STRAWBERRY SHORTCAKE CAKE

Strawberry Shortcake Cake image

I made this cake a few years ago on a whim . . . and what a delightful whim it turned out to be. It's a spin on strawberry shortcake, but the cake is, well, cake--not the biscuit-like disc in the classic strawberry shortcake recipe. I added cream cheese frosting instead of whipped cream, just for kicks, and it turned out to be just what the whole mess of deliciousness needed. This is one of my father-in-law's three favorite desserts. He likes to eat it for breakfast. I do too, now that I think about it!

Categories     dessert

Yield Makes one 10-inch cake

Number Of Ingredients 16

1/2 cup (1 stick) plus 1 tablespoon unsalted butter, softened
1 1/2 cups plus 3 tablespoons granulated sugar
3 large eggs
1/2 cup sour cream, at room temperature
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
3 tablespoons cornstarch
1/2 teaspoon salt
1 teaspoon baking soda
1 pound strawberries, hulled and halved
3 tablespoons granulated sugar
One 8-ounce package cream cheese, at room temperature
1 cup (2 sticks) unsalted butter
1 1/2 pounds powdered sugar, sifted
1 teaspoon vanilla extract
1/4 teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F. Grease and flour a 9-inch round cake pan that's at least 2 inches deep (or you can split the batter between 2 pans if they're not deep enough).
  • To make the cake batter, beat together the butter and sugar until fluffy. Add the eggs one at a time, beating well after each addition.
  • Add the sour cream and vanilla, then mix until just combined.
  • Sift together the flour, cornstarch, salt, and baking soda and add it to the bowl.
  • Mix it together until just combined.
  • Spread it in the pan or pans and bake for 45 to 50 minutes, or until the cake is no longer jiggly like my bottom.
  • Carefully remove the cake from the pan and allow it to cool completely.
  • Next, mash the strawberries with a potato masher or a fork (reserve a few for garnish if you like).
  • Sprinkle the strawberries with the sugar. Toss them around and allow them to sit for a little while.
  • They'll give off this beautiful liquid after several minutes. Try not to drink it with a straw.
  • To make the frosting, combine the cream cheese, butter, powdered sugar, vanilla, and salt in a mixing bowl.
  • Mix until very light and fluffy. Warning: You'll feel like eating this bowl of icing before you even get it on the cake.
  • To assemble the cake, use a sharp knife to cut it in half through the middle. It's easier if you go all around the perimeter of the cake, slicing only halfway through the circle the whole way.
  • Lay the two halves cut side up.
  • And cover both halves with an equal amount of strawberries. Then--this is an important step!--place the cake halves in the freezer for 15 to 20 minutes. This'll firm up the surface of the strawberries just a bit so that it's easier to spread on the icing.
  • Remove the cakes from the freezer and place one layer on a cake stand or platter. Cover with a little less than a third of the icing.
  • Place the second layer on top, then spread the top with icing.
  • Carefully ice the outside of the cake with the remaining icing.
  • Lovely! You can certainly decorate the top of the cake with strawberry slices, too. But I'm hungry and want to eat, so I'll skip that part.
  • Store leftovers in the fridge. The cake can be made up to 24 hours in advance.

STRAWBERRY BASIL COFFEE CAKE

Strawberry Basil Coffee Cake image

Provided by Giada De Laurentiis

Time 1h5m

Yield 8 to 10 servings

Number Of Ingredients 20

1 cup packed brown sugar
1 cup all-purpose flour
1/4 cup slivered almonds
1/2 teaspoon kosher salt
6 tablespoons unsalted butter, melted and cooled slightly
Nonstick cooking spray, for the baking dish
1 cup (2 sticks) unsalted butter, at room temperature
1/2 cup packed brown sugar
1/2 cup granulated sugar
1/2 cup sour cream, at room temperature
1 tablespoon vanilla extract
1/2 teaspoon kosher salt
3 large eggs, at room temperature
3 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 cups whole milk, at room temperature
1 teaspoon lemon zest
2 1/2 cups diced strawberries
3 tablespoons chopped fresh basil

Steps:

  • For the crumb topping: In a medium bowl, mix together the brown sugar, flour, almonds and salt. Add the butter and stir to combine until the mixture is evenly moistened and crumbs form. Set aside.
  • For the cake: Preheat the oven to 350 degrees F. Spray a 9-by-13-inch baking dish with nonstick cooking spray. Set aside.
  • In a large bowl, combine the butter, brown sugar and granulated sugar. Using a handheld mixer on medium speed, beat the butter and sugars together until light and fluffy, about 2 minutes. Add the sour cream, vanilla, salt and eggs. Beat on medium to combine. Add 1 1/2 cups of the flour, the baking powder and baking soda. Mix again until smooth, about 1 minute. Add the milk and mix again until smooth. Add the remaining 2 cups of flour and the lemon zest and fold with a rubber spatula, being careful not to overmix. Pour the batter into the prepared baking dish and sprinkle evenly with the strawberries and basil.
  • Top with the crumb topping and bake until a toothpick inserted in the center comes out clean, 45 to 50 minutes.

STRAWBERRY RHUBARB UPSIDE-DOWN CAKE

Strawberry Rhubarb Upside-Down Cake image

Sweet strawberry and tart rhubarb are a pair that always harmonizes beautifully. Serve this cake with a dollop of whipped cream for the perfect spring dessert.

Provided by Food Network Kitchen

Categories     dessert

Time 3h

Yield 8 servings

Number Of Ingredients 17

1 tablespoon unsalted butter, plus more for the pan
1/2 cup sugar
1 1/2 cups rhubarb, peeled, halved lengthwise and cut into 1/2-inch pieces (about 5 ounces)
1 1/2 cups strawberries, hulled and thinly sliced (about 5 ounces)
1 tablespoon cornstarch
2 tablespoons strawberry jam
Kosher salt
1 3/4 cups all-purpose flour (see Cook's Note)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
3/4 cup milk
1/4 cup sour cream
1 stick (8 tablespoons) unsalted butter, at room temperature
1 cup sugar
2 large eggs
1 teaspoon pure vanilla extract

Steps:

  • For the caramel topping: Preheat the oven to 350 degrees F. Butter just the sides of a 9-inch round cake pan.
  • Stir the sugar and 1/3 cup water together in a medium saucepan over medium heat until the sugar dissolves. Cook, no longer stirring but gently swirling the saucepan occasionally, until the mixture is amber, 6 to 8 minutes. (If needed, brush any sugar crystals off the side of the pan with a pastry brush dampened with water.) Remove the saucepan from the heat, and carefully whisk in the butter (use caution; the mixture can bubble up considerably). Pour the caramel into the prepared cake pan, tilting the pan to cover most of the bottom (be careful; the pan will be very hot from the caramel).
  • Toss the rhubarb and strawberries in a medium bowl with the cornstarch, strawberry jam and a pinch of salt. Spoon on top of the caramel sauce and smooth into an even layer. Set aside.
  • For the cake: Whisk together the flour, baking powder, baking soda and salt in a medium bowl. Whisk together the milk and sour cream in a small bowl.
  • Beat the butter and sugar together with an electric mixer on medium-high speed in a large bowl until light and fluffy, about 4 minutes. Add the eggs 1 at a time, beating after each addition and scraping down the side of the bowl as needed, then beat in the vanilla. Reduce the mixer speed to low and add the flour mixture in 3 batches, alternating with the milk-sour cream mixture, and mixing until just incorporated.
  • Pour the batter over the rhubarb and strawberries in the cake pan and spread evenly. Bake until the cake is golden brown, bounces back when pressed and a toothpick or cake tester comes out clean when inserted in the center, 55 to 60 minutes. Run a knife around the edge of the cake to separate it from the pan. Let cool in the pan on a rack until cool enough to handle and almost room temperature, about 1 hour. Invert a serving platter over the cake pan and, while holding them together, quickly flip them over so the cake unmolds, fruit-side up. Let cool completely. Cut into wedges, and serve.

RASPBERRY CREAM CHEESE COFFEE CAKE

Raspberry Cream Cheese Coffee Cake image

This is a wonderful alternative to those standard cinnamon-walnut-streusel coffee cake recipes. It's perfect for a brunch or a special family gathering. Prepping the batter in a food processor makes it quick and easy to assemble. You can substitute different preserves - apricot, cherry and blueberry all work well.

STRAWBERRY ALMOND COFFEE CAKE

Strawberry Almond Coffee Cake image

A modified version of a coffee cake recipe I found in a TOH booklet. This uses fresh strawberries. I've never tried it with frozen strawberries so if you are using those I can't tell you how it will turn out. I love the addition of the cinnamon almond mixture to the flavors. The strawberry flavor is very subtle so please do not expect an overpowering flavor of strawberry. To glaze or not to glaze....that is your option LOL. When company is coming I glaze but for family I leave out those calories.

STRAWBERRY & CINNAMON TORTE

Strawberry & cinnamon torte image

Just blitz and bake to produce this fruity dessert

Provided by Orlando Murrin

Categories     Buffet, Dessert, Dinner, Lunch, Treat

Time 1h30m

Number Of Ingredients 9

175g ground almond
175g butter softened
175g golden caster sugar
175g self-raising flour
1 tsp ground cinnamon
1 large egg , plus 1 egg yolk
450g strawberry , hulled and sliced
icing sugar , for dusting
whipped double cream mixed with Greek yogurt (half and half is good), to serve

Steps:

  • Preheat the oven to 180C/gas4/ fan 160C. Line the base of a loose-bottomed 23cm cake tin with greaseproof paper and butter the sides.
  • Mix almonds, butter, sugar, flour, cinnamon, egg and egg yolk in a food processor just until the ingredients are evenly combined.
  • Spread half the mixture over the base of the tin in a smooth layer with no gaps - easiest to do this with two forks. Lay the sliced strawberries on top. Add the remaining cake mixture and spread it as best you can, but don't worry if a few strawberries peep through.
  • Bake for 1 hour (it may need an extra 5 minutes), but check after 40 minutes - if it is getting too brown, cover loosely with foil. The torte should be slightly risen and dark golden brown when cooked.
  • Cool in the tin slightly, then loosen the edges with a knife and remove from the tin. Slide the torte onto a plate and sprinkle with a dusting of icing sugar. Serve warm or cold, in wedges with dollops of cream and Greek yogurt.

STRAWBERRY ALMOND POUND CAKE

Strawberry Almond Pound Cake image

Provided by Ree Drummond : Food Network

Categories     dessert

Time 2h

Yield 8 servings

Number Of Ingredients 15

1 1/2 cups granulated sugar
1 1/2 sticks (12 tablespoons) unsalted butter, plus more for buttering the pan, slightly softened
3 large eggs
1/2 cup sour cream
1 teaspoon almond extract
1 1/2 cups all-purpose flour
1/4 teaspoon kosher salt
1 pound strawberries, hulled, half sliced and half cut in half
1/4 cup brown sugar
1 1/2 tablespoons all-purpose flour
1 tablespoon salted butter, cold and cubed
1/4 teaspoon kosher salt
1/4 cup sliced almonds
1 cup confectioners' sugar
1 tablespoon plus 1 teaspoon lemon juice

Steps:

  • For the cake: Preheat the oven to 325 degrees F.
  • In the bowl of an electric mixer fitted with a paddle attachment, cream together the granulated sugar and butter. Add the eggs 1 at a time, mixing after each addition. Add the sour cream and almond extract and mix to combine. Turn the mixer to low and gradually add the flour and salt and mix until well combined, scraping the bowl. Fold in the sliced strawberries.
  • For the topping: Combine the brown sugar, flour, butter and salt in a medium bowl and cut together using 2 knives or a pastry cutter until it resembles crumbs. Mix in the almonds.
  • Generously butter a 10-inch cast-iron skillet. Pour the batter into the skillet and even out the surface. Press the remaining halved strawberries into the surface of the batter cut-side down, leaving them mostly exposed. Scatter the crumble over the top of the batter. Bake until a toothpick inserted in the center does not come out totally clean but isn't wet with batter either, about 1 hour. Let the cake sit in the skillet for 30 minutes. Meanwhile, make the glaze.
  • For the glaze: Whisk together the confectioners' sugar and lemon juice. Using a fork or whisk, drizzle over the cake. Serve directly out of the skillet.

  • Heat oven to 180C/160C fan/gas 4. Grease and line the base and sides of a deep 23cm cake tin with baking parchment. Mix the ingredients for the cheesecake blobs together in a bowl until just combined – be careful not to overmix or it will become runny. Set aside.
  • Put the butter, sugar, eggs, flour, ground almonds, yogurt, vanilla and a pinch of salt in a large bowl, and beat together until smooth using an electric hand whisk.
  • Scrape half the cake mixture into the tin, then scatter with half the strawberries. Use the back of a teaspoon to create dips in the surface of the cake and dollop in spoonfuls of cheesecake mixture – saving about half for the top. Cover with the remaining cake mixture, being careful not to disturb the cheesecake and strawberries below. Scatter with the remaining strawberries and spoon on the remaining cheesecake mixture, using the same method as before.
  • Scatter with almonds and bake for 50 mins-1 hr or until a skewer comes out clean. Cool for 20 mins in the tin before turning out. Delicious served warm or cold.
