LETTUCE WRAP FISH TACOS

Make and share this Lettuce Wrap Fish Tacos recipe from Food.com.

Provided by Emily J.

Categories     Lunch/Snacks

Time 40m

Yield 4 Tacos, 2 serving(s)

Number Of Ingredients 20

2 -3 tilapia fillets
1 avocado, sliced
16 ounces canola oil
1 head iceberg lettuce
1 teaspoon Old Bay Seasoning
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon cayenne pepper
1/2 teaspoon garlic powder
3/4 cup wheat flour
3/4 cup panko breadcrumbs or 3/4 cup regular breadcrumbs
1 egg
1/2-1 cup water
1/2 cup roasted red pepper
1/4 cup Greek yogurt
2 garlic cloves
1/2 cup bunch fresh basil
1/2 cup parmesan cheese, and pecorino cheese blend
1/2 teaspoon pepper
1/4 cup olive oil

Steps:

  • For the batter - Combine all dry ingredients together in a bowl deep enough to cover the fish once placed in it. Whisk the egg in a separate bowl and add it to the dry ingredients. Add the water slowly, as needed, until the batter is loose enough to work with but still thick enough to cover the fish when coated. (It should cover a spoon when held in the air, but not much batter should be dripping off of the spoon.).
  • For frying the fish - add the canola oil to a deep pot (2-3 inches of oil) and set it to medium-high heat. Let the oil preheat for about 5 minutes. Slice each tilapia fillet in thirds (or whatever size you think makes sense for a taco) and drop it into the batter. Make sure the fish pieces are fully covered in batter. Place fish gently into the frying pot to avoid oil splatter; do not overcrowd the pot. After about 4 minutes or until golden brown, flip the fish. After golden brown on both sides and about 10 minutes in the pot, rest the fish on paper towel to dry. Turn the heat down to medium and repeat the batter/frying/drying process.
  • For the red pepper pesto - In a blender, add solid ingredients first: garlic cloves, roasted red peppers, fresh basil. Add wet ingredients next: greek yogurt, olive oil. Blend at medium speed to incorporate. Add dry ingredients last: pepper and cheese. Blend at medium speed until combined. Taste and season with more pepper as needed.
  • To assemble - layer two pieces of lettuce for each taco to help give it a solid base. Add 2-3 small pieces of fish per taco, and 3-4 slices of avocado per taco. Drizzle the red pepper pesto on top and hold each taco together with toothpicks for easy handling.

1 teaspoon red pepper flakes
1 tablespoon freshly ground pepper
2 tablespoons chopped fresh ginger

4 large, sturdy romaine-heart
leaves, cut into 4-inch lengths (to resemble taco shells)

Fish Tacos image

Categories     Fish     Olive     Tomato     Lime     Cod     Summer     Chill     Pan-Fry     Jalapeño     Cilantro     Tortillas     Gourmet

Yield Makes 12 tacos, serving 6

Number Of Ingredients 14

For the filling
1 1/2 pounds scrod fillets or other firm-fleshed white fish fillets, cooked, drained well, and flaked
1/2 cup Kalamata or other brine-cured black olives, pitted and chopped
1 cup seeded and chopped tomatoes (about 1/2 pound)
3 scallions, sliced thin
2 fresh or pickled jalapeño chilies, or to taste, seeded and minced (wear rubber gloves)
2 tablespoons fresh lime juice, or to taste
2 tablespoons white-wine vinegar, or to taste
3 tablespoons olive oil
3 tablespoons chopped fresh coriander if desired
vegetable oil for frying the tortillas
twelve 7-inch corn tortillas
3 cups shredded romaine or iceberg lettuce
1 1/2 cups coarsely grated radishes

Steps:

  • Make the filling:
  • In a bowl toss together the scrod, the olives, the tomatoes, the scallions, the chilies, the lime juice, the vinegar, the oil, the coriander, and salt and black pepper to taste and chill the filling, covered, for at least 1 hour or overnight.
  • In a skillet heat 1/2 inch of the oil over moderately high heat until it is hot but not smoking, in it fry the tortillas, 1 at a time, folding them almost in half with tongs to form taco shells, for 1 minute, or until they are crisp and golden, and transfer them as they are fried with the tongs to paper towels to drain. Divide the filling among the tacos and top it with the lettuce and the radishes.

  • First, prep the cauliflower rice. Add the cauliflower florets to a food processor and pulse until the cauliflower has broken down into a relatively uniform “rice” consistency. Preheat 2 teaspoons olive oil in a skillet over medium-low heat. Add cauliflower rice and cook for 4-5 minutes, stirring frequently. Transfer to a large bowl. Stir in cilantro and lime juice. Set aside.
  • Wipe out the skillet and add remaining olive oil, preheating to medium-high heat. Combine the smoked paprika, sea salt, black pepper, cayenne pepper, and cumin in a small bowl. Season the cod evenly with the spice mixture. Add the cod to the skillet and cook for about 3 minutes on each side, or until the fish is no longer translucent and can be easily flaked with a fork.
  • Meanwhile, create the chipotle lime dressing. Combine mayo, coconut milk, lime, garlic, apple cider vinegar, and chipotle powder in a small bowl and whisk until combined. Add more coconut milk, if desired, for a thinner consistency.
  • Next, make the pico de gallo. Add the tomatoes to a medium bowl. Add the red onion, jalapeno, cilantro, lime juice, and sea salt. Stir using a fork until all ingredients are mixed.

FISH TACOS: MUY DELICIOSO! - NINO SALVAGGIO
Fish tacos, on the other hand, are a more recent adaptation, at least from the perspective of what most would consider a modern taco–that is a thin tortilla wrap with shredded lettuce and sauce. That part, many argue, evolved about 30 to 40 years ago in the Baja peninsula, where Mexican food traditions meet fish on both east and west coasts of that slender slice.
