HEALTHY BLACK BEAN SKILLET RECIPE
EASY cheesy black bean skillet dinner is ready in less than 30 min! This black bean southwestern casserole is hearty enough for meat eaters.

- 1. Prepare ingredients: Dice onion. Dice bell pepper. Mince garlic.
- 2. Heat oil in a large skillet over medium heat. Add onions and pepper, and cook, stirring occasionally, for about 3-4 minutes.
- 3. Add garlic, both canned beans (DON'T RINSE!), corn, and enchilada sauce to skillet. Bring to a boil, then lower heat to medium.
- 4. Stirring frequently, let bean mixture thicken, and cook for about 10 minutes.
- 5. Meanwhile, prep any toppings and/or bell peppers for scooping.
- 6. Stir cheese into bean mixture and serve with tortilla chips, bell peppers, and desired toppings.

- In a large non stick skillet sauté onions until they soften. Add peppers and seasonings and sauté until peppers are almost tender. Add tomatoes, beans, corn and lime juice. Cover and let simmer until tomatoes are soft but not mushy.
- Serve with tortilla chips and sour cream.
- As an alternative, once the peppers are tender transfer the mixture to an oven-safe dish, mix in the remaining ingredients, cover with shredded cheese and bake until the cheese melts.

I made this up as something to go with my chicken mole recipe, since I wasn't really in the mood for something like Spanish rice or refried beans. I think it makes a great side dish for Mexican food! This also would make a great salsa or dip.

- Place the beans in a large bowl and cover them with cold water. Set them aside and let them soak for 5 to 6 hours or overnight.
- Drain and rinse the beans, and then place them in a large pot. Add the garlic, green, orange and red bell peppers and the onions. Cover them with about an inch of water, and then add the ham hock or bacon. Next add the chili powder, cumin, salt and pepper. Stir to combine, and then bring the mixture to a boil. Reduce the heat to low and simmer the beans until tender, about 2 hours. Check the liquid level about halfway through the cooking process; if you'd prefer the beans to be less soupy, you can ladle off about a third of the cooking liquid.
