FLOUNDER WITH BROWN BUTTER, LEMON AND TARRAGON
The flatfish family is comprised of numerous popular fish, including sole, halibut and flounder. But all the various boneless fillets are relatively interchangeable and can be prepared in more or less the same way, adjusting cooking time according to size. These pan-cooked fillets are quick, simple and elegant.

- Place the flour on a plate and season with salt and pepper. Lightly dust the flounder on both sides with the seasoned flour. Heat 2 teaspoons of the olive oil in a large, heavy nonstick skillet over medium-high heat. Place the flounder in the pan and saute on one side for about 90 seconds. Turn the fish over. Squeeze the lemon juice on the fish and sprinkle the scallions evenly over the fillets. Cook for 30 seconds and divide among 4 warm plates.

Add the wine, increase the heat to high and continue to cook for about 1 minute, until the smell of alcohol disappears. Remove the pan from the heat, add the spinach and toss quickly until it barely wilts. Taste and season again with salt and pepper. Divide the spinach over each flounder fillet and serve immediately.

Steps:
- First, thaw the frozen flounder fillets either on the counter or overnight in the fridge. Open the packages, and drain the excess water from their packaging. Give them a quick rinse under running water, and allow them to drain again.
- Next, in a 10-inch non-stick skillet, heat olive oil and butter on low heat, until the butter melts.
- When the butter is melted, add the fillets to the skillet. Sprinkle over them with some sea salt, herbs de Provence, oregano, and cayenne pepper.
- Cook them on low heat for 30 seconds to one minute. They will start to release excess water, and that's fine.
- Pour in the wine and lemon juice, and sprinkle over them with freshly chopped parsley. Then cover with a lid.
- Simmer for 4 to 6 minutes or more, ( depending on how thick the fillets are) until the fish turns opaque-white-ish and the sauce is reduced a little. And the fish flakes off with a fork.
- When the flounder fillets are fully cooked. Turn off the heat. Squeeze additional lemon juice over the fish (about 1 tablespoon, or more). Then serve.

- Ginger Pea Pilaf. Peas are one of the most versatile veggies in your kitchen. You can eat them raw or cooked, in soups and salads. But you probably never thought about infusing them with Asian flavors like ginger and garlic.
- Honey-Glazed Carrots. Carrots are a staple side dish for flounders. Glazed carrots are better, but honey-glazed is even better. Honey’s sweetness brings out the natural sugars in carrots while offsetting their earthiness.
- Chickpea Salad. This recipe is ideal for making a salad that works well as a side dish or main course. The chickpeas are mixed with tomatoes, bell peppers, cucumbers and onions, and herbs and spices.
- Ginger-Soy Green Beans. Green beans are one of the easiest side dishes for flounder to make. They only require a little bit of flavor, so they can take on whatever you want them to be.
- Herbed Quinoa Pilaf. Quinoa is a healthy grain that’s packed with protein, vitamins, and minerals. It’s also incredibly versatile since it takes on the flavors of whatever you mix into it.
- Simple Cauliflower Rice. Cauliflower rice is the perfect substitute for regular white rice. It’s just as filling but much more nutritious since it comes from a vegetable.
- Sesame Green Beans. Green beans are great with flounder. But if you’re looking for something a little more interesting, give this sesame green bean recipe a try.
- Tomato and Onion Salad. This is a delicious tomato and onion salad that will dress up your flounder. It’s also pretty simple to make – chop everything up, toss it together with some vinegar and oil, and you’re done.
