This baked fish is our absolute favorite baked white fish recipe. It's cooked in a delicious lemon garlic butter sauce until tender and flaky. It's a 20-minute dinner recipe you don't want to miss!

1-1/4 pounds fish fillets
1 teaspoon seasoned salt
Pepper to taste
Paprika, optional
3 tablespoons butter, melted

Steps:

  • Preheat oven to 400°. Place fish in a greased 11x7-in. baking dish. Sprinkle with seasoned salt, pepper and paprika if desired. Drizzle with butter. , Cover and bake until fish just begins to flake easily with a fork, 15-20 minutes.

Best baked cod recipe out there! Prepared Mediterranean style with a few spices and a mixture of lemon juice, olive oil and lots of garlic. Bakes in 15 mins!

1.5 lb Cod fillet pieces, (4-6 pieces)
1/4 cup chopped fresh parsley leaves
5 tbsp fresh lemon juice
5 tbsp extra virgin olive oil
2 tbsp melted butter
5 garlic cloves, (minced)
1/3 cup all-purpose flour
1 tsp ground coriander
3/4 tsp sweet Spanish paprika
3/4 tsp ground cumin
3/4 tsp salt
1/2 tsp black pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Mix together the lemon juice, olive oil, and melted butter in a shallow bowl (do not add the garlic yet). Set aside.
  • In another shallow bowl, mix the all-purpose flour, spices, salt and pepper. Set next to the lemon sauce.
  • Pat the fish dry. Dip the fish in the lemon sauce then dip it in the flour mixture. Shake off excess flour. Reserve the lemon sauce for later.
  • Heat 2 tbsp olive oil in a cast iron skillet (or an oven-safe pan) over medium-high heat (watch the oil to be sure it is shimmering but not smoking). Add the fish and sear on each side to give it some color, but do not fully cook (about 2 minutes on each side). Remove the skillet from heat.
  • To the remaining lemon sauce, add the minced garlic and mix. Drizzle all over the fish fillets.
  • Bake in the heated oven until the fish flakes easily with a fork (10 minutes should do it, but begin checking earlier). Remove from the heat and sprinkle chopped parsley. Serve immediately.

A traditional Balkan recipe. It's easier than it sounds, and quite tasty. The dough keeps the fish nice and juicy.

Number Of Ingredients 9

1 kg whole fish (choose a flavorful fish like trout)
salt and pepper
1 lemon, cut into wedges, to serve
225 g white flour, sifted
1 1/2 ml salt
7 g active dry yeast
1 egg
60 ml warm water
60 ml milk

Steps:

  • If needed, scale and gut fish. Cut off head behind gills/dorsal fins, and cut off the tail.
  • Wipe fish dry with a paper towel. Rub inside and out with salt and pepper and put in the refrigerator.
  • Put flour, salt, and yeast in a large mixing bowl and stir to combine.
  • Whisk egg, milk and water in a separate bowl. Add about half to the flour bowl and knead to make a soft dough. Add a little more liquid if needed,.
  • Move dough to a floured work surface and kneed until smooth. Cut into two pieces, one a little larger than the other.
  • Roll the smaller piece so that it is larger than the fish, with about 2 cm (1 1/2 in) border on all sides. Place on a greased baking sheet and put the fish on top, centered.
  • Roll the larger piece of dough until it is large enough to drape over the fish and still have 2 cm (1 1/2 in) of border. Don't put it on the fish yet.
  • Apply some warm water on the border area of the lower piece of dough. Place top dough on the fish and press the border areas together to form a seal.
  • Allow to rise for 30 minutes.
  • Brush the remaining egg/milk/water onto the dough to form a glaze. Bake 30 minutes at 180 C (350 F).

2 tablespoons olive oil
½ cup celery, sliced
½ cup leek, julienned
½ cup carrot, julienned
salt, to taste
white pepper, to taste
1 cup heavy cream
1 whole sea bas, cleaned
black pepper, to taste
2 tablespoons fresh tarragon, chopped
2 sheets puff pastry
2 eggs, beaten
fresh parsley, for serving
lemon wedge, for serving
1 cup white wine
lemon juice
4 shallots, minced
½ bunch fresh tarragon
1 cup heavy cream
18 tablespoons butter, sliced, 2 1/4 sticks
salt, to taste
pepper, to taste
chive, minced

Steps:

  • Heat the olive oil in a medium pan over medium heat.
  • Add the celery, leeks, carrots, and a pinch of salt and white pepper, and sauté until the vegetables start to cook down.
  • Add the cream and stir to coat the vegetables. Cook until the cream is thickened.
  • Remove the pan from the heat.
  • Line a baking sheet with parchment paper. Roll out both sheets of puff pastry until they are ⅓-inch thick. Transfer one sheet of puff pastry to the baking sheet.
  • Cut the sea bass along the back to remove the spine, then butterfly open. Season with salt, pepper, and the tarragon.
  • Scoop the cooked vegetables onto one side of the fish, then fold over the other fillet.
  • Transfer the fish to the center of the sheet of puff pastry.
  • Brush egg wash around the fish, then lay on the second sheet of puff pastry, pressing around the fish to seal. Use a paring knife to cut away the excess puff pastry in the shape of a fish.
  • Brush the top of the puff pastry with egg wash and use the leftover pastry scraps to decorate the fish with an eye and gills. Use the tip of the knife or the large opening of a pastry tip to draw scales on the body and tail.
  • Chill in the refrigerator for at least 30 minutes.
  • Make the Chive Butter Sauce: In a medium saucepan over medium heat, combine the wine, lemon juice, shallots, and tarragon. Reduce until only a ¼ cup (60 ml) of liquid remains. Add the cream and reduce until the mixture thickens slightly.
  • Slowly whisk in the butter, 1 piece at a time, until the sauce is glossy and thickened.
  • Remove the tarragon stem and season with salt and pepper. Stir in the chives.
  • Preheat the oven to 375℉ (190℃). When the oven is heated. Bake the fish for 15 to 20 minutes, or until the pastry is golden brown.
  • Transfer the fish to a platter and garnish with fresh parsley and lemon wedges.
  • To serve, cut the fish into individual portions and plate with a drizzle of Chive Butter Sauce.
  • Enjoy!
