- Preheat oven to 400°. Mix pretzels, melted butter and 1/2 cup sugar. Press into a 13x9-in. pan. Bake 7 minutes. Cool completely on a wire rack., Meanwhile, in a large bowl, beat cream cheese and remaining sugar until creamy. Fold in pineapple and whipped topping; refrigerate, covered, until serving., To serve, break pretzel mixture into small pieces. Stir into pineapple mixture.

EASY PINEAPPLE PRETZEL SALAD
Can be used for a party dip for pretzels or a side salad depending on your choice. I usually double this recipe for parties. If you want to use for a dip for pretzels, one batch should be enough. I recommend crushing the pretzels using a rolling pin. I recommend not to add pretzel mixture to pineapple mixture until ready to serve.

- Mix cream cheese and 1/2 cup sugar together in a bowl; add pineapple and mix well. Fold whipped topping into pineapple mixture; refrigerate until chilled, about 30 minutes.
- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with a silicone mat or parchment paper.
- Combine pretzels, butter, and 1/3 cup sugar in a bowl until evenly coated; spread onto the prepared baking sheet.
- Bake in the preheated oven until pretzel mixture holds together like toffee, 6 to 8 minutes. Remove pan from oven and cool. Break pretzel mixture into pieces and mix into pineapple mixture.

- In a large bowl, toss pretzels with sugar and melted butter. Press into an ungreased 13x9-in. dish. Refrigerate 30 minutes., In a large bowl, beat cream cheese, ricotta, confectioners' sugar, vanilla and grated lemon zest until smooth. PHYLLIS' PRETZEL SALAD
This recipe is my aunt's and is great served with poultry, has a nice sweet & salty flavor that compliments the main dish... or can be made as a dessert. My Aunt Phyllis made this one year for Thanksgiving in lieu of a cranberry fluff and it was a big hit. My boys loved it. - Preheat oven to 350 degrees F (175 degrees C). Mix together the pretzels, 4 1/2 tablespoons sugar and melted butter. Press into the bottom of a 9x13 inch pan. Bake for 10 minutes, or lightly toasted. Set aside to cool completely.
- In a medium bowl, beat the sugar and cream cheese until smooth. Fold in whipped topping. Spread evenly over the cooled crust. Refrigerate until set, about 30-40 minutes.
- In a medium bowl, stir together the gelatin mix and boiling water. Mix in frozen strawberries, and stir until thawed. I let mine stand in the refrigerator until partially set. Pour over cream cheese mixture in pan. Refrigerate until completely chilled, at least 3-4 hours or overnight.

- Preheat oven to 400 degrees F (200 degrees C).
- In a medium bowl, mix crushed pretzels, margarine and sugar.

FLUFFY PRETZEL SALAD
This recipe is a favorite in my family. There isn't a holiday that goes by that I don't make this. Everyone in my family has something to bring, well this is my food to make and bring for the holidays.This is a very rich food but it is so good you can't get enough of it. I got this recipe from my Grandmother out in Florida who got it from a friend of hers while camping with there RV'S and had a pot luck dinner. I hope you enjoy it as much as my family does.

- You will need a large bowl because this makes alot.
- Mix in a bowl 2/3 cups sugar, 2 cups of crushed pretzels and 2 sticks of melted butter. Lay on a cookie sheet. Bake for 5 minutes at 400 degrees. When cold crumble and set aside.
- Mix: 2 (20oz) cans crushed pineapple (juice and all) with 2 (8oz) tubs of cream cheese (softened) and 1 cup of sugar. Fold in the 2 (8oz) whip cream.
- Refrigerate until you are ready to serve (when put in the fridge it will stiffen up). When you are ready to serve mix in carmelized pretzels.

STRAWBERRY RHUBARB PRETZEL SALAD
One of my favorite parts about living in the Midwest is that if someone says they're bringing a salad to the potluck, you never know what you're going to get. It could be a pile of greens, it could be cold spaghetti tossed with cheese and it could be layers of crushed pretzels, sweet cream, and strawberries suspended in gelatin. This version incorporates rhubarb into the mix since it plays so well with strawberries, and wherever rhubarb goes it brings an optional (but highly encouraged) splash of rosewater for a little extra sparkle.

- Place an oven rack in the middle position and preheat to 325 F degrees.
- For the crust: In the bowl of a food processor fitted with the blade attachment, add the pretzels and sugar and process into fine crumbs. Drizzle the melted butter over top and pulse to combine. Press the mixture into a clear glass 8-by-8-inch baking dish. (Use the bottom of a dry measuring cup to pack the crumbs tightly.) Bake the crust until crisp and pulls away slightly from the sides of the pan, about 15 to 17 minutes. Let cool completely.
- For the cream cheese layer: In a large mixing bowl, add the cream cheese and sugar. Using a hand mixer, beat until creamy. Drizzle in the cream and vanilla and continue to beat on a medium speed until light, fluffy and medium-stiff peaks form. Spread over the cooled crust and refrigerate until set, about 2 hours.
- Meanwhile, make the gelatin layer. Sprinkle the gelatin over 1/2 cup cool water in a medium bowl and let bloom, about 5 minutes. Combine the rhubarb, sugar and 3/4 cup water in a small saucepan, bring to a boil and reduce to a simmer. Cook until the rhubarb is just tender, but still completely holds its shape, 1 to 2 minutes (add a minute or so more if cooking from frozen). Remove from the heat. Add the jam and rosewater. Stir to combine and thin the jam. Stir in the food coloring, if using. Pour the mixture over the bloomed gelatin and stir to completely dissolve the gelatin. Refrigerate until soft set, about 2 hours (it should look thick and syrupy).
- Once the cream cheese layer is set and the gelatin is soft set, stir the strawberries into the gelatin and spoon the gelatin mixture over the cream cheese layer and smooth the top. Refrigerate until completely set, at least 4 hours or overnight.
- To serve, grab a big spoon and dig in.

This recipe caused quite a stir a few months ago. My grandmother made it once, and then forgot about it completely. My brother recently had a craving for it and called for the recipe. This is my MIL's salad...she got this at the RV park they stay at in Donna, TX. It's creamy, crunchy, sweet, slightly-salty ...and very light all rolled up into one dish...the first time she made this my SIL and MIL ate the whole bowl!!..it's addictive and often requested!

- Mix the crushed pretzels, butter and sugar together.
- Grease 9x13 pan.
- Place pretzel mixture in greased pan and bake for 10 minutes at 350°F.
- Cool slightly and break pieces into chunks.
- Beat cream cheese until well whipped and fluffy.
- Add the Cool Whip; blend well.
- Fold in the pineapple tidbits.
- Chill- for about 1 hour.
- About 1/2 hour before serving-- add pretzel pieces.
- Best served same day, otherwise the pretzels will get soggy. For a large group, I'd suggest doubling the recipe.
