CHIPOTLE PORK TENDERLOINS

Chipotle Pork Tenderloins image

From Priscilla Gilbert of Indian Harbour Beach, Florida: "This pork tenderloin beats all at a cookout! The recipe came from a family member and is such a treat. Fresh strawberries and avocado in the salsa help cool the tasty heat of the pork."

FLASH-ROASTED PORK TENDERLOIN WITH CHIPOTLE CHILE-FRUIT GLAZE

FLASH-ROASTED PORK TENDERLOIN WITH CHIPOTLE CHILE-FRUIT GLAZE image

Categories     Pork

Yield 4 people

Number Of Ingredients 14

Chipotle Fruit Sauce:
13 ounce can Mexican chipotle chilies in adobo sauce (available in many supermarkets)
6 large cloves garlic
1 teaspoon salt
1/2 cup apricot or other fruit jam
1/2 cup rice or cider vinegar, or to taste
1/3 cup sugar, or to taste
1/4 cup extra-virgin olive
Meat and Vegetables:
1 pork tenderloin, cut crosswise into 1/2-inch thick slices
4 tablespoons extra-virgin olive oil
1-1/2 pounds mixed peppers (my mix: 2 red bells, 1 Anaheim, 2 jalapeno), seeded and thin sliced
2 big handfuls (about 5 ounces) organic mixed greens
1 small to medium onion, thin sliced

Steps:

  • 1. Make the sauce by pureeing everything together in a blender or food processor and then boiling for 5 minutes. Taste for hot, sweet, tart balance. 2. Slip 1 large or two smaller shallow baking pans in the oven. Turn heat to 475 F. 3. In a large bowl, toss together 1/2 cup of the sauce with the rest of the ingredients. 4. Spread ingredients on the hot baking pan, taking care not to burn yourself. Make sure pieces are spaced apart to help the crisping process. Roast 20 to 25 minutes, turning occasionally. Greens should be crisp, and pork firm. If the sauce threatens to burn on the pan, add a few spoonfuls of water. 5. Serve the pork and vegetables with rice, couscous, barley or just a green salad.

Time 1h30m

Yield 6 servings

Number Of Ingredients 29

1 cup maple syrup
1 tablespoon minced ginger
1/2 tablespoon minced garlic
1/4 teaspoon chile flakes
1/2 cup veal stock
4 tablespoons butter
6 (8-ounce) caribou tenderloins, pork or veal can be substituted
Salt
Pepper
Braised Red Cabbage, as an accompaniment, recipe follows
Sweet Potato Puree, as an accompaniment, recipe follows
4 tablespoons grape seed oil
2 tablespoons butter
1/2 cup diced smoked bacon
1 red onion cut in small dice
1 head read cabbage, slice thinly
1 tablespoon brown sugar
1 cup red wine
1/2 cup red wine vinegar
Salt
Pepper
4 tablespoons butter
1 pound sweet potatoes, peeled and cut in large dice
1 yellow onion sliced
2 tablespoons minced fresh ginger
2 cups chicken stock
2 cups heavy cream
Salt
Pepper

Steps:

  • In a saucepan on medium heat, add all ingredients for the Chile Maple Glaze and reduce by half. Be careful not to allow to boil over.
  • Preheat oven to 450 degrees F.
  • Season tenderloin with salt and pepper. Sear tenderloin in a saute pan, roast in a hot oven until medium rare, and then brush with glaze and cook another couple minutes. Caribou should be served rare because of its leanness, veal medium rare, and pork medium. Transfer meat from the pan to a cutting board and add the glaze to pan with veal stock and butter. Reduce until thickened and season with salt and pepper. Serve with Braised Red Cabbage and Sweet Potato Puree.
  • In a heavy-bottomed pot on medium heat, melt the butter in the oil. Add the bacon and onions and cook for 2 to 3 minutes. Add the remaining ingredients and cover. Turn down the heat to low. Cook for 20 minutes, stirring every few minutes. When cabbage is tender, season with salt and pepper.
  • Place all ingredients into a large pot, bring to a simmer, and cook for 30 minutes. Strain off excess liquid, puree, and season.

ROAST PORK WITH CHIPOTLE-GLAZED APPLES

Roast Pork With Chipotle-Glazed Apples image

I did my best to pattern this recipe after a delicious dish that I had at a hotel in Puerto Vallarta, Mexico. The chef was very secretive but the waiter was more than willing to whisper a lot of tips in my ear! (It was he that got the big tip!) I always brine pork (all cuts) before I prepare it but that is a personal choice. If you want to brine, there is a good basic brine recipe on this site. If you brine, start this recipe 2 days before serving. The process to brine and marinade only takes a few minutes each, so this is not as time consumming as it may seem. Remember to rinse the pork well after taking it out of the brine.
