Ever crave those restaurant style chicken fingers? Why pay restaurant prices for one serving when you could pay the same price for an entire meal. You'll have to vary the spices to your taste. The spices listed is how we makes these at home. Serve with buffalo wing sauce, honey mustard or BBQ sauce for dipping.

1 lb chicken tenders
1 cup all-purpose flour
3 eggs
1 tablespoon season salt (or to taste)
1/2 tablespoon red pepper flakes (or to taste)
1/2 tablespoon black pepper (or to taste)
1/4 cup milk
2 cups canola oil (or enough for pan frying)

Steps:

  • Heat oil in frying pan.
  • In a shallow dish, combine flour, seasoned salt, red pepper flakes and black pepper. Mix with fork until well blended.
  • In a separate shallow dish, "scramble" the eggs with the milk.
  • Coat each tender with flour mixture, then egg mixture, then another coat of flour mixture.
  • Fry until golden brown, about 5 - 7 minutes per tender. Can cook in batches.

GUILTLESS OVEN-FRIED CHICKEN FINGERS



Guiltless Oven-Fried Chicken Fingers image

1 cup low-fat mayonnaise
1 tablespoon curry paste, or more
Kosher salt
Freshly ground black pepper
4 skinless, boneless chicken breasts
2 cups panko (Japanese) bread crumbs

Steps:

  • Heat the oven to 350 degrees F.
  • In a large bowl, combine the mayonnaise and curry paste, to taste. Thin this with a little water, 1 tablespoon at a time, until you get the consistency of heavy cream, and season with salt and pepper.
  • Cut the chicken breasts into thick strips. Drop the strips into the bowl and coat them well with the curry mayonnaise. Cover and refrigerate for at least 5 minutes or up to 1 hour.
  • Pour the bread crumbs onto a plate and toss the chicken strips well to completely cover them. Put them onto a nonstick baking sheet and into the oven. Cook for 15 to 20 minutes, or until the chicken is browned and cooked through.

BUTTERMILK FRIED CHICKEN FINGERS

6 boneless skinless chicken breasts
Buttermilk
Flour, for dredging
Salt and pepper
Vegetable oil

Steps:

  • Flatten chicken breasts and slice into large strips. Place in a large bowl and cover completely with buttermilk. Refrigerate 4 to 6 hours.
  • Fill a pie plate or large shallow bowl with flour, season with salt and pepper. Heat two skillets with about a 1/2-inch of oil. While the oil is heating, coats the chicken fingers with the seasoned flour.
  • Fry chicken in the oil until done (oil should not cover the top of the breasts), about 10 minutes per batch.

This is a great, healthier alternative to the traditional deep fried chicken fingers. Kids love them!

2 cups Ritz cracker crumbs (about 40 crackers)
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup reduced-fat mayonnaise
1 tablespoon milk
1 1/2 lbs chicken breast tenders
cooking spray

Steps:

  • Preheat oven to 450.
  • Place crackers, garlic powder, salt and pepper in a large zip top plastic bag. Using a rolling pin, gently crush the crackers to make fine crumbs and set aside.
  • Mix mayonnaise and milk in a mixing bowl. Add the chicken tenders to the bowl and mix until tenders are evenly coated.
  • Spray a baking sheet with cooking spray. Add about 1/4 of the tenders at a time to the bag of crumbs and shake to coat. Remove the tenders from the bag and place on the baking sheet. Repeat until all of the tenders are coated with crumbs.
  • Bake chicken until it is lightly browned and cooked through, about 15 - 20 minutes. Using spatula, remove tenders from sheet. Serve at once, either alone or with dipping sauce (such as BBQ, honey mustard, ranch dressing, etc.).

1 cup dry bread crumbs
2 tablespoons grated Parmesan cheese
1 teaspoon salt

1-3/4 pounds boneless skinless chicken breasts, cut into strips
Oil for deep-fat frying

Steps:

  • Combine the first 6 ingredients in a shallow bowl. In a second shallow bowl, whisk egg and buttermilk. Dip a few pieces of chicken at a time in buttermilk mixture, then in flour mixture; toss to coat., In an deep cast-iron or electric skillet, heat oil to 375°. Believe it or not, the best beer batter isn't made with beer! It's actually done with sparkling apple cider, which produces a light, beautifully crispy, and very flavorful coating. Not to mention it's super easy.

4 (8 ounce) skinless, boneless chicken breast halves
1 teaspoon kosher salt
¼ teaspoon freshly ground black pepper
1 pinch cayenne pepper
2 tablespoons all-purpose flour
1 cup self-rising flour
1 ¼ cups sparkling apple cider
1 quart canola oil for frying
⅓ cup Dijon mustard
2 tablespoons seasoned rice vinegar
1 teaspoon hot sauce
1 pinch white sugar, or to taste

Steps:

  • Cut each chicken breast into 6 finger-sized strips, and transfer into a mixing bowl.
  • Season with kosher salt, black pepper, and cayenne and toss until evenly coated. Sprinkle the all-purpose flour over top and shake the bowl to coat the strips. Toss until all the surfaces are completely coated, and then transfer onto a rack or plate. Place in the refrigerator, uncovered, for at least 10 minutes, or until ready to fry.
  • Meanwhile, whisk self-rising flour and sparkling apple cider together in a mixing bowl to form a thin batter. Batter should be somewhere between a thin pancake batter and a crepe batter, but still thick enough to coat the back of a spoon. Place in the refrigerator to rest for 5 to 10 minutes before using.
  • Mix Dijon mustard, vinegar, hot sauce, and sugar together for dipping sauce in a bowl.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Dip each chicken finger into the batter to coat. Deep-fry in batches in the hot oil until golden brown, crispy, and no longer pink in the centers, 3 to 4 1/2 minutes. Drain on paper towels and serve immediately with dipping sauce.

These are the best homemade chicken fingers I've ever tasted. Serve with your favorite dipping sauce; I like honey mustard. Toss any leftover chicken fingers with salad greens for a nice lunch. The Nutrition Facts show a high calorie count because the whole quart of oil for frying is being included. This recipe comes from Pam Anderson.

4 teaspoons honey
salt
1/2 teaspoon fresh ground black pepper
flavoring, of choice (see below)
1 1/3 cups buttermilk
2 1/2 lbs boneless skinless chicken breast halves, each cut crosswise into 8 to 9 strips (about 6 large)
1 quart peanut oil or 1 quart corn oil
3 cups all-purpose flour
1 teaspoon garlic powder
1 tablespoon Old Bay Seasoning
1 tablespoon curry powder
2 teaspoons ground cumin
2 teaspoons paprika
1 teaspoon garlic powder

Steps:

  • In a large bowl or shallow baking dish, mix the honey, 1 teaspoon salt, pepper, and flavoring of choice into the buttermilk. Add the chicken and turn to coat.
  • Preheat oven to 200 degrees. Heat the oil in a large (12-inch) skillet over high heat until it reaches 375 degrees.
  • Meanwhile, mix the flour and 1 tablespoon salt in a doubled paper bag (I've also used a large ziploc bag). Drop about 8 chicken strips into the flour, close the bag, and shake to coat the chicken. Place the chicken pieces on a wire rack set over a baking sheet (or newspaper for easy cleanup). Repeat with the remaining chicken.
  • Working in 4 batches, drop the chicken pieces into the hot oil and fry until golden brown, turning if necessary to ensure even browning, about 3 minutes. Transfer to another wire rack set over a baking sheet to drain. Keep first batches warm in the oven while the rest of the chicken cooks, making sure the oil comes back up to 375 degrees after each batch.

There was a local favorite restaurant in Grand Rapids, Michigan that served up fantastic fried chicken. Unfortunately, the restaurant closed some years back and the recipe wasn't posted. Bea Marston of Grand Rapids, provided this recipe on MLIVE.

2 cups all-purpose flour
1 1/2 teaspoons pepper
1 teaspoon salt
1 teaspoon thyme
1 cup water
1 egg
1/2 cup vegetable oil (for frying)
1 whole chicken, cut up into pieces
1/2 cup all-purpose flour
chicken dripping
1 cup milk
1/2 teaspoon pepper
1/2 teaspoon salt

Steps:

  • In bowl, stir together flour, pepper, salt and thyme; set aside. In a small bowl, whisk together water and egg; set aside. Place enough vegetable oil in a heavy frying pan to measure 1 inch. Heat to 350 degrees.
  • One at a time, dip chicken pieces into egg mixture, then into flour mixture. Carefully place in oil, do not crowd pieces; cook for 15 minutes. Turn with tongs and cook for 10 minutes more. For larger pieces, cook an additional 5 minutes. Place chicken on paper towel to drain. Discard 90 percent of oil in frying pan. Save remaining 10 percent of pan drippings for gravy.
  • For gravy, sprinkle flour into pan drippings. Cook on medium-high heat till light brown. Add milk, pepper and salt. With a wooden spoon, scrape up the browned bits on the bottom of the pan. Use whisk to stir until smooth.
  • Gravy will thicken as it cooks (add a little milk if too thick). Serve hot with fried chicken.
