Steps:
- Heat oven to 180C/160C fan/gas 4. Lightly butter and line the bases of 2 x 18cm sandwich tins with baking paper. Whisk the eggs and sugar until light and fluffy, about 5 mins with a tabletop mixer or 10 mins using an electric hand whisk. The mixture will have increased greatly in volume and be thick enough to leave a trail on the surface when the whisk blades are lifted.
- Sift the flour, cornflour, cocoa and baking powder over the surface and fold in gently using a large metal spoon. Divide between the tins, gently spreading the mixture to the edges, then bake for 15-20 mins until the cakes are well risen, have begun to shrink away from the sides of the tins and spring back when gently pressed. Leave to cool in the tins for 5 mins, then turn out onto a rack.
- To decorate, microwave the chocolate and coffee together on Medium for 20-30 secs until the chocolate has melted. Gently stir until smooth, then cool slightly. Beat the soft cheese with the yogurt and icing sugar until smooth, then spoon half the mixture into a small bowl stir in the melted chocolate and set aside. Place one cake on a serving plate and spread with the yogurt mixture. Cover with the other cake, then spread the chocolate yogurt mixture over the top.
- To finish, microwave the 15g chocolate on Medium for about 20 secs until melted. Stir gently until smooth, then drizzle all over the cake.

Steps:
- Preheat oven to 200°F/180° Fan/Gas 4. Grease and flour 2 x 9" cake pans. Into a large mixing bowl add your softened butter and caster sugar then cream together with a hand mixer until well combined and fluffy (you can use a stand mixer if you prefer but make sure you scrape down the sides of the bowl to fully incorporate the ingredients together). Next add 1 egg at a time and fully combine into the butter and sugar mix (this ensures an airy light sponge).
- In a separate bowl sift in your self raising flour, baking powder and salt. Stir to combine. In a measuring jug or large cup mix together the oil, milk and the vanilla paste, stir and set aside. Now using a wooden spoon fold in a 3rd of the flour mix until fully combined followed by a 3rd of the milk. Alternate the flour and milk until it has all been folded into the batter. Divide the mix evenly between the two prepared pans and bake in the oven for 20-22 mins until a skewer dipped into the centre comes out clean.
- Once cooked, remove the sponges from their tins and leave to cool on a wire rack. In a medium sized bowl add the softened butter and vanilla paste. Using a hand mixer blend to a smooth creamy consistency. Now sift in the icing sugar and combine everything together. Add the 2 tbsp milk if you need to, this will loosen the buttercream up a bit and make it easier for spreading on the cake.
- Take one of the sponges and lay flat side down onto a cake board or serving plate of your choice. Now spread on 2/3 of the buttercream forming an even layer all over. Dollop over 1/3 jar of strawberry jam and spread over the top of the buttercream. Now place the remaining sponge on top making sure the flat side is facing up, press down slightly. To decorate spread the remaining buttercream over the top and sift over the icing sugar. Halve 4 of the strawberries and place on top of the cake marking out the slices. Slice the remaining strawberry length ways to create a fan shape and place in the centre.

- Preheat the oven to 350F/177C. Prepare two, 8-inch/20-cm cake rounds by lining the bottom with parchment paper; do not grease the sides. This recipe will also work well in a 13x19-inch jelly roll pan for Swiss roll cakes.
- Place the eggs, sugar and vanilla extract into a stand mixer bowl, then whisk on high speed for 7 to 9 minutes. The eggs need to be thick, pale in color and super fluffy. In a separate bowl, combine the dry ingredients: flour, baking powder and cocoa powder. Sift the dry ingredients into the egg mixture in small increments, folding gently but thoroughly after each addition.
- In a small ramekin, dissolve the instant coffee with the hot water. Pour the dissolved coffee and melted butter last into the batter. Fold and mix gently for approximately 30 seconds, just until the butter is mixed into the batter. (Adding the butter is optional)
- Divide the batter evenly between the two baking pans. Bake in the preheated oven for 18 to 20 minutes, until the tops are set. They will spring back when tapped gently when done. Remove the cakes from the oven and place onto a cooling rack. Immediately, run a knife along the edge of the pan and cake to release the cake from the pan. Allow the layers to cool completely before removing them from the pans.
HOW TO MAKE ANGEL FOOD CAKE (VIDEO) - TATYANAS EVERYDAY FOOD
From tatyanaseverydayfood.com
Category DessertCalories 196 per serving
- Before starting with the ingredients, it's important to also get your baking equipment ready! Wash your mixing bowl with a degreasing soup and white vinegar. Rinse clean with water and dry the bowl. Preheat the oven to 325F/163C and prepare your baking pan(s). Angel food cake needs to be baked in ungreased pans, otherwise it will not rise or stay fluffy. I recommend lining just the bottom of your pan with parchment paper, leaving the rest of the pan clean and ungreased. I used a 9-inch funnel cake pan. You can also use two, 8-inch round cake pans or a 24-count cupcake pan.
- Place the egg whites and sugar into your stand mixer bowl and whisk on low speed first for 3 to 4 minutes, until the sugar is about half-way dissolved. If you want to add in the cream of tartar, add it now. Turn the mixer up to high speed and whisk for 6 to 8 minutes, until the egg whites reach stiff peak stage and form glossy peaks. Add in the vanilla extract and whisk again for 30 seconds.
- In a separate bowl, pre-sift the flour and add the salt and optional baking powder; baking powder will help keep the cake fluffy. Begin sifting the flour into the egg whites; do this in small increments (I split the flour into 3 parts). Sift the flour into the egg whites, then fold gently but thoroughly from the bottom of the mixing bowl. It's very important to keep the egg whites as fluffy as possible. Once all the flour is incorporated, sift in more. Watch my video recipe to see how it's done!
- If using a funnel cake pan, drop heaping spoonfuls of the batter into the prepared pan. If using round cake pans, divide the batter evenly between the pans. Use a scoop for cupcakes. Once the batter is in the pan, tap the pan hard a few times against your work surface to fill any possible air pockets. Use a small spatula to leave the batter.
