Florida Shrimp image

Shrimp so yummy I decided to name it after my beloved state! This recipe is for one really big "dinner" sized serving, since I only cook for one.

1 key lime
olive oil
creole seasoning (to taste)
1 teaspoon garlic powder
25 large shrimp (uncooked, deveined, peeled)

Steps:

  • In preparation, zest the lime and cut it in half. Set aside for later.
  • In a large saucepan over medium high heat, drizzle enough olive oil to lightly cover the surface of your saucepan.
  • Add the garlic powder, creole seasoning, and lime zest. Then add shrimp. Cook until pink.
  • Serve immediately with remaining lime halves squeezed over the top.

1 frozen deep dish pie shell
1/2 cup chive & onion cream cheese
4 eggs
12 ounces frozen cooked deveined peeled medium shrimp (thawed, well drained, coarsely chopped)
1/2 cup shredded monterey jack pepper cheese

Steps:

  • Place cookie sheet on oven rack. Heat oven to 375*. Let crust thaw 10 to 20 minutes. Prick bottom and around side with fork. Bake on cookie sheet 9 to 11 minutes or until very light golden brown.
  • Meanwhile, in medium bowl, beat cream cheese spread with whisk or electric mixer until creamy.
  • Beat in eggs, one at a time, until mixture is smooth and well blended. Stir in shrimp and cheese. Pour into crust.
  • Bake on cookie sheet 30 to 35 minutes or until center is set. Let stand 15 minutes before serving.

16 crackers (I have used Ritz & Cobblestone Wheat Crackers)
1/3 cup seafood cocktail sauce
16 large shrimp, cooked
1/3 cup green onion, finely chopped
1/4 lb imitation crabmeat, minced or 1/4 lb florida lump blue crab
4 ounces cream cheese, softened
1/2 tablespoon cajun seasoning
1/2 stalk celery, finely minced
1 green onion, thinly sliced
1/4 teaspoon garlic powder

Steps:

  • Spread each cracker with 1 teaspoon of the Cajun Crab spread.
  • Top evenly with the cocktail sauce and one shrimp.
  • Sprinkle some of the finely chopped onions on top.

3/4 lb medium shrimp, peeled and deveined
6 tablespoons butter
1 tablespoon lemon juice, freshly squeezed
3 cloves garlic, minced,to taste
1 teaspoon Worcestershire sauce
1/2 teaspoon red pepper flakes
1/4 teaspoon salt
1/3 cup cracker crumb (I use Club crakers)

Steps:

  • Arrange shrimp in 1 layer in a shallow baking dish.
  • In a small sauce pan, melt the butter.
  • Add the lemon juice, garlic sauce, red pepper and salt.
  • Pour mixture evenly over the shrimp, reserving 2 tablespoons.
  • Add remaining butter mix to the cracker crumbs and mix well.
  • Sprinkle crumbs over the shrimp.
  • Bake at 450 degrees for 8-10 minutes until browned.
