- Soak cod for at least 12 hours in cold water, changing water several times. Then cook fish for about 15 minutes in boiling water. Remove, let cool slightly, remove skin and bones and grind. Peel potatoes, rinse and cook 30 minutes in boiling salted water, drain, let dry and press through a ricer. Peel onion and chop finely. Add potatoes, ground cod, onion and freshly chopped parsley to a bowl and mix thoroughly.
- Stir in wine and season with salt, pepper and freshly grated nutmeg. Mix in eggs one at a time to create a moldable dough. If necessary, add flour. Using 2 tablespoons, scoop fritters from the fish mixture and fry until golden brown in hot oil. Remove with a slotted spoon, drain on paper towels and serve lukewarm.

- For the mashed potatoes and rutabaga: Rinse the rutabaga and potatoes, peel and dice. Peel 1 onion and the garlic. Dice the onion and mince the garlic. In a large saucepan, sauté the onion and garlic in the butter until translucent. Add the rutabaga, potatoes and 1 liter (approximately 8 cups) water and cook for 15 minutes.
- For the fish fritters: Soak the bread in warm water. Rinse the fish, pat dry and mince.
- Peel 1 onion and chop finely. Rinse the parsley, shake dry and chop finely. Squeeze the excess moisture from the bread and mix with the fish, onion, parsley, egg and lemon juice and season with salt and pepper.
- Shape into 8 patties and coat in breadcrumbs.
- Peel the remaining onion and cut into rings. Chop the bacon and fry until crispy. Add the onion and sauté until translucent, around 3 minutes. Keep warm.
- Melt the butter in a large frying pan and sauté the fritters over medium heat until golden brown on each side, around 5 minutes.
- Drain the rutabaga and potatoes, press through a potato ricer, mix in the cream and butter and season with nutmeg, salt and pepper.
- Serve the fish fritters on serving plates with the mashed potatoes and rutabaga and sautéed bacon and onion.

- Place potatoes, rutabagas and garlic in a Dutch oven; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, 15-20 minutes or until tender. , Drain; return to pan. Mash potatoes, gradually adding butter, salt, pepper and enough buttermilk to reach desired consistency.

- Place potatoes and rutabaga in medium saucepan. Add enough cold water to cover by 2 inches; sprinkle generously with salt. Boil until vegetables are tender, about 18 minutes. Drain; return vegetables to pot. Stir over medium heat 1 minute to dry out slightly. Add 4 tablespoons butter; mash to coarse puree. Stir in warm milk. Season to taste with salt and pepper.
- Sprinkle tilapia fillets with salt and pepper and 1 teaspoon paprika. Melt remaining 2 tablespoons butter large skillet over medium-high heat. Add fish and cook until just opaque in center, about 2 minutes per side.
- Divide potato-rutabaga mash among plates. Place fish alongside mash.
- Add shallots to skillet and sauté until beginning to soften, about 2 minutes. Add white wine and boil until reduced by about half, about 3 minutes. Add parsley, whipping cream, lemon peel, and 1/2 teaspoon paprika; stir until thickened to sauce consistency, about 1 minute. Season sauce to taste with salt and pepper. Spoon sauce over fish and potato-rutabaga mash.
MASHED RUTABAGA AND YUKON GOLD POTATOES
Steps:
- Toss the rutabagas into a large pot and cover generously with water. Season the water generously with salt.
- Bring the water to a boil, reduce to a simmer and simmer for 45 minutes. Toss in the potatoes and simmer until the potatoes are fork tender, another 20 minutes.
- Strain the rutabagas and potatoes from the water and pass through a food mill into a large bowl.
- In a small saucepot, bring the cream to a boil and turn off.
- Take 1 to 2 pats of butter and a splash of hot cream and whip them into the potato mixture. Continue this until all the butter and cream are incorporated. Taste and re-season with salt if needed. Serve immediately or keep warm in a low oven.
MASHED POTATOES AND RUTABAGA WITH LEMON

- Cover the rutabaga and potatoes with cold, generously salted water in a large pot and bring to a boil over medium-high heat. Reduce the heat and simmer until the vegetables are fork-tender, about 30 minutes.
- Drain the vegetables and return to the pot over low heat. Stir in 8 tablespoons butter. Mash with a potato masher, ricer or food mill until smooth, adding the warm half-and-half and 2 teaspoons salt. Keep warm while preparing breadcrumbs.
- Melt the remaining 4 tablespoons butter with the olive oil in a large skillet over medium-high heat. Add the lemon zest and scallions. Add 1/2 teaspoon salt and cook, stirring, until fragrant, about 2 minutes. Add the parsley and breadcrumbs and cook over medium-low heat, stirring until evenly toasted, 3 to 4 more minutes. (If the breadcrumbs toast too quickly, reduce the heat.)
- Transfer the mashed vegetables to a large shallow platter and sprinkle with the breadcrumbs just before serving. Garnish with scallion slices. (To curl them, julienne whole scallions and place in ice water.)
MASHED RUTABAGA (YELLOW TURNIP OR SWEDE) AND POTATO
This is from "The Frugal Gourmet Celebrates Christmas". I made the entire "Swedish Winter Feast" for a past Christmas and it was wonderful! I'll post the other recipes next. The whole meal is: Swedish Corned Pork Roast, Swedish Sauerkraut, Swedish Green Split Peas with Bacon, Mashed Rutabaga, Turnip, and Potato & Sweet and Hot Mustard, served with Rye Bread. I expected not to like anything and ended up LOVING everything!

- Place the rutabaga in a 6 quart pot with ample water and a pinch of salt. Boil for 15 minutes.
- Add the turnips and potatoes and boil 15 minutes more, until all the vegetables are tender.
- Drain well.
- Mash the vegetables with the remaining ingredients. (I do it right in the pot.) You can also use an immersion blender to puree them.

- Cook rutabagas in large pot of boiling salted water until very tender, about 20 minutes. Using slotted spoon, transfer rutabagas to strainer. Press gently to release any excess liquid.
- Add potatoes to same pot of boiling water; cook until tender, about 20 minutes. Drain well. Return potatoes and rutabagas to same pot. Add butter; mash well. Add 3/4 cup buttermilk; mash until smooth. Season with salt and pepper. (Can be made 6 hours ahead. Cover and chill. Stir over low heat to rewarm, adding more buttermilk by tablespoonfuls, if desired.)
- Transfer potatoes to bowl. Sprinkle with green onions and serve.

- Rinse the salted cod to remove salt, place in a bowl and cover with water. Place in the fridge. Drain and change the water every 4 hours for at least 24 hours before preparing. Taste to check the salt.*
