Steps:
- Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Meanwhile, in another saucepan, melt butter. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened., Drain potatoes and place in a large serving bowl. Add cream sauce; toss gently to coat. Sprinkle with paprika and parsley.

CREAMY SCALLOPED POTATOES
These easy and delicious scalloped potatoes are full of flavor and perfectly crisp on top. They are the perfect side dish for a holiday or potluck.

- Preheat oven to 400F.
- Melt 4 Tbsp butter in a large saute pan over medium-high heat. Add onion and saute for 4-5 minutes until translucent. Add garlic and sauce for 30 seconds until fragrant. Pour in the heavy whipping cream and whisk until combined. Add salt and black pepper, 1 tsp rosemary and whisk until combined. Continue cooking for about 4 more minutes until the sauce thickens. Remove from heat and set aside.
- Grease a round baking dish (or a 9x13-inch baking dish) with the remaining 1 Tbsp butter. Layer half of the sliced potatoes in an even layer in the dish and season with salt and black pepper. Top with half of the cream sauce, and sprinkle evenly 1 1/2 cup shredded Parmesan cheese. Again, top evenly with the remaining sliced potatoes and season them with salt and black pepper. Top with the remaining cream sauce and sprinkle the remaining 1/2 cup of cheese. Sprinkle with a little bit of rosemary on top.
- Cover dish with aluminum foil and bake at 400 F for about 30 minutes. Then, uncover the dish and bake for additional 20-25 minutes or until the potatoes are fork tender. If they are starting to brown too fast, cover dish with a foil. Serve warm.

POTLUCK MASHED POTATOES
This is a great "make ahead" recipe. It can be prepared the day before and refridgerated then baked the day of. They are so creamy and good.

- 1. Boil potatoes until done. Drain and place in large bowl. Mash the potatoes. Add the sour cream, cream cheese, 4 T. butter, dried minced onion, salt and pepper and beat until smooth and creamy. Spread potato mixture in a greased large baking dish. Drizzle 2 T. melted butter over the top and sprinkle with paprika. Cover and bake at 350 degrees for 45 minutes; uncover and bake additional 20 minutes.
- 2. May be made ahead and refridgerated. If made ahead and refridgerated, let stand at room tempperature for 25-30 minutes before baking.

- Preheat oven to 350 degrees.
- In a large microwave-safe bowl, microwave frozen hash browns for 4 minutes on high.

- Allow potatoes to thaw in your fridge overnight, or spread them on a baking sheet and warm them in the oven at 200 degrees for about 20 minutes, until thawed.
- Preheat oven to 350 degrees.
- To a large bowl add the sour cream, cream of chicken, melted butter, salt, pepper, onion, hash browns and cheddar and toss the ingredients together well.

- Fill a large pot with salted water and add the potatoes. Bring to a boil and cook for 10 to 12 minutes, just until the potatoes are tender. Be careful not to overcook the potatoes or they will fall apart when added to the other ingredients. Drain to potatoes and rinse with cold water to stop the cooking process, then drain again.
