Number Of Ingredients 11

1 1/2 cups flour
1/2 cup yellow cornmeal
1/3 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups blueberries
1 cup 2% low-fat milk
1 large egg, beaten
2 tablespoons extra-light olive oil
1 teaspoon grated orange zest
1 teaspoon sugar

Steps:

  • Heat oven to 425 degrees.
  • Coat 2 4x6 inch mini loaf pans with nonstick cooking spray; set aside.
  • In a large bowl, combine first 5 ingredients.
  • Stir in blueberries and make a well; set aside.
  • In a small bowl, combine next 4 ingredients. Pour mixture into the well int the dry ingredients and stir until just moistened and slightly lumpy.
  • Pour batter into pans until they are 3/4 full. Sprinkle 1 t. of sugar over each loaf.
  • Bake 40-45 minute until tops are light golden and a toothpick comes out clean.
  • Cool for 5 min in pan, then remove from pan and cool on rack.

Number Of Ingredients 11

2 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg
1/2 cup orange juice
1/3 cup water
2 tablespoons butter, melted
2 tablespoons grated orange zest
3/4 cup fresh or frozen blueberries

Steps:

  • In a large bowl, combine the first five ingredients. In another bowl, combine egg, orange juice, water, butter and orange zest. Add to dry ingredients just until combined. Fold in the blueberries. Pour into a greased and floured 8x4-in. loaf pan. , Bake at 350° for 65-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack.

1/2 cup Florida's Natural® Premium orange juice
1 cup blueberries
2 tbsp. unbleached all-purpose flour
1-3/4 cup unbleached all-purpose flour
1/4 cup cornmeal
1-1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
6 tbsp. butter, at room temperature
3/4 cup sugar
1 egg
2 tsp. orange peel, grated

Steps:

  • Preheat the over to 350 degrees F. Grease and flour one 8-1/2" x 4-1/2" loaf pan. In a small bowl, toss together the blueberries and 2 tablespoons of flour. In a medium bowl, combine the cornmeal, baking powder, baking soda, salt, and the remaining 1-3/4 cups of flour. In a large bowl, with an electric mixer on high speed, beat the butter and sugar for 3 minutes, or until light and fluffy. Add the egg and beat well. Beat in the orange juice and orange peel. Add the flour mixture and, with the mixer on low speed, beat until well-blended. Stir in the blueberries. Spread in the prepared pan. Bake for 55 to 65 minutes, or until a wooden pick inserted in the center comes out clean. Cool on a rack for 5 minutes. Remove from the pan and cool completely on the rack.

1/2 cup unsalted butter, softened
1 cup sugar
2 large eggs, room temperature
1 tablespoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup milk
2 cups fresh blueberries

Steps:

  • Preheat oven to 350°. Spray 4 (5 1/2-inch) loaf pans with nonstick baking spray with flour. In a large bowl, beat butter and sugar with a mixer at medium speed until fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. In a medium bowl, whisk together flour and next 3 ingredients. Add flour mixture to butter mixture alternately with milk, beginning and ending with flour mixture, beating just until combined after each addition; gently stir in blueberries. Spoon batter into prepared pans. Bake for 28 to 32 minutes or until a wooden pick inserted in center comes out clean. Let cool in pans for 10 minutes. Remove from pans, and let cool for 30 minutes on wire racks; serve warm.

BLUEBERRY ORANGE TEA LOAF

A firm and restorative tea loaf, similar to a sponge cake.

Number Of Ingredients 8

250g caster sugar
200g butter, almost melted
1 tsp vanilla extract
3 large eggs, beaten
300g self-raising flour
Zest of 1 large orange
200g blueberries
Splash of milk if needed

Steps:

  • Preheat the oven 170C.
  • Grease and line a 2lb loaf tin and set aside. In a saucepan melt the butter on a low heat until almost melted. I did mine until there were a few lumps remaining and it was still a creamy yellow colour rather than being the deep liquid it is when fully melted. Cool fully.
  • When cooled, whisk in the sugar, egg, orange zest and vanilla. Fold in the flour along with a few splashes of milk if you think you may have trouble folding in the blueberries. This is meant to be a very firm loaf to prevent the blueberries from sinking.
  • Fold in the blueberries, then spoon into the tin. The mixture will be very thick so I used the back of a spoon to level the top. Prepare a foil 'hat' to be put onto the tin later, and bake for 60-70 minutes or until a skewer inserted in the cake comes out clean. If the mixture becomes too brown put the foil hat over the cake to protect it.

1 cup frozen cranberries
1/3 cup Betty Crocker™ Rich & Creamy vanilla frosting (from 1-lb container)
1 teaspoon grated orange peel

Steps:

  • Heat oven to 350°F. Grease bottoms and sides of 3 (5x3-inch) loaf pans with shortening; lightly flour. In medium bowl, mix flour, baking powder and salt. In another medium bowl, mix sugar, oil and 2 tablespoons orange peel with wire whisk until blended. Stir in sour cream and eggs until well mixed. Add sugar mixture to flour mixture, gently stirring just until blended. Gently stir in 1/2 cup of the frozen cranberries.
  • Divide batter evenly among pans. Sprinkle remaining 1/2 cup frozen cranberries evenly over loaves.
  • Bake 45 to 50 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Run knife around sides of pans to loosen loaves; remove from pans to cooling rack. Cool completely, about 1 hour.
  • In small microwavable bowl, microwave frosting and 1 teaspoon orange peel uncovered on High 10 to 20 seconds; stir. Drizzle over loaves, allowing some to drizzle down sides.

1 cup applesauce, unsweetened
2 cups frozen blueberries
2 large eggs, whole
1 cup granulated sugar (or use Splenda Blend)
2 large egg whites, beaten (to make 1/4 cup)
4 teaspoons baking powder
4 tablespoons canola oil
2 teaspoons lemon peel, grated
1/2 cup milk (or use low-fat)
1 teaspoon salt

Steps:

  • Preheat oven to 375 degrees.
  • Prepare 16 mini loaf pans with cooking spray and flour; set aside.
  • (Note: I use petite loaf pans with capacity for 9 loaves, size 2 1/2 x 3 3/8 x 1 1/2 in; or use the mini loaf pan with capacity for 6 loaves, size 4 1/2 x 2 1/2 x 1 1/2 in, from Wilton Brand that you can buy at any local arts and crafts store).
  • In a mixing bowl, combine flour, blueberries, sugar, baking powder, lemon peel, and salt; set aside.
  • In another mixing bowl, combine applesauce, whole eggs, oil, and milk. Mix with the flour mixture.
  • Beat egg whites and fold into dry and wet mixtures, stirring until moistened. Spoon each loaf pan with three ounces batter or about half cup of batter. Bake for 20-25 minutes, or until tops are browned.

1/2 cup butter, softened
3/4 cup sugar (can reduce the sugar a few tablespoon if desired)
2 large eggs
1 1/2 teaspoons vanilla
2 medium ripe bananas, mashed
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon (optional, can use more)
1 -1 1/2 cup blueberries (fresh or unthawed frozen)
glaze (optional)

Steps:

  • Preheat oven to 350 degrees F.
  • Set oven rack to second-lowest position.
  • Grease three mini loaf pans.
  • In a medium mixing bowl cream the butter with sugar (about 2 minutes).
  • Add in eggs and vanilla; continue beating for another 2-3 minutes or until no sugar granules remain.
  • On low speed mix in the mashed banana until blended.
  • In a small bowl combine the flour with baking powder, baking soda, salt and cinnamon; add to the creamed mixture just until blended (do not over mix).
  • Mix in the blueberries.
  • Divide the batter evenly between the 3 loaf pans.
  • Bake in a preheated oven for about 30-35 minutes or until the loaves test done.
  • Cool slightly in pan then remove to wire racks to cool completely.
  • Drizzle with glaze if desired.
