JAPANESE-STYLE GUACAMOLE
Bet I got your attention with this dish!!! It incorporates edamame and asian condiments along with the traditional guacamole ingredients such as avocado, lime juice, cilantro and tomatoes. This recipe is from Cooking Light and it is so interesting that I had to post it. This dish is served with veggies such as carrot sticks, celery, etc.

Steps:
- Combine the first 6 ingredients in a large mixing bowl, and toss well. Add sesame oil, soy sauce, and lime juice, toss gently. Add avocado, using a large fork or potato masher. Coarsely mash avocado to incorporate making sure to leave the guacamole chunky. Add salt and black pepper. Place in an air-tight container and refrigerate until ready to serve. Serve with celery, carrot sticks, broccoli, and asparagus.

Mash until no large pieces of avocado remain, or to your desired consistency. Gently fold in the chopped tomato and season to taste with salt and pepper before serving.
