- In a small mixing bowl, beat egg whites until stiff peaks form; fold into batter.

- Meanwhile, for syrup, combine sugar, corn syrup and water in a saucepan. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in the milk, vanilla and cinnamon.
- Serve with waffles.

- Preheat the waffle iron according to the manufacturer's directions.
- Place flour, baking powder, sugar, and salt in a bowl. Whisk to combine.
- In a small bowl, mix egg yolks, milk, and butter. Set aside.
- In a separate bowl, beat egg whites with a mixer on medium high speed until stiff peaks form. *see note
- Add egg yolk mixture to flour mixture and stir to combine. Fold in egg whites.
- Drop by large spoonfuls onto greased waffle iron, close the lid and cook about 3-5 minutes.

- Preheat waffle iron. Gently coat with nonstick baking spray.
- In a large bowl, combine the flour, sugar, baking powder, and salt. Use the back of a spoon to create a "well" in the center.
- Whisk the two eggs into the milk until well combined.
- Pour the wet ingredients (butter, milk/egg mixture, vanilla) into the well of the dry ingredients and whisk until blended. (Note: the batter will be slightly lumpy, do not over-mix.)
- Scoop the batter into the preheated waffle iron and cook until the waffles are golden brown and crisp. (About 2-3 minutes, but this will vary wildly depending on your waffle maker.)
- Serve immediately or lay on a wire cooling rack until cool. Store leftovers in an airtight bag in the freezer.

- In a bowl, combine the flour, sugar, baking powder and salt. Combine the egg yolks, milk and oil; stir into dry ingredients just until moistened. In a small bowl, beat egg whites until stiff peaks form; fold into batter. Bake in a preheated waffle iron according to manufacturer's directions., Meanwhile, for syrup, combine sugar, corn syrup and water in a saucepan. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in the milk, vanilla and cinnamon. Serve with waffles. If desired, serve with fresh berries.Freeze option: Cool waffles on wire racks. Freeze between layers of waxed paper in a resealable plastic freezer bag. VERY TASTY CRISPY WAFFLES!
Tried and tested waffle recipie, light, fluffy crispy waffles everytime! I've tried numerous recipies and most have ended up in a doughy mess stuck to my waffle machine so I have written my own and it has resulted in light fluffy waffles, with a really nice, crispy outer. Not too sweet so you could use savoury toppings, or just eliminate the sugar altogether if you wish. Don't be put off by the thickness of the batter, use a knife to spread it out over your waffle plates to get an even shape. Hope it works for you too!!

- Firstly switch on your waffle machine to heat it up. Note: all spoon measurements were level.
- Put all of the ingredients, except the melted butter, into a mixing bowl and whisk together to make a smooth, thick batter, being careful to make sure there are no lumps. An electric whisk works best.
- Melt your butter in a small dish, you will use this to coat the waffle plates to stop the batter from sticking.
- Once your waffle machine has reached the correct temperature brush on a little of the melted butter to the top and bottom plates of your machine then carefully spoon the batter onto your waffle maker and spread out with a knife if needed, be careful not to overload the machine. Then follow the instructions on your machine to cook your waffles till crisp and golden. Top with your favourite filling and enjoy!
LIGHT AND FLUFFY WAFFLES

- Separate eggs. Place egg whites in a clean, dry bowl; let stand at room temperature 30 minutes., In another bowl, whisk together next 5 ingredients. HOMEMADE WAFFLES RECIPE
Steps:
- Gather the ingredients.
- Preheat the waffle griddle. If you plan to hold batches and serve all at once, preheat an oven to 200 F. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk to blend the dry ingredients thoroughly.
- In another bowl, whisk the eggs. Add the melted butter and whisk until the mixture is smooth, then whisk in the milk and vanilla.
- Pour the milk and egg mixture into the mixing bowl with the dry ingredients and whisk until combined. Let the batter stand for 5 to 10 minutes.

- Preheat a waffle iron to medium-high.
- In a large bowl, whisk together the flour, baking powder, salt, and nutmeg.
- In a medium bowl, whisk together the milk, egg yolks, vanilla, and 1/4 cup melted butter. Whisk the milk mixture into the flour mixture until a batter is formed. Take care not to over mix the batter. In medium bowl, with a hand-held electric mixer or whisk, whip the 3 egg whites until they just begin to hold a loose peak. Scatter the sugar over the whites and continue beating until they hold a soft peak. Using a rubber spatula, fold a third of the egg whites into the batter to lighten the base. Fold in the remaining whites.
- Brush the inside surface of the iron with butter. Pour in enough batter to lightly cover the surface of the iron, about 1/3 to 3/4 cup, depending upon the size of the iron. (Take into consideration that the batter will spread once the lid is closed.) Cover and cook until golden brown and slightly crisp, about 5 minutes. Repeat with the remaining batter. (If the waffle iron is well seasoned or nonstick it is not necessary to brush the inner surface each time before cooking the waffles.)
- Serve the waffles immediately with syrup, jam, fresh fruit, or yogurt.

- Heat waffle iron.
- Mix the flour, baking soda, baking powder and salt very well(otherwise may get bites that are bitter), I use a plastic bag and just shake all very well. Mix the eggs, milk and oil in a seperate bowl and then add the dry ingredients and mix all well.
- Pour enough mix into waffle iron and cook to desired doneness.
