20-MINUTE MASHED SWEET POTATOES

20-Minute Mashed Sweet Potatoes image

In this easy mashed sweet potatoes recipe, the naturally sweet flavor of the potatoes is enhanced by just a little sweet butter, maple syrup, and cinnamon.

Provided by Vered DeLeeuw

Categories     Side Dish

Time 20m

Number Of Ingredients 6

1 extra large sweet potato (unpeeled, washed and dried (20 oz)* )
3 tablespoons unsalted butter
3 tablespoons whole milk
1 tablespoon maple syrup
1/8 teaspoon Diamond Crystal kosher salt
1/8 teaspoon ground cinnamon

Steps:

  • Pierce the sweet potato with a fork on all sides. Microwave on high until very tender and the flesh is easily pierced with a fork, about 4 minutes per side. Let stand for 5 minutes, until cool enough to handle.
  • Meanwhile, in a medium microwave-safe bowl, add the butter, milk, maple syrup, kosher salt, and ground cinnamon. Microwave to heat through, 50-60 seconds. Don't allow the mixture to boil.
  • On a cutting board, use your fingers to peel the cooked sweet potato. Roughly mash it with a fork right on the cutting board, then transfer the mash to the bowl with the warm butter mixture.
  • Keep mixing and mashing with a fork (or with a hand masher) until the mash is uniform and smooth, about 1 more minute. It won't be perfectly smooth unless you use a hand mixer or an immersion blender. But I like it a bit rustic. When done mixing, I do like to use a rubber spatula to smooth it out, as shown in the video below.

Provided by Diana Rattray

Categories     Side Dish     Dinner

Time 24m

  • Remove cauliflower florets from tough core. Place in microwave-safe glass dish. I always use my two-qt Pyrex glass measuring bowl. Do not add water. Do not cover.
  • Microwave on HIGH for 10 minutes. Stir and continue on HIGH for 8-10 more minutes until cauliflower is soft throughout. Microwave ovens and cauliflower size vary hugely and will affect cooking times. If you have an older oven it may take several minutes more. A larger than average cauliflower will also take longer. Check often if you are new to this method. A few scorched spots on the cauliflower is not a big deal.
  • Pour steaming cauliflower pieces into a food processor and allow it to sit until the steaming stops. Puree until smooth. Add butter, salt and lots of pepper.

  • Place potatoes in the microwave. Microwave on HIGH for 8 minutes or until the potatoes are done. Using oven mitts, carefully remove dish from microwave. NOTE: Due to steam building up, use oven mitts or tongs to remove plastic wrap from the dish.
  • Place the cooked potatoes into a large bowl. Use a potato masher or potato ricer to mash potatoes until there are no lumps. Do not use your electric mixer.
  • I personally use a potato ricer when making mashed potatoes. Using a potato ricer, you can make velvety smooth mashed potatoes right at home because potatoes come out fluffy without being gummy. Once you use the potato rice, you will never go back to the old traditional potato masher . If you do not have one and would like to purchase a potato ricer, just click on the green links.

  • Use a fork to pierce each potato about 10 times. Wrap each potato with a sheet of paper towel. Microwave on the baked potato setting until tender in the middle. Tip: On my microwave I usually have to do it twice on that setting. When you push the middle of the potato with your finger it should indent and feel soft; if it's tough it needs to be microwaved a little more.
