3 Tbsp vegetable oil
12 cloves garlic, minced
4 c cooked rice, cooled and dry
¼ tsp salt
Dash fresh ground pepper
1 scallion, thinly sliced (for garnish)
4 eggs (optional, for serving)

Steps:

  • In a large wok or skillet, heat the oil over medium high heat. Reduce the heat to medium and add the minced garlic. Stir fry the garlic for 2-3 minutes, until it turns a light golden color. Carefully remove the garlic from the pan, leaving the garlic-infused oil behind. Drain the fried garlic on paper towels until cool.
  • Add the cooked rice to the garlic oil in the wok, stirring to coat all the grains with oil. Spread the rice out in the wok, covering as much surface area of the hot pan as possible. Let the rice cook, undisturbed, for 3-5 min. Stir the rice well, then spread it out again and cook, undisturbed for 3-5 min more. Continue this process until the rice is cooked to your liking.
  • Once the rice is golden and starting to get crispy, return the fried garlic to the pan (saving some for garnish, if desired).
  • Season the rice with salt and pepper and transfer it to a serving dish.
  • Garnish with extra fried garlic and sliced scallions.
  • If desired, serve the rice topped with fried eggs.

1 onion (minced)
1 small cabbage (shredded)
3 carrots (peeled, julienned)
2 garlic cloves (minced)
1 lb leftover roast pork (chopped)
2 cups cold cooked rice
1 cup frozen peas (thawed)
1/2 cup soy sauce

Steps:

  • In a wok fry bacon until crisp. Drain well.
  • Re-heat wok.
  • Add the pepper, onion, cabbage, carrots and garlic. Stir-fry 3 minutes.
  • Add pork. Cook 1 minute.
  • Add rice. Cook 1 minute.
  • stir in peas and soy sauce. Cook 30 seconds.

Classic Filipino garlic fried rice and chicken adobo make a perfect pair. The fried rice is a great accompaniment to many other dishes, including eggs for breakfast. The charred eggplant is a riff on ensaladang talong (roasted eggplant salad).

2 teaspoons whole black peppercorns
5 tablespoons canola oil
1 pound bone-in, skin-on chicken thighs and drumsticks
Kosher salt
1 yellow onion, sliced
3/4 cup soy sauce
3/4 cup white vinegar
2 tablespoons palm sugar
8 cloves garlic, smashed and minced
4 fresh bay leaves
2 scallions, sliced on a bias
1/2 cup white vinegar
2 tablespoons sugar
1 fresh bay leaf
2 Japanese eggplants, halved lengthwise and flesh scored
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
1/2 yellow onion, diced
2 Roma tomatoes, diced
1/4 cup canola oil
2 tablespoons unsalted butter
4 cloves garlic, minced
1/4 teaspoon annatto powder
1 1/2 cups cooked jasmine rice, preferably day-old rice

Steps:

  • For the chicken: Heat a large, high-sided pan over medium-high heat. Add the black peppercorns and toast for 2 to 3 minutes until fragrant, shaking the pan to evenly distribute. Transfer to a spice grinder and grind. Add 3 tablespoons of the canola oil to the pan and heat over medium-high heat until shimmering. Pat the chicken dry and season liberally with kosher salt. Reduce the heat to medium. Place the chicken into the pan skin-side down and sear without moving the chicken until the skin pulls away from the bottom of the pan and begins to brown, 7 to 8 minutes. Flip the chicken and cook until browned on the other side, another 5 minutes. Remove the chicken from the pan. Discard the excess cooking oil and add the remaining 2 tablespoons of canola oil to the pan.
  • Add the onions and cook, stirring occasionally, until translucent, 5 minutes. Add the soy sauce, vinegar, palm sugar, garlic, bay leaves, ground black pepper and 1/2 cup water. Bring to a boil, then reduce to a simmer and add the chicken back to the pan. Cover and cook until an instant-read thermometer registers 160 degrees F when inserted into the center of the chicken, 15 minutes. Remove the chicken and allow to rest. Continue to cook the sauce, uncovered, until thickened and reduced, 5 minutes.
  • For the charred eggplant: Add the white vinegar, sugar and bay leaf to a small saucepan. Heat over medium high and bring to a simmer for 2 minutes. Stir to dissolve the sugar, then turn off the heat and set aside.
  • Preheat a grill pan to high heat. Brush the inside of the Japanese eggplants with olive oil and sprinkle with kosher salt and black pepper. Place the eggplants on the grill pan, flesh-side down, and grill until slightly charred and there are grill marks on the underside, 3 to 4 minutes. Flip, then grill another 2 to 3 minutes. Transfer the eggplants to a cutting board and slice on the bias into 2-inch pieces. Add the eggplant to a bowl with the onions and tomatoes. Pour the pickling liquid over the vegetables and toss to combine.
  • For the fried rice: Heat the canola oil in a large saute pan over medium-high heat. Add the butter and swirl the pan to melt. Add the garlic and annatto powder and cook, stirring frequently, until fragrant and the garlic starts to lightly brown, 2 minutes. Add the cooked rice and toss to combine, making sure the rice is fully coated with the garlic and annatto mixture. Cook the rice, stirring occasionally, until it starts to get crispy, 5 minutes.
  • To serve, place a chicken leg and thigh onto each plate, spoon the sauce around the chicken and garnish with the sliced scallions. Serve with the fried rice and charred pickled eggplant. Drizzle the eggplant with a little olive oil.

The final result is addictive and goes with everything on this menu, so I like to make 2 batches--one plain and one with the optional turmeric--which adds a little extra flavor and a pretty orange color.

2 cups uncooked jasmine rice
1 ½ cups water
½ (15 ounce) can unsweetened coconut cream
2 teaspoons ground turmeric
¼ teaspoon salt
3 tablespoons coconut oil
¼ cup finely chopped garlic
2 tablespoons fish sauce

Steps:

  • Put rice in a large bowl with enough water to cover by a few inches. Swirl with your fingers, then drain. Repeat until the water runs clear, about 3 times.
  • Stir together rice, 1 1/2 cups water, coconut cream, turmeric, and salt in a saucepan. Bring to a boil; reduce heat and simmer, covered, until rice is tender and liquid is absorbed, about 20 minutes. Chill, uncovered, 2 to 4 hours or overnight.
  • Heat coconut oil in a 12-inch skillet or wok over high heat. Add garlic; cook until it just begins to brown, about 1 minute. Add rice and spread in an even layer. Cook, without stirring, until lightly browned and crisp on the bottom, about 4 minutes. Add fish sauce. Cook, stirring, until fully combined and heated through, about 2 minutes.

3 cups left-over cooked rice
2 Chinese sausage, sliced
1 tablespoon garlic, chopped
1 medium onion, chopped
1 tablespoon soy sauce
1/4 cup chopped ham
1/4 cup chopped shrimp
3 eggs, beaten and lightly seasoned with
salt and pepper
2 tablespoons oil
green onion, finely chopped

Steps:

  • In a hot pan, pour the oil, and make an omelet. Slice in thin shreds then set aside.
  • In the same pan, fry Chinese sausages until crisp. Reduce the oil in half (or less if you prefer).
  • Saute garlic, onion, and rice. Add the rest of the ingredients and stir-fry for 15-20 minutes until rice is cooked and evenly coated with soy sauce.
  • Garnish with scrambled egg shreds and green onions.
