Wanted something quick for dinner before work last night... so.... I cooked these up.... I even surprised myself... YUM!

Number Of Ingredients 7

4 - chicken thighs
8 - slices smoked bacon
2 tablespoon(s) tarragon, dried
pinch(es) salt
pinch(es) black pepper
pinch(es) garlic salt
teaspoon(s) paprika

Steps:

  • Sprinkle spices on chicken thighs. Wrap 2 slices of the smoky bacon around the chicken thighs
  • Place in oven pan cover with foil
  • "Cover with foil and cook 1 hour at 350 degrees, and then uncover and raise heat to 400 degrees and cook an additional 25 minutes or until bacon is brown." NOTE: Take the time to "drain the fat". Enjoy

Number Of Ingredients 12

1/2 lb angel hair pasta
1 stick butter - browned
4 to 6 large chicken breast halves, skinless and boneless
1/4 c parmesan cheese - grated fine
1 tsp course sea salt or to taste
1 Tbsp white pepper or to taste
1 pinch cayenne pepper or to taste
1 c panko bread crumbs
1 tsp fennel seeds - crushed
3 Tbsp olive oil - extra virgin
3/4 medium red onion - diced fine
1 c chicken stock - homemade or your favorite brand

Steps:

  • 1. Place Angel Hair Pasta in a large stock pot and cook according to package directions.
  • 2. Place chicken breasts in a large skillet with the olive oil and sauté slowly for 20 to 30 minutes or till juices run clear. While warm, shred the chicken and set aside. Brown the butter low and slow and set aside.
  • 3. When pasta is done cooking, combine the browned butter, shredded chicken, parmesan, salt, pepper, cayenne pepper, fennel seeds, onion, chicken stock and fold all together.
  • 4. Place the mixture in a large casserole dish, sprinkle bread crumbs over the top, cover with foil and place in oven. Last 10 minutes, remove foil and allow bread crumbs to brown. Cook at 200 degrees for 45 minutes
  • 5. Enjoy !!!

These Bacon Wrapped Chicken Thighs are guaranteed to get rave reviews and recipe requests. They're juicy on the inside and wrapped in tasty brown sugar-coated bacon on the outside!

6 boneless skinless chicken thighs
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon garlic powder
¼ teaspoon dried rosemary
12 slices bacon (I used Oscar Mayer Naturally Hardwood Smoked Bacon)
1 Tablespoon vegetable oil
¼ cup packed light brown sugar

Steps:

  • Move the oven rack 6 inches from the broiler element and heat the oven to 400 degrees F.
  • In a small bowl, combine the salt, pepper, garlic powder, and rosemary.
  • Sprinkle the chicken thighs all over with the seasoning blend.
  • Wrap each chicken thigh with 2 pieces of bacon, ending with the bacon seams on the undersides of the chicken thighs.
  • In a 12-inch skillet over medium-high heat, heat the oil until simmering.
  • Add the chicken thighs, bacon seam side down, and cook, without moving the chicken, until the bacon is golden about 2-3 minutes. Don't flip the chicken over.
  • Sprinkle the tops of the chicken evenly with brown sugar.
  • Move the skillet to the preheated oven and roast the chicken until the chicken thighs registered 165 degrees on an instant-read thermometer, about 15-20 minutes longer.
  • Remove the skillet from the oven and heat the broiler to HIGH.
  • Put the skillet back in the oven and broil until the bacon is well browned about 2-3 minutes.
  • Let the chicken rest for 5 minutes. Serve.

I came up with the idea of this recipe when I saw a video, I said I bet I can bring a new lasagna recipe to the dinner table. This being the first recipe that I have posted in quite some time, My wish is that You all will enjoy my different take on a great classic

3 stick salted butter browned
2 box barilla thin spaghetti
2 pkg ricotta cheese
3 lb bbq smoked chicken
2 bunch chopped fresh chives
6 clove minced garlic
1 Tbsp fresh ground black pepper
3 Tbsp parmesan cheese
8 Tbsp favorite bbq seasoning blend .... ( see my blend for ideas )
1 tsp smoked paprika
sea salt fresh ground and black pepper fresh ground to taste
1 1/2 c sliced cremini mushrooms
1 c fresh chopped parsley
8 Tbsp panko bread crumbs
2 large eggs
1/2 lb chopped spinage

Steps:

  • 1. In a large pot boil water seasoning with ample salt or to taste and cook spaghetti till aldente' DO NOT RINSE, take from boiling water and lay thin flat layers and sprinkle with parmesan cheese and place in Fridge and let cool for 30 minutes.
  • 2. Cook mushrooms in brown butter till almost done, remove from heat and set aside... Place parsley, chives, and garlic in with the mushrooms.
  • 3. Take Ricotta Cheese and stir in the eggs, and spinage till well combined and set aside.
  • 4. Take the Smoked Chicken and shred and set aside.

  • 6. Assembly of the lasagna in layers... First, brush your pan with the brown butter, sprinkle some parmesan cheese over the browned butter The second layer, take one of the thin layers of pasta and lay in the bottom of the pan, brush with brown butter The third layer is the mushroom mixture with more parmesan cheese sprinkled and brown butter brushed on. next spread some smoked chiken over and brush brown butter again. Next layer, spread a thin layer of the ricotta cheese and repeat the layers starting with brown butter and another layer of the thin spaghetti pasta repeat till all layers are complete and top with the bread crimbs
  • 7. Place covered lasagna in a 350-degree oven for 35 minutes and then remove cover and bake for an additional 10 minutes or until the bread crumbs are golden brown
  • 8. Sever with crusty bread and your choice of beverage.
