FIRESIDE BEEF STEW
Our rich, comforting beef stew chock-full of root vegetables is just the thing to get you through winter. The one-pot wonder can be made two to three days in advance, then reheated and finished with the parsley-horseradish topping and the sour cream right before serving.

Steps:
- Heat 2 tablespoons oil in a 5-quart Dutch oven over medium-high. Generously season beef with salt and pepper. Working in two batches, sear beef, flipping once, until deep golden brown, 3 to 4 minutes per side. Transfer to a bowl.
- Remove fat from Dutch oven; add remaining 1 tablespoon oil. Stir in onion, celery, and garlic; cook, stirring occasionally, until softened, 6 to 8 minutes. Add tomato paste and flour and cook, stirring, 1 minute. Add Worcestershire and wine and cook, scraping up browned bits from bottom, 1 minute. Add broth and bay leaves.
- Cut beef into 1 1/2-inch chunks; return to Dutch oven along with any juices. Bring to a boil, then partially cover and reduce heat to a simmer. Cook until meat is tender, about 1 1/2 hours. Add potatoes, carrots, and turnip, re-cover partially, and continue to cook until vegetables are tender, about 1 hour, 15 minutes. Season with salt and pepper.
- Combine parsley and horseradish in a small bowl. Serve stew with dollops of sour cream, topped with parsley-horseradish mixture.

- Combine the Essence, flour, and beef cubes in a bowl. Toss to coat well. Add the oil to a pressure cooker and heat over medium-high heat until hot. Add the meat and cook, turning occasionally, until evenly brown, about 5 minutes. Transfer the meat to a plate and set aside. Add the onion, celery, salt, pepper, and mushrooms and cook, stirring, until the vegetables are wilted, about 3 minutes. Add the browned meat, garlic, bay leaf, thyme, rosemary, red wine, and broth. Cover the pressure cooker and cook for 20 minutes, turning down heat once a steady stream of steam is emitted from the valve.
- Add the parsnips, turnips, and collard greens, stir well, and replace lid. Cook an additional 20 minutes. Garnish with chopped parsley and serve over rice.
- Combine all ingredients thoroughly.

BRUNSWICK STEW
This is an amalgam of many recipes for Brunswick stew dating back to the 1870s. Generally speaking this is a Virginia version, not a Georgia version. My recipe is "deluxe" in that it has all the optional ingredients, but you can use whatever you have on hand, skipping what you don't. Meats are variable, too.

Steps:
- Pour the broth along with another quart of water into a large, lidded pot such as a Dutch oven. Bring this to a boil, and add the onion and salt to taste. Add the squirrel or other meat and skim any foam that forms. Simmer gently until the meat is falling off the bone, anywhere from 1 to 3 hours.
- Fish out all the meats and remove the meat from the bones; this makes the stew a lot easier to eat. Discard the bones.
- Add all the tomatoes and the potatoes and simmer 30 minutes.
- Add the beans, corn and okra and simmer another 30 minutes.
- Stir in the remaining ingredients until well combined. Tinker with seasonings and serve. Cornbread is a nice accompaniment.

Steps:
- 1. Preheat oven to 375 degrees.
- 2. Cut steak into serving sized pieces and dredge in flour. There's no need to brown, according to the recipe, but I did.
- 3. Put floured steak in a large pot with a lid. (I use a large cast iron Dutch oven with a top.) Mix other ingredients in a bowl.
- 4. Pour tomato mixture over steak, cover and bake about 1 1/2 hours or until tender.
- 5. It's really good with biscuits or Texas Toast.
