
- Pour all wet ingredients into flour mixture.
- Stir with wooden spoon until just combine.
- Don't over mix or it will be dry.
- Spoon into loaf pan and sprinkle oats on top as a garnish.
- Bake 35 - 40 minutes or until bread sounds hollow when you tap the tops with your fingers.
- If necessary, cover with foil for the last 10 minutes of baking to prevent overbrowning.
- It will double in size.
- Let it cool for 5 minutes and remove from pan.

Steps:
- Preheat the oven to 375 degrees.
- Butter and flour a 9 by 5 by 3 inch loaf pan.
- IN a large bowl, stir together the day ingredients.
- Make a well in the center.
- In a small bowl, whisk together the eggs and buttermilk.
- With a wooden spoon, stir the egg mixture into the dry ingredients.
- Spoon the dough into the prepared pan and smooth the top with a spatula the had been dipped in water or buttermilk.
- Bake for 35 to 40 minutes, or until a skewer inserted in the center comes out clean and the bread sounds hollow when tapped on the bottom.
- Remove from the oven and let cool in the pan on a wire rack for 10 minutes.
- Turn the bread out onto the rack and let cool, right side up, for about 1 hour to make slicing easier.
