I got this recipe from a local newspaper 30 years ago. It was my first ever bread, and has been a consistent blue ribbon winner at the county fair. Because it takes about 2 hours, start to finish, I have "assembly lined" making large quantities. When the first loaf is in the second rising, begin the next loaf. I've made this with a mixer and dough hooks, and with a bowl and a wooden spoon.

Number Of Ingredients 10

4 cups flour
3 tablespoons sugar
3 tablespoons salt
1/4 teaspoon basil
1/4 teaspoon oregano
1/4 teaspoon thyme (leaves, not powder)
2 (2 ounce) packages active dry yeast (or 2 TBSP bulk yeast)
1 cup milk
1 cup water
2 tablespoons butter or 2 tablespoons margarine

Steps:

  • Put the milk, water and butter (or margarine) in a small saucepan over low heat to warm.
  • Butter or margarine does NOT need to melt.
  • In a large bowl, combine 1 cup flour, the sugar, salt, basil, oregano, thyme and dry yeast.
  • Stir dry ingredients to mix well.
  • Add warm liquid ingredients and beat until well blended.
  • Add flour, 1/2 to 1 cup at a time, and continue beating until well blended.
  • Cover bowl with a towel and set in a warm place to rise for about 40 minutes, or until doubled.
  • Grease a 9 x 3 x 5 inch loaf pan with butter or margarine.
  • Stir batter down and beat for about one minute, then pour into the loaf pan.
  • Let rise, uncovered, for about 30 minutes, or until doubled.
  • Bake at 375 degrees for 40 to 50 minutes.
  • When done, remove from pan, cool and slice to serve.

3 cups all-purpose flour
3 tablespoons sugar
1 tablespoon baking powder
3 teaspoons caraway seeds
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon dried thyme
1 large egg, room temperature
1 cup fat-free milk
1/3 cup canola oil

Steps:

  • Preheat oven to 350°. In a large bowl, whisk together first 7 ingredients. In another bowl, whisk together egg, milk and oil. Add to flour mixture; stir just until moistened. , Transfer to a 9x5-in. loaf pan coated with cooking spray. Bake until a toothpick inserted in center comes out clean, 40-50 minutes. Cool in pan 10 minutes before removing to a wire rack to cool.

3 cups all-purpose flour
1 teaspoon salt
1 tablespoon sugar
1 (.25 ounce) package active dry yeast
1 ¼ cups warm water
2 tablespoons shortening
3 teaspoons dried parsley
½ teaspoon dried rosemary
¼ teaspoon dried thyme
1 teaspoon margarine, melted

Steps:

  • Combine 2 cups flour, salt, sugar, and yeast in a large bowl. Stir in the water, shortening, parsley, rosemary, and thyme. Use an electric mixer to beat on low speed for 1 minute, scraping bowl frequently. Turn mixer to medium, and beat for an additional 1 minute, scraping bowl frequently. Stir in remaining 1 cup flour; mix until smooth. Scrape batter from sides of bowl. Cover, and let rise in warm place for 35 to 40 minutes.
  • Grease a 9x5 loaf pan. Stir down batter by beating about 25 strokes. Scrape batter into greased pan; pat down with floured hands. Cover pan. Let dough rise in warm place until doubled, about 30 minutes. Do not allow dough to over-rise.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Bake in preheated oven until the loaf sounds hollow when tapped on the bottom, 40 to 45 minutes. Brush top with margarine. Remove from pan, and cool on wire rack.

FOREVERMAMA'S BANANA BREAD

My hubby is forever asking me to make this bread. I've tried many banana breads through the years, but this is my tried and true and one I always make. Save those brown yucky looking banana's!! The more black, the better quality banana bread you'll reap. Place them in the freezer whole or mash and freeze.

1 1/2 cups flour
3/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup butter
1 1/2 cups sugar
2 eggs
1/4 cup buttermilk or 1/4 cup sour milk
1 cup banana, very ripe and mashed (about 2 medium)
2 teaspoons vanilla extract
1 -2 teaspoon banana extract (optional)
1 cup walnuts, chopped (optional)

Steps:

  • Combine flour, baking soda and salt and set aside. Cream butter with sugar until fluffy. Add eggs and buttermilk and mix well. Add flour mixture alternately with bananas, beginning and ending with flour. Stir in vanilla, banana extract (if using) and nuts (optional). Bake in a well greased 9 - 5 inch loaf pan at 350 degrees for 1 hour, or until a toothpick, inserted in center comes out clean.
  • NOTE: If you don't have buttermilk on hand, make your own. To your measurement cup add about 1 tablespoon of white vinegar or 1 tablespoon lemon juice. Let it sit a bit and you'll have your substitute buttermilk. The banana extract is my own addition, this is a huge help if your bananas are not quite brown/ripe enough, it'll boost the flavor. As a matter of fact, I always us it even when my bananas are perfectly ripe. It's a definate must if you want your product to stand out.

This is a recipe I got when I was a senior in high school. That year, I attended a school in a German community in eastern Oklahoma. This is one of my favorite dishes from there. Prep time includes time for the dough to rise and chill.

2 cups warm water
2 tablespoons yeast
1/4 cup sugar
1 egg, lightly beaten
1/4 cup oil or 1/4 cup melted butter
6 1/2 cups flour, divided
1 1/2 teaspoons salt
1 1/2 lbs ground meat
1/2 cup onion, chopped
3 cups cabbage, finely chopped
1 1/2 teaspoons salt
1/2 teaspoon black pepper
1 dash Tabasco sauce

Steps:

  • For dough:.
  • Combine 2 cups warm water, 2 packages yeast and ¼ cup sugar.
  • Once yeast has started to foam, add 1 lightly beaten egg and ¼ cup oil or melted butter.
  • Stir in 6 cups flour and 1 ½ teaspoons salt to make a soft workable dough, add the extra ½ cup flour, if needed.
  • Knead until smooth and elastic (3-5 minutes). Let the dough rise in a warm, draft-free place until doubled.
  • Punch down, knead several times then refrigerate several hours.
  • For filling:.
  • In a large skillet, brown meat and onions.
  • Add cabbage, salt, pepper and Tabasco sauce and continue to cook over low heat until cabbage is tender. Do not add any liquid.
  • Cool slightly.
  • To assemble:.
  • Roll dough out into a large, thin rectangle. Cut into 5-inch squares.
  • Place 2 Tablespoons of filling on each square.
  • Bring edges together and pinch closed to form an �X�. Place, seam-side down, on a greased baking sheet.
  • Let rise 15 minutes.
  • Bake at 350° for 20-30 minutes.
  • Serve with a white sauce.
