GRUYERE AND EGG BURGERS
Steps:
- Whisk mayonnaise, garlic, lemon juice and lemon zest until blended. Refrigerate., For burgers, combine the next six ingredients, mixing lightly but thoroughly (do not overmix). Shape into eight patties. Grill, covered, over medium direct heat until a thermometer reads 160°, 5-7 minutes on each side. Top with cheese; grill, covered, until cheese is melted, 1-2 minutes longer. Place burgers on bun bottoms. Keep warm., Melt 1 tablespoon butter over medium heat in each of two large skillets (on grill or stovetop). Break eggs, one at a time, into a custard cup or saucer, then gently slide into pans. Immediately reduce heat to low. To prepare eggs sunny-side up, cover pan and cook until yolks thicken but are not hard. To make basted eggs, spoon butter in pan over eggs while cooking. For over-easy, carefully turn eggs to cook both sides but do not cover pan., To serve, spread mayonnaise mixture over bun tops. Add arugula, tomatoes and, if desired, additional mustard to burgers. Top with fried eggs. Replace bun tops.

- Combine the avocado and salsa in a small bowl; set aside. Whisk 2 3/4 cups water, the grits, 1 teaspoon salt and a few grinds of pepper in a microwave-safe bowl. Cover with plastic wrap and pierce a few times with a knife; microwave until thickened, 8 minutes. Uncover and microwave until creamy, 4 to 5 more minutes. Whisk in the cheese. Cover and set aside.
- Meanwhile, form the beef into four 3/4-inch-thick patties. Heat a large cast-iron skillet over medium-high heat; sprinkle the skillet with1 teaspoon salt. Add the patties and cook 4 to 5 minutes per side for medium doneness. Transfer to a plate and tent with foil.
- Add the scallions and jalapenos to the skillet. Cook, stirring, until tender, 2 minutes. Add the kale; stir until wilted. Transfer to a bowl.
- Wipe out the skillet. Add the butter and swirl to melt. Add the eggs and fry as desired; set on top of the burgers. Whisk the grits, adding hot water to loosen, if necessary. Divide among plates and top with the kale mixture and avocado salsa. Serve with the burgers.

- Preheat your griddle and start cooking some bacon. As always, I recommend preheating your griddle on the low heat setting… even on low a flat top grill can reach very high temperatures, and remember, you’ll be cooking a sunny side up egg for this hangover burger, so you don’t want your griddle surface too hot.
- Mix your breakfast burger patties. While your bacon starts to cook, make the patties for your breakfast burger by combining equal amounts of ground beef and breakfast sausage.
- Add onions and hash browns to the griddle. If you want crispy hash browns for your breakfast burger (which I highly recommend), then they’ll take a little bit of time to cook… Like I always say, there’s two things you need for crispy hash browns – lots of patience and oil.
- Cook your burger patties on the griddle, smash burger style. While the hash browns continue to cook, go ahead and start cooking your burger patties.
- Fry an egg sunny side up. When all of the other burger components are almost done cooking, go ahead and cook your sunny side up eggs. Choose the coolest side of your griddle for the eggs, because you don’t want the bottom of the over easy egg to burn before the top is done.
- Build your breakfast burger and enjoy! After all of the components for your breakfast burger are cooked, it’s time to build it! I stacked two cheeseburger patties on top of the bottom of the toasted bun.
