FLOURLESS CHOCOLATE ESPRESSO CAKE
Steps:
- Heat oven to 350ºF.
- Wrap outside of 8- or 9-inch springform pan with aluminum foil. Line bottom of pan with parchment paper. Butter parchment paper and sides of pan.
- Combine 1 tablespoon instant espresso powder and 1 tablespoon hot water in bowl; set aside.
- Place butter and chocolate in 2-quart nonstick saucepan. Cook over medium heat, stirring occasionally, until melted. Remove from heat; stir in espresso mixture. Add sugar; beat with whisk until combined. Add 1 egg at a time, whisking after each addition. Whisk in cocoa until well mixed.
- Pour cake into prepared pan. Place springform pan into center of large roasting pan. Place roasting pan in oven. Fill space around springform pan slowly with hot water, to about 1 inch up sides of pan. Bake 40-45 minutes or until center of cake is set.
- Remove springform pan from roasting pan. Place onto cooling rack; remove foil. Cool completely.
- Combine 1 teaspoon instant espresso powder and 1 teaspoon hot water in bowl; set aside.
- Beat chilled whipping cream and 1/4 cup sugar in chilled bowl at high speed, scraping bowl often, until stiff peaks form. Stir in espresso mixture.
- Combine powdered sugar and edible glitter in bowl.
- Remove sides from springform pan; place cake onto serving plate. Lightly dust top of cake with powdered sugar mixture.
- Serve with espresso whipped cream.

Chocolate lovers will go crazy over this flourless chocolate cake! It's rich and decadent while not being overly sweet. Who needs flour anyway?!

- Preheat oven to 300°F. Spray a 9-inch round springform pan with non-stick cooking spray and line with parchment paper.
- In a small saucepan over low heat, melt the butter and chopped chocolate, whisking until completely melted and smooth. Remove from heat and transfer to a large bowl. Set aside to cool.
- In the bowl of a stand mixer fitted with the whisk attachment, or in a large bowl with a hand mixer, beat egg whites on medium speed just until foamy, about 30 seconds.
- While continuing to beat on medium-high speed, slowly add in the sugar. Eggs will begin to become glossy and bright white.
- Continue to beat on medium-high until stiff peaks form on the end of the whisk. The meringue should be stiff and not drip off of the whisk attachment. This took me about 5-7 minutes of mixing.
- Add the egg yolks and vanilla to the slightly cooled chocolate mixture and whisk together until smooth.
- Sift the dutch processed cocoa powder and espresso powder into the chocolate and egg mixture. Add the salt and whisk until combined.
- Add ⅓ of the egg whites to the chocolate mixture and gently fold using a large spatula. Continue to add the egg white meringue to the chocolate mixture and gently fold until no streaks remain. Be sure not to over mix because you will lose the airy texture of the egg whites and will have a flat cake!
- Pour mixture into the prepared pan, smoothing top with an offset spatula.
- Bake in on the center rack for 30-40 minutes, depending on how powerful your oven is. Watch closely and remove the cake when it is set on the edges and in the middle. You will not want the cake to be jiggly in the middle. Do not overbake or the cake will be dry!
- Remove from oven and cool on a wire rack for 30 minutes to 1 hour.
- Remove the springform pan and continue to cool on a wire rack until room temperature. Sometimes I like to stick the cake in the fridge before topping with whipped cream and slicing because it helps the cake stay together better when cutting it!
- Top with Espresso Whipped Cream (instructions below).
- Using a whisk, mix together the espresso powder and warm water. Set aside to cool for a few minutes.
- In the bowl of a stand mixer fitted with the whisk attachment, or in a medium bowl with a hand mixer, whip the heavy cream, sugar, cocoa powder, and espresso mixture on medium-high speed until medium peaks form, about 3-4 minutes.
- Spread onto your cooled cake and slice and serve!

- Take everything you need out of the fridge to bring to room temperature. Preheat the oven to 180°C
- Butter and line a 23cm springform tin with baking parchment.
- Melt the dark chocolate and butter and set aside to cool slightly.
- Beat the eggs, sugar and vanilla together until thick, pale and fluffy - about 7 minutes. They should have at least doubled in volume, even tripled.
- Gently fold the flour and espresso powder, taking care not to lose the air you have created, and finally add the melted chocolate and butter, folding gently again.
- Pour into the prepared tin and cook for 35-40 minutes, by which time the top of the cake should be firm, and the underneath a bit gooey.
- Let the cake to cool completely on a wire rack before releasing from the tin.
- For the cream, melt the white chocolate, and let it cool. Fold in the cream and espresso powder, whipping the latte cream together to thicken it a little.
- Sit the sprung cake on a plate, fill the middle sunken crater with the latte cream and dust with a little cocoa powder.

- FOR SAUCE:
- Working in batches, puree raspberries and syrup in processor. Strain puree into medium bowl. Chill. (Can be made 2 days ahead. Keep chilled.)
- FOR CAKE:
- Preheat oven to 350 °F. Line bottom of 9-inch-diameter cake pan with 2-inch-high sides with parchment. Place all chocolate in large bowl. Bring butter, espresso and sugar to boil in medium saucepan, stirring to dissolve sugar. Add to chocolate; whisk until smooth. Cool slightly. Whisk in eggs.
- Pour batter into prepared pan. Place cake pan in roasting pan. Pour enough hot water into roasting pan to come halfway up sides of cake pan. Bake until center of cake is set and tester inserted into center comes out with a few moist crumbs attached, about 1 hour. Remove pan from water. Chill cake overnight.
- Cut around pan sides to loosen cake. Using oven mitts as aid, hold pan bottom over low heat for 15 seconds, warming slightly to release cake. Place platter over pan. Hold pan and platter together tightly and invert. Lift off cake pan; peel off parchment.
- Serve with sauce and fresh berries.
CHOCOLATE ESPRESSO CAKE (FLOURLESS)
I got this recipe from a friend I used to work with, who maintains that it's VITAL to use fresh espresso. This cake is very rich and fudge-like. I've tried cutting the recipe in half (unsucessfully) so I prefer to make the whole cake and just share it with others. My co-worker's recipe called for offering it with raspberry sauce, but I never asked for that part of the recipe as I just can't mix chocolate and fruit.

- Preheat oven to 350F; line bottom of 9" springform pan with non-stick foil or parchment paper, and wrap outside of pan with a layer of heavy-duty aluminim foil.
- Place chocolate in large bowl; set aside, In medium saucepan bring butter, sugar, and espresso to a boil, stirring to dissolve sugar; once melted and blended, add to chocolate, whisking until smooth; cool slightly.
- Lightly beat eggs together; whisk in some of chocolate mixture, then add egg mixture into remainder of chocolate mixture, whisking until smooth.
- Pour batter into springform pan, place pan in a large roasting pan, pouring enough hot water to come halfway up the sides of the pan.

- Preheat oven to 350°F (177°C). Make sure you have a bottom oven rack and a center oven rack in place for step 5. Grease an 8-inch round cake pan, line with a parchment paper round, then grease the parchment paper. Parchment paper helps the cake seamlessly release from the pan. The cake WILL stick unless it’s lined and generously greased. (Trust me!)
- Cut the butter into pieces so it melts evenly. Place in a large heat-proof bowl. Add chopped chocolate. Melt in 20 second increments in the microwave, stirring after each increment until completely melted and smooth. Let cool for 2-3 minutes. You can use a double boiler for this step if desired.
- Whisk the sugar, espresso powder, and vanilla extract into the chocolate mixture. Whisk in the eggs until smooth. The mixture will be heavy and tacky, like brownie batter. Whisk in the cocoa powder, salt, and baking powder (if using).
