HOW TO MAKE POLENTA FRIES
They are crispy on the outside, yet fluffy and creamy on the inside and a perfect appetizer, snack or side dish for any meal.

Steps:
- Preheat air fryer to 350F / 180C.
- Cut polenta into fries.
- Place Polenta Fries in a single layer inside the air fryer basket and lightly spray with cooking spray.
- Cook for 14-16 minutes, turning half way through until golden and crispy.
- Remove from the air fryer and serve.
- Heat up a 2 tbsp of oil into a heavy based frying pan. Add some of the polenta chips to the pan and fry on all sides until they are golden brown.

- Preheat the oven to 400F /200C / gas 6.

- Put the Instant Pot Air Fryer Basket In the Instant Pot.
- Place Polenta Fries in a single layer inside the air fryer basket. (you will need to cook these in batches)
- Lock the Air Fryer Lid, Select air fryer function, set to 380F / 190C for 15 minutes, and press start.
- Let cook and halfway, then open the lid and carefully flip them and check you get an idea of how much more cook time is needed (plan for around 12 or 13 minutes).
- Cook for another few minutes and test again and continue till done at which point they should be golden and cooked through.

- Bring 7 cups water to a simmer in a large saucepan. Combine 4 cups of the hot water and the milk in a heatproof bowl (the bowl should fit over the saucepan). Gradually whisk in the polenta and 2 teaspoons salt. Cover the bowl tightly with foil and set over the simmering water; do not let the bowl touch the water. Cook until very thick, 20 minutes. Meanwhile, brush a 9-inch square baking dish with olive oil.
- Stir the cheese and butter into the polenta. Spread in the prepared dish and refrigerate until set, at least 2 hours or overnight.
- Preheat the oven to 450 degrees F. Slice the chilled polenta into eighteen 4 1/2-by-1-inch sticks and transfer to a baking sheet lined with parchment paper. Brush the sticks with olive oil and sprinkle with salt. Bake until golden, 30 to 35 minutes, turning halfway through.

BAKED POLENTA FRIES
Satisfies the craving for fries without actually having to fry anything. These are so easy to make, and are great for making in advance. You can make and cut the polenta in advance, and it's only a 20 minute trip in the oven away from a great snack. This would also work for making squares or circles of polenta to use as a base for an amuse or hors d'oeuvre. Feel free to play around with the liquid- you could try with all water, all chicken broth, add some milk, etc.You could also add cheese and try adding herbs or other flavorings. This is a really easy recipe to customize. And by all means, if you have the time to use real polenta, not instant, be my guest. For this application I have not found that it makes enough of a difference to warrant the effort.

- Follow the directions on your box of polenta to prepare it. They should look something like this:.
- Bring the water and chicken broth to a boil. Reduce to a simmer, add the salt, and slowly stream in the instant polenta. Stir constantly for 3-5 minutes (depending on the polenta).
- Now transfer the polenta into a casserole or baking dish and spread to evenly coat (you should have a layer at least 1/2 " thick, but if it's thicker don't worry, you can always just cut the pieces in half later to thin them down). You can grease the dish if you want, but I never have a problem with it sticking.
- Let cool for at least one hour and up to 2 days in the refrigerator (it will become solid and easy to work with once cooled).
- When ready to cook, preheat oven to 450, remove the polenta from the dish and cut into strips that resemble fries (I like 1/2" by 1/2" and about 3" in length).
- Place on a baking sheet and pour oil over the strips. Toss to coat and add salt or other desired seasonings at this point.
- Cook for 20 minutes in the oven, turning once halfway through. Enjoy and eat alone or serve with your favorite sauce.

- Remove polenta from plastic tube. If it's damp, gently dry it off with a clean kitchen towel.
- Now its time to cut the polenta into fries. (See the blog post for detailed pictures showing how to do it.) Start by laying the polenta log on its side on a cutting board. Cut it in half. Then stand those halves on their ends, cut side down. Cut them in half straight down the middle. Then cut each half into halves. Now you should have 8 flat slabs total. Lay the slabs flat, and cut them into fry-shaped sticks (4 sticks per slab).
- Put the polenta fries into a large mixing bowl. Spray with oil. Then sprinkle on dried basil, dried oregano (or dried parsley), granulated garlic, a dash of salt, and a dash of pepper. Use your hands to carefully toss the polenta fries in the spices, so that they're evenly coated. Be gentle, so that they don't break. Give another spray of oil, if you like.
- Place about half of the seasoned polenta fries into the air fryer basket. (Be careful not to overcrowd, or they won't brown as nicely. You'll likely need to cook in batches.)Air fry at 400 degrees for 10 minutes, or until they are starting to look brown & crispy around the edges. Carefully flip with a spatula. Air fry at 400 degrees for 2 to 4 more minutes, until they are browned & crisp all over.
- Remove the polenta fries from the air fryer basket & put on a serving plate. Cook the remaining polenta fries in the same fashion. Be aware that they may cook slightly faster since the air fryer is now hot.
- Serve polenta fries with warmed marinara or your favorite dipping sauces like vegan ranch dressing, barbecue sauce, hot sauce, or ketchup.
