1 tablespoon vegetable oil
1 medium carrot, peeled and cut into 2-inch matchstick-thin strips (about ½ cup)
1 medium red pepper, cut into 2-inch matchstick-thin strips (about 1½ cups)
1 cup sliced mushrooms (shiitake, oyster, cremini)
1 carton (32 ounces) Swanson® Thai Ginger Flavor Infused Broth
2 cups shredded cooked chicken
1 can (about 14 ounces) unsweetened coconut milk
2 tablespoons lime juice
2 tablespoons chopped fresh cilantro leaves

Steps:

  • 1. Heat the oil in a 4-quart saucepan over medium-high heat. Add the carrot and pepper and cook for 5 minutes or until tender-crisp, stirring occasionally. Stir in the mushrooms, if desired.
  • 2. Add the broth to the saucepan and heat to a boil. Reduce the heat to medium-low. Stir in the chicken and cook for 5 minutes or until the chicken is hot, stirring occasionally.
  • 3. Stir in the coconut milk and cook until the mixture is hot and bubbling. Stir in the lime juice and cilantro just before serving.

RED THAI CURRY CHICKEN SOUP

3 cloves garlic, chopped
One 2-inch piece fresh ginger, peeled and thinly sliced
6 tablespoons Thai red curry paste
8 cups low-sodium chicken broth
One 13.5-ounce can coconut milk
3 tablespoons fish sauce
One 4-inch piece lemongrass, lightly bruised
Kosher salt
Pinch of sugar
2 pounds boneless skinless chicken breast or thighs, thinly sliced
3 ounces dried rice vermicelli noodles
1 small red onion, thinly sliced
1/3 cup cilantro leaves
1 bunch scallions, white and light green parts only, thinly sliced
1/3 cup torn Thai basil leaves
Juice of 1 lime

Steps:

  • Heat the oil in a large pot over medium heat. When it shimmers, add the garlic, ginger, and Thai red curry paste and cook, stirring constantly, until dark red and very fragrant, about 5 minutes. Add the chicken broth, coconut milk, fish sauce, lemongrass, 1 teaspoon salt and a pinch of sugar. Bring the mixture to a boil, then reduce the heat to a simmer and cook, uncovered, until the lemongrass and ginger are tender, about 15 minutes. Discard the lemongrass.
  • Meanwhile, put the noodles in a medium bowl and cover with hot water. Let stand for 10 minutes, then drain and set aside. Toss together the red onion, cilantro, scallions and Thai basil in a medium bowl and set aside.
  • Stir the chicken into the broth and simmer over low heat until tender, 5 minutes for chicken breast and about 15 minutes for chicken thighs. Increase the heat to high and stir in the noodles. Bring the soup to a boil, then immediately remove from the heat. Stir in the lime juice. Serve the soup in bowls topped with the reserved onion and herb mixture.

1 whole free-range chicken (about 3 1/2 pounds), rinsed, giblets discarded
2 carrots, cut in large chunks
3 celery stalks, cut in large chunks
2 large white onions, quartered
1 head of garlic, halved
1 turnip, halved
1/4 bunch fresh thyme leaves
2 bay leaves
1 teaspoon whole black peppercorns
3 kaffir lime leaves, fresh or dried, hand torn
2 small Thai chiles, halved lengthwise
2 cloves garlic, crushed
One 3-inch piece fresh ginger, peeled and cut into 4 chunks
1 stalk lemongrass (white part only), cracked open with the flat side of a knife
1 1/2 cups shredded cooked chicken
One 13-ounce can unsweetened coconut milk
One 8-ounce can straw mushrooms, rinsed
2 tablespoons Thai fish sauce (nam pla)
1 1/2 teaspoons sugar
Juice of 4 limes
Kosher salt and freshly ground black pepper
1/4 cup chopped fresh cilantro leaves, for garnish

Steps:

  • For the chicken stock: Place the chicken and vegetables in a large stockpot over medium heat. Pour in only enough cold water to cover (about 3 quarts); too much will make the broth taste weak. Toss in the thyme, bay leaves, and peppercorns, and allow it to slowly come to a boil. Lower the heat to medium-low and gently simmer for 1 to 1 1/2 hours, partially covered, until the chicken is done. As it cooks, skim any impurities that rise to the surface; add a little more water if necessary to keep the chicken covered while simmering.
  • Carefully remove the chicken to a cutting board. When its cool enough to handle, discard the skin and bones; hand-shred the meat into a storage container.
  • Carefully strain the stock through a fine sieve into another pot to remove the vegetable solids. Use the stock immediately or if you plan on storing it, place the pot in a sink full of ice water and stir to cool down the stock. Cover and refrigerate for up to one week or freeze. Makes: 2 quarts
  • For the soup: Bring 4 cups of stock to a boil over medium heat in a soup pot. Add the lime leaves, chiles, garlic, ginger and lemongrass. Lower the heat to medium-low; cover the pot and gently simmer to let the spices infuse the broth, about 10 minutes.
  • Uncover the pot and stir in the chicken, coconut milk, mushrooms, fish sauce, sugar and lime juice. Simmer to heat the chicken through, about 5 minutes. Sprinkle with salt and pepper. Ladle the soup into a soup tureen or individual serving bowls. Garnish with the cilantro. Be careful to avoid chewing the lemongrass, ginger or lime leaves.

140g soba or wholewheat noodles
100g beansprouts
2 pak choi , leaves separated
1 red chilli , deseeded and sliced
1 tbsp soy sauce
2 tbsp honey
juice 1 lime , plus wedges to serve
4 spring onions , sliced
½ small bunch mint , roughly chopped
1 roast chicken carcass and wings
thumb-sized piece ginger , bashed and sliced
1 garlic clove , crushed
2 spring onions , sliced
5 peppercorns

Steps:

  • To make the broth, place the chicken carcass and wings in a large pan. Cover with cold water, then add the rest of the ingredients and simmer for 1 hr.
  • Strain the chicken broth into a clean pan. Carefully pick out any pieces of chicken and return to the broth. Put the broth back on the heat and bring back to the boil.
  • Add the noodles and cook for 3 mins until tender, then stir in the beansprouts, pak choi, red chilli, soy sauce, honey and lime juice, adding the squeezed lime halves to the pot, too. Can be frozen at this point. Cook for 2 mins more. Ladle the soup into bowls, scatter over the spring onions and mint leaves, and serve with the lime wedges for squeezing over.

1 tsp olive or rapeseed oil
2 garlic cloves, chopped
1 red chilli, deseeded and chopped
2cm chunk root ginger, chopped
1 stalk lemongrass, bashed
1 x 25g pack coriander, leaves and stalks chopped separately
2 tbsp red Thai curry paste
750ml chicken stock (made with 2 stock cubes)
1 small can (160ml) coconut cream
500g sweet potato, peeled and roughly chopped
2 skinless chicken breasts, sliced
1 lime, juice only
1 tsp sugar
½ tsp fish sauce
crusty bread, to serve (optional)

Steps:

  • Heat the oil in a large saucepan. Add the garlic, chilli, ginger, lemongrass, coriander stalks and curry paste and cook for 2 - 3 minutes until the aromas are released.
  • Add the chicken stock, coconut cream and sweet potatoes and cook for 15 minutes or until the potatoes are soft. Remove the lemongrass and discard. Carefully transfer to a blender and blitz until smooth. If freezing, for best results freeze at this point, otherwise as an easier option freeze complete recipe.
  • Return to the saucepan, add the chicken and cook gently for 5 - 10 minutes or until the chicken is cooked through. Stir through the lime juice, sugar and fish sauce, scatter with the coriander leaves and serve.

4 ounces thin rice noodles, broken into pieces

THAI CHICKEN AND COCONUT MILK SOUP

6 cups chicken stock
Zest of 3 large limes
Zest of 3 large lemons
6 heaping tablespoons coarsely chopped fresh ginger root
3 hot green chiles, halved and seeded (preferably jalapeno)
3/4 cup chopped cilantro stems and roots, washed carefully
3/4 pound boneless, skinless chicken breast, half-frozen
3 tablespoons lime juice
1 tablespoon sugar
1 tablespoon Nam Pla, bottled Thai fish sauce
Finely chopped scallion and cilantro leaves, for garnish

Steps:

  • Place the chicken stock in a heavy-bottomed pot over high heat. Add the lime peel, lemon peel, ginger root, green chiles, and the cilantro stems and roots. Bring to a boil, turn down to a simmer and cook until reduced to 3 cups. Press occasionally on the solids with a wooden spoon to release flavor. Working with a sharp knife, cut the chicken breasts into broad slices, as thin as possible. Salt lightly, and reserve in refrigerator. When broth is reduced, strain into a measuring cup. Press on the solids in the strainer with a wooden spoon. Place the coconut milk in the soup pot over medium heat. Slowly stir in the reduced broth. Warm rapidly but do not allow to boil (otherwise the coconut milk will separate). When the soup is just below the boiling point, add the chicken slices. Remove from heat after 30 seconds (or when the chicken is just cooked through). Just before serving, mix together the lime juice and sugar in a small bowl. Blend in the fish sauce. Pour mixture into hot soup, season to taste and garnish soup with a little bit of chopped scallion and cilantro leaves. Yield: 6 first-course servings.
  • Optional step: If your soup has curdled a bit, or if you'd like a fluffier texture in the soup, before you add the chicken, place the soup in a blender at high speed for 30 seconds. Then return to pot, add chicken and proceed as before. As an appetizer: Looks lovely served individually in six wide, shallow soup bowls. Great starter for many kinds of meals, not just Thai. As a main course: By doubling the amount of chicken and keeping the same amount of liquid, you convert this soup practically into a stew. The six wide, shallow bowls still work well; place a half-cup of steamed white rice to one side in each bowl, then divide the soup/stew among the bowls. Serve a tomato salad on the side that has been dressed with lime juice, sugar, fish sauce, and topped with chopped peanuts and minced cilantro. If you can get the Thai ingredients: for the lime and lemon peel, substitute 3/8 cup Keffir lime leaves, 2 lemon grass stalks chopped, 3 thick slices dried galanga root.

OUR FAVORITE CHICKEN AND COCONUT SOUP - THAI STYLE



Our Favorite Chicken and Coconut Soup - Thai Style image

My husband and I love Tom Kha Gai and have tried it at many Thai restaurants. We prefer Thai soup that we can distinctly taste spicy, sour, and sweet flavors. After many attempts, I think that I've finally come up with a really good recipe. I started with a recipe from the "The Best Recipe, Soups and Stews" cookbook and then modified it so that the flavor and ingredients closely match that of a soup that our favorite Thai restaurant serves. Now we can have delicious Tom Kha Gai without having to go out to eat. Part of the uniqueness of this recipe is that the ginger and lemon grass are finely minced as opposed to being left whole as in traditional Thai soup. The good thing about this is that you don't have to "fish out" ingredients while eating the soup.

1 tablespoon oil
1 stalk lemongrass (remove outer sheath and finely mince the bottom 3 inches of the stalk)
2 tablespoons fresh ginger (peel and finely mince)

2 tablespoons Thai red curry paste (I use Maesri brand)
2 tablespoons tom kha paste or 2 tablespoons tom yum paste

1 dash Asian chili sauce (I use Sriracha brand)

1 tomatoes, chopped
1 (8 ounce) package fresh baby corn, about (I buy this at Trader Joe's)
3 tablespoons fresh lime juice
cilantro leaf (to garnish)

Steps:

  • Heat oil in a large stock pot Add the lemon grass, ginger, garlic, and onion and stir fry for about one minute.
  • Add the curry paste and Tom Kha soup mix paste and stir fry for about 30 seconds.
  • Add the chicken stock, fish sauce, and sugar and bring to a boil.
  • Reduce heat to low and simmer for about 15 minutes.
  • Slice the baby corn vertically into four pieces so that the corn resembles small strips.
  • Add the corn to the pot and simmer for 10 minutes.
  • Add the coconut milk, chicken, mushrooms, tomato, lime juice, hot sauce, and pepper flakes.
  • Simmer until the chicken is no longer pink, about 5 to 10 minutes.
  • Taste the soup and add more sugar, lime juice, or hot sauce, depending on your taste.
  • I usually add one more TBS of sugar.
  • Serve the soup garnished with cilantro leaves.
  • Note: If you have leftovers, the coconut milk will separate from the chicken broth when chilled.
  • Simply warm the soup back up and stir to blend.

The next time you roast a chicken, don't even think of throwing away all those lovely bones. Instead, plop them in a pot and use them to make this hearty soup. You can make it go further by adding some prawns or strips of chicken to the broth.

1 chicken carcass
1/2 red chile
2 onions, peeled and quartered
6 cloves garlic, chopped
1 piece ginger, chopped (small)
1/2 lime, zested
2 pieces lemongrass, chopped
35 sprigs coriander
soy sauce
1/2 lime, juiced
1 inch fresh ginger, peeled and cut into matchsticks
1/2 red chile, deseeded and finely diced
50 g rice noodles
75 ml coconut milk
90 g Baby Spinach
1/2 cup coriander, chopped
3 spring onions, trimmed and finely sliced
1 teaspoon chopped peanuts (optional)
salt

Steps:

  • Place the carcass and all the stock ingredients in a large pan.
  • Cover with a litre of water and bring to a boil, then turn down the heat until the water is barely simmering and leave to bubble for an hour or so.
  • You will need to add a cup of water from time to time, to keep the stock topped up.
  • When the hour is up, strain the broth through a fine sieve into a bowl.
  • Measure out 150ml of this broth into a pan for the soup.
  • The rest can be frozen for another day.
  • Add a dash of soy sauce, the lime juice, red chilli and ginger to the broth and bring it slowly back to the boil.
  • Meanwhile, cook the rice noodles according to the directions on the packet.
  • Add the coconut milk, spinach, coriander and noodles to the bubbling broth and leave a few minutes to heat through.
  • Don't let it come to a boil.
  • Serve with some spring onions and crushed peanuts scattered on top.

4 WYLER'S Instant Bouillon Chicken Flavored Cubes
1 cup sliced carrots
1 red pepper, cut into strips
1 cup halved trimmed fresh green beans
4 oz. thin rice noodles, soaked as directed on package
1/2 cup lite coconut milk
2 Tbsp. chopped fresh cilantro

Steps:

  • Heat dressing and garlic sauce in large pot on medium heat. Add chicken; cook and stir 3 to 5 min. or until done.
  • Stir in water. Bring to boil. Add bouillon and vegetables; stir until bouillon is dissolved. Simmer 10 min., stirring occasionally.
  • Add noodles and coconut milk; stir. Simmer on medium-low heat 5 min.

1 cup thin dried noodles
1 liter chicken stock
6 slices ginger, thick
2 small red chilies
2 stalks lemongrass
4 fresh lime leaves
2 limes, juiced
1 tablespoon fish sauce
200 g cooked chicken
mint
coriander leaves

Steps:

  • Bring the chicken broth to a boil.
  • While this is happening, cut the ginger into thin shreds.
  • Also halve the chillies, deseed them and chop the pepper finely.
  • Cut the lemongrass into thin rings.
  • Shred the lime leaves.
  • Tip everything you've just chopped into the stock, as well as the noodles, lime juice and fish sauce.
  • Cut the chicken into small pieces and throw it in as well, then simmer for 5-7 minutes.
  • Remove the mint and coriander from their stems.
  • Divide them into two soup bowls and ladle the soup over the herbs.

  • Pour broth through a fine mesh strainer and discard solids (shallot and cilantro).
  • Return broth to saucepan.
  • Reduce heat to medium , add mushrooms and broccoli and cook until tender -2 to 3 minutes.
  • Add chicken and cook, stirring constantly, until no longer pink -1 to 3 minutes.
  • Combine lime juice, curry paste and fish sauce in a small bowl then stir into soup.
  • Ladle soup into bowls and garnish with cilantro, chilies and scallions.
  • Serve with wedges of lime.

Delicious fresh, fragrant Thai soup. Very tasty and can use which ever veg you have spare. Easy to keep the basic ingredients in the fridge and can be made veggie!

Steps:

  • Heat sesame seed oil on high heat. Fry chicken skin down until brown. Add star anise, garlic and ginger paste. Add oyster sauce and stir.
  • Add chicken stock and cover and cook until chicken is cooked (30 minutes) and falls off the bone.
  • Remove chicken at set aside to cool. Remove from bone when cool and place in a bowl. Prepare veg by slicing thinly.
  • Cook rice noodles as per their instructions. Set aside. When ready to eat place chicken and noodles in a bowl. Add veg to the stock in the pan and cook until just heated through, do not over cook.
  • Add veg to the bowl and cover with the broth. Garnish with fresh chili and corriander. Eat with chop sticks.

1 cup short-grain rice
8 cups water
1 teaspoon salt
2 lbs boneless skinless chicken breasts, thinly sliced
3 tablespoons fresh lime juice (mixed with 1 tsp. salt)
2 tablespoons vegetable oil
1/2 cup finely chopped onion
1 1/2 teaspoons minced garlic
1 tablespoon white pepper (or to taste)
1/4 cup chopped green onion
1/4 cup chopped celery leaves
1/4 cup chopped fresh cilantro

Steps:

  • In a medium size pot over low heat, simmer rice, water and salt for about an hour or so until rice is soft.
  • Marinate chicken in lime juice/salt for about 5 minutes.
  • In a skillet, heat oil and saute onion and garlic until tender; add white pepper and marinated chicken.
  • Cook, stirring for 10 minutes or so.
  • In small bowls, put 1 cup of heated rice broth and sprinkle with chicken, chopped green onion, celery leaves, and cilantro.
  • Serve.
