Sweet blackberries make a delicious sauce for a classic filet.

Number Of Ingredients 8

1 cup low-sodium beef broth
1/2 cup dry red wine
1/4 cup finely chopped shallots
2 tablespoon olive oil
4 (6 oz) filet mignon steaks
3 tablespoons blackberry preserves
1 stick plus 2 tablespoons unsalted butter
1/4 cup plus more for garnish fresh blackberries

Steps:

  • Pat the steaks dry with paper towels and season generously with salt and pepper. In a heavy skillet, heat the oil over medium-high heat until almost smoking. Sear the steaks in the hot oil for 3 minutes per side for medium-rare. Transfer the steaks to a serving plate, tent with foil, and let stand.
  • Using the same skillet, saute the shallots for 1 minute. Add the red wine, scraping up any browned bits on the bottom of the pan. Let wine boil until reduced by half. Add broth and blackberry preserves, return to a boil and reduce by half. (The sauce should coat the back of a spoon.) Whisk in the 2 tablespoons butter. Season sauce with additional salt and pepper, to taste.
  • To serve, drizzle the sauce over the steaks. Place a pat of compound butter and scatter a few blackberries on the plate.
  • Compound Butter:
  • In a bowl, combine 1 stick butter and blackberries and mix well.
  • Place on plastic wrap to mold into a log shape. Wrap and refrigerate until ready to serve.

1 1/16 ounces grillmates marinade
1 talespoon herbes de provence
1/3 cup cognac
3 tablespoons blackberry vinegar
3 tablespoons olive oil
1 cup blackberry
3 tablespoons butter

Steps:

  • in a ziploc bag add all ingrients except butter.
  • marinate 6-8 hours.
  • remove bag 30 minutes before cooking.
  • melt butter in heavy bottom skillet.
  • sear steaks until desired doneness.
  • 5 minutes each side for rare, 10 minutes each side for well done.

4 filet mignon steaks
2 tablespoons olive oil
1 garlic clove, minced
kosher salt
pepper
1/2 cup dry red wine
1 cup beef broth
3 tablespoons blackberry preserves
1 chipotle pepper, minced
2 tablespoons butter

Steps:

  • Season steaks with salt, pepper and garlic.
  • Heat oil over medium-high heat until almost smoking.
  • Sear the steaks in the hot oil for 3 minutes per side for medium-rare.

4 (8-ounce) filet mignon medallions
1 (1.06-ounce) packet herb marinade mix (recommended: McCormick Grill Mates)
1 tablespoon herbs de Provence
1/3 cup cognac
3 tablespoons black and raspberry vinegar
3 tablespoons olive oil
1 cup frozen blackberries, thawed
2 tablespoons butter
Fresh blackberries, for garnish

Steps:

  • In large zip-top bag, combine all ingredients, except butter and fresh blackberries. Squeeze out air and seal bag. Massage bag until well combined and marinade mix is dissolved. Marinate in refrigerator 6 to 8 hours. Remove filets from refrigerator 30 minutes before cooking.
  • Melt butter in heavy-bottomed, or cast iron, skillet over medium-high heat.
  • Remove steaks from marinade and sear for 3 to 5 minutes per side.
  • Serve hot, topped with pan juices and fresh blackberry garnish.

A quick pan sauce that comes together while the meat rests is the perfect finishing touch.

Two 7- to 8-ounce filets mignons, such as USDA Prime Beef Filet Mignon
Kosher salt and freshly ground black pepper
1 tablespoon vegetable oil
1 stick (8 tablespoons) unsalted butter, cut into tablespoon pieces
4 sprigs thyme
3 cloves garlic, smashed
1 shallot, finely diced
1/4 cup brandy
3/4 cup light red wine, such as Pinot Noir
1/4 cup low-sodium beef broth
1 tablespoon chopped chives

Steps:

  • Pat the steaks dry, then sprinkle with 2 teaspoons salt and 1 teaspoon pepper. Firmly press the seasoning into the meat.
  • Heat the oil in a medium stainless steel skillet over medium-high heat until shimmering but not smoking, about 2 minutes. Add the steaks and cook until a golden crust forms, about 2 minutes. Flip with tongs and cook until golden on the second side, about 2 minutes (see Cook's Note). Flip again and cook for 2 minutes. Flip once more and add 4 tablespoons of the butter and the thyme and garlic. Let cook, undisturbed, until the butter stops foaming, 1 to 2 minutes. Tilt the pan slightly so the butter pools and spoon it over the steaks. Continue to cook the steaks, basting constantly, until they are medium rare and an instant-read thermometer inserted in the center registers 118 degrees F, 3 to 4 minutes.
  • Transfer the steaks to a plate to rest. Discard the garlic, thyme and fat from the skillet, but do not wipe out the browned bits.
  • Place the same skillet over medium heat and add the shallots and 1 tablespoon butter. Cook, scraping up the browned bits with a wooden spoon, until softened, about 2 minutes. Remove the skillet from the heat and add the brandy. Return the skillet to the heat and continue to cook over medium until the skillet is dry, being careful as it may ignite, about 2 minutes. Add the wine and cook until the liquid reduces by half, about 3 minutes. Add the beef stock and bring to a boil. Whisk in the remaining 3 tablespoons butter, 1 tablespoon at a time. Add salt and pepper to taste.
  • To serve, slice the steak, spoon the sauce over the top and sprinkle with the chives.
