PAN-FRIED FLOUNDER

Steps:
- Wash fillets in cold water and pat dry. Sprinkle with salt and pepper. Dredge fillets in flour. Place oil and 2 tablespoons butter in flat, heavy-bottomed skillet and heat on medium-high until butter melts. Keeping heat at medium-high, cook fish on 1 side about 3 minutes (more or less, depending on size of fillets), until deep brown and crispy. Turn fish and cook on second side, about 3 minutes. Turn fish only once.
- Remove fish to serving platter. Turn off heat. Into hot skillet, whisk in remaining 1 tablespoon butter. Add lemon juice. Pour in capers, liquid and all. Whisk. Pour thin sauce over fish fillets. serve at once.

- Preheat grill to 350-400.
- Place a large piece of heavy duty foil on a work surface.
- Place fish on foil and drizzle with olive oil spreading to coat both side of fish place in the center of the foil.
- Top with the ginger, garlic and pepper.
- Sprinkle with pepper.
- Sprinkle the wine, scallions, seasme seeds and soy on top.
- Bring sides of foil up and seal.
- Place on grill on indirect heat.
- Cook and let steam for 10-15 minutes depending on thickness and heat of grill.
- Plate and drizzle with hoisin sauce.

Steps:
- Preheat the oven to 425°F (218°C) and pat the flounder fillets dry with paper towels on all sides.
- Season flounder fillets with salt and pepper on a baking sheet lined with parchment paper.
- Combine the Panko, Parmesan cheese, and olive oil in a small mixing bowl until the breadcrumbs are slightly moistened. Spread the Panko mixture on top of the fillets.
- Bake at 425°F (218°C) for 15 minutes, or until the flounder is cooked to your liking.
- Remove from the oven and serve right away with lemon wedges.

- 1. Dice and boil potatoes and carrots for 5 - 8 minutes drain.
- 2. Mince and saute onion in melted butter until tender.
- 3. Place fillets in shallow, buttered heat-proof dish in one layer, sptinkle with thyme,
- salt and pepper. Spoon diced vegetables and oniond over top of fillets.
- 4. Bake for 1/2 hour at 350*F.
- 5. Garnish with parsley before serving.
- My Note: To DEEP FRY: Heat oil to 350*F. Coat fish with flour. breadcrumbs or cornmeal. Fry until golden brown.
- TO BAKE: Preheat oven to 375*F. Place fish in oiled baking dish. Season to taste. Bake for 8 to 12 minutes - until fish flakes when pierced with a fork.
- TO GRILL: Preheat grill. Season with salt and pepper. Turn afther 3 to 4 minutes. Continue to grill - until fish flakes when pierced with a fork.
- TO BROIL: Set oven to broil. Position fish in in pan and season to taste. With fish 4 to 5 inches from heat, broil about 5 minutes until fish flakes when pierced with a fork.

Steps:
- Season the fillets with salt and pepper.
- Place the mustard in a shallow dish.
- Mix the flour and cornmeal in another shallow dish.
- Line a baking sheet with waxed paper.
- Drag each fillet in the mustard to coat it thinly on both sides and then dip into the flour mixture, turning to coat. Place on the waxed paper and let stand a few minutes to set the coating.
- Pour enough oil into a large skillet to come 1/8 inch up the sides of the pan. Heat over medium-high heat until very hot but not smoking.
- Add the fish fillets and cook until the undersides are crisp and golden brown, abouit 2 minutes. Turn and cook until the other sides are crisp, about 2 more minutes.
- Transfer to paper towels and drain very briefly (if allowed to stand too long, steam will collect and soften the crust).
- Serve immediately.

- Preheat oven to 400°F.
- Rinse fillets, pat dry with paper towels.
- Sauté onions over medium heat until tender. Add celery, carrot, and pepper.
- Reduce heat to medium low, cover and cook for 5 minutes, until vegetables are tender.
- Increase heat to medium-high, stir in thyme and cook until all moisture is absorbed. Stir in 1 tablespoon parsley.
- Spoon an equal amount of stuffing into center of each fillet.
- Roll lengthwise and seal with a toothpick.
- Place filets, seam side down, into coated casserole dish.
- In small bowl combine cheese, mayonnaise, and mustard.
- Spread over fish, sprinkle with lemon juice.
- Bake 20 minutes until the fish flakes easily with fork.
