FOOLPROOF CHOCOLATE FROSTING
From America's Test Kitchen, make this in the food processor. Use whatever kind of chocolate you like...milk, semi-sweet, bittersweet...it's rich and delicious.

Steps:
- In food processor, process butter, sugar, cocoa, and salt until smooth, about 30 seconds, scraping sides of bowl as needed.
- Add corn syrup and vanilla and process until just combined, 5 to 10 seconds.
- Scrape sides of bowl, then add chocolate (cooled to 85º - 100º F) and pulse until smooth and creamy, 10 to 15 seconds.
- Frosting can be used immediately or held.
- The frosting can be made 3 hours in advance. For longer storage, refrigerate the frosting, covered, and let it stand at room temperature for 1 hour before using.
CONDENSED MILK CHOCOLATE FROSTING
I found a similar recipe online and thought it turned out delicious. I made a few changes and this is great! It's lower fat than buttercream or cream cheese frostings, and you can make it with ingredients you already have in your pantry. If you want to put it on as a glaze for a shinier, thinner preparation, you can pour it over a cake while it's still warm. You can also dip cupcakes into it, and they'll end up with a beautiful, shiny glaze on top. For use as a fudgey, thicker frosting, allow the frosting to cool more before putting on your cake.

- In a small, heavy saucepan over low heat, heat chocolate squares and sweetened condensed milk, stirring frequently, until thickened (about 10 minutes).
- Once thickened, remove from heat and add water or alcohol. Stir well and allow to cool if you're using as a frosting. If using as a glaze, pour over cake or dip cupcakes into it while still warm so they can set.

You can make this up to a week ahead; cover airtight and chill. Before using, let it come to room temperature and beat briefly at medium speed to restore texture. For interesting variations, replace vanilla with 2 to 3 tablespoons of liqeur, 6 ounces melted bittersweet chocolate, or up to 1/2 cup strained jam of any flavor. This recipe is from Sunset magazine.

- In mixer bowl at high speed, beat egg yolks until pale yellow, 4 to 5 minutes.
- Butter a 2-cup glass measuring cup (you will need it for the next step--so butter it now).
- In a 2- to 3-quart pan, combine sugar and corn syrup.
- Cook over medium-high heat and stir until sugar is dissolved and mixture comes to a rolling boil.
- Immediately pour into the butter glass measuring cup.
- Beating constantly at medium speed, pour syrup in a thin, steady stream into egg yolks (avoiding beaters).
- Continue beating until mixture is at room temperature (7 to 10 minutes).
- Add butter and vanilla.
- Beat just until smooth.
