FIVE-SPICE PORK TENDERLOIN
Five-spice powder is a pungent seasoning mix used widely in Chinese cooking. It is made of equal parts ground cloves, cinnamon, fennel seed, star anise, and Szechuan peppercorns and lends an irresistible flavor to pork tenderloin.

Steps:
- Preheat oven to 400 degrees. Combine spice powder and salt on a plate; generously coat pork tenderloins. Heat a large ovenproof skillet over medium-high heat, and pour in oil. Add tenderloins; brown well on all sides, about 4 minutes per side.
- Transfer to oven, and roast until meat is cooked through, about 15 minutes or until a meat thermometer inserted in the center registers 160 degrees. Remove from oven; let rest 5 minutes before slicing. Serve.
5-SPICE PORK RIBS WITH SMOTHERED ONIONS, SPICY CRAISIN BBQ SAUCE
Finger-licking ribs served with a piquant cranberry sauce make a great dish for a BBQ. Time doesn't include overnight soaking.

Steps:
- In a large pan, place the Chinese 5-spice powder, sugar, salt and a generous amount of cold water.
- Mix together until the sugar and salt have dissolved.
- Add the baby back pork ribs into the liquid, so that they are totally covered.
- Chill in the refrigerator overnight.
- Preheat the oven to 300°F.
- Line a roasting tray with enough kitchen foil to completely cover and seal the pork ribs.
- Evenly spread the sliced onions on the foil and place the butter on top.
- Remove the ribs from the liquid and season both sides with salt and freshly ground pepper.
- Place the ribs in one layer on top of the onions, and fold the foil over making sure to tightly seal the package.
- Roast undisturbed for 2 hours.
- Meanwhile heat the canola oil in a small saucepan.
- Add in the onion and garlic and fry gently, stirring often, for 10 minutes.
- Add in the sugar, craisins, cranberry juice, vinegar and chipotle peppers.
- Simmer until the liquid is reduced by half. Puree the sauce in a blender until very smooth, season with salt and freshly ground pepper.
- Remove the ribs from the oven, unwrap and baste them with Spicy Craisin BBQ Sauce.
- Increase the oven to 400°F.
- Bake the ribs uncovered for 10 minutes until the sauce is lightly browned.
- Divide the smothered onions onto four plates and serve with one half rack per person.

This is a good recipe that is quick & tastes great & is good for you. Its low in fat. This recipe came from eating well magazine, but it was done with chicken tenders. Tip: you could use, frozen peppers & onions that is used for stir fry's. It will save you time.

- combine cayenne, sugar, salt,pepper,& paprika in a medium bowl.
- Add pork and toss to coat.
- Cover& refrigerate for 15 minutes, or overnight.
- Heat oil in a large nonstick skillet over high heat.
- Add pepper& onion mix& cook, stirring occasionally, until vegetables are soft, 5 to 7 minutes.
- Add the spice rub pork and cook, stirring, about 3 to 7 minutes.

SPICY PORK RIBS

- Heat oven to 180C/160C fan/gas 4. Heat the oil over a high heat in a large flameproof roasting tin. Season the pork, then fry until browned in places - don't worry about the ribs getting evenly browned, you are just looking for a little colour as it will add lots of flavour to the dish.
- Add all the remaining ingredients, except the lime zest and chilli, to the tin, stir, then arrange the ribs so they are in a single layer. Once the liquid has started to boil, transfer to the oven and roast for 1 hr, turning the ribs halfway.
- Take the tin out of the oven and carefully put back on the hob over a medium heat. The liquid will have reduced considerably. Keep turning the ribs over to coat in the sauce - they are ready once they are all covered and glossy, around 10 mins. Scatter over the lime zest and chilli flakes and serve with lime wedges and plenty of kitchen paper.

- Place racks in upper third and middle of oven; preheat to 350°. Line a rimmed baking sheet with a double layer of foil. Mix 3 Tbsp. brown sugar, 1 Tbsp. kosher salt, and 1 Tbsp. Chinese five-spice powder in a small bowl to make a rub.
- Cut 2 3-lb. racks St. Louis-style ribs in half (to create 4 smaller pieces). Transfer to prepared sheet. Season all over with spice rub, being sure to coat sides and edges and to gently press the rub into the meat. Pour 1½ cups water into baking sheet, then cover tightly with foil. Bake on middle rack until meat is very tender and bones are exposed, 100–115 minutes. If racks of ribs you're cooking are much smaller than called for, check early—they'll cook in less time.
- Meanwhile, whisk ½ cup hoisin sauce, ½ cup soy sauce, 3 Tbsp. honey, and remaining 1 tsp. Chinese five-spice powder in a small saucepan to combine.
- Peel and finely grate 4" piece ginger and 5 garlic cloves into saucepan. Heat over medium and bring to simmer, whisking often. Cook, stirring, until just thick enough to coat the back of a spoon, 2–3 minutes longer. Cover pot; set aside until ribs are ready.
