Steps:
- Put a large colander in a large bowl. Add the cucumbers and onions to the colander, sprinkle with 1 tablespoon salt and toss until the salt is evenly distributed. Let stand at room temperature for at least 1 hour and up to 2 hours.
- Transfer the cucumbers and onions from the colander to a paper towel-lined baking sheet and pat them dry with another layer of paper towels.
- Whisk together the sour cream, dill, vinegar and a few cracks of black pepper in a medium bowl. Add the cucumbers and onions and toss until coated.
- To make ahead: Salt and pat dry the cucumbers and onions as above, then keep separate from the dressing until ready to serve.
FIBER ENRICHED SOUR CREAM & CHIVE CUCUMBER SALAD
This recipe has been in my husbands family since he was a kid. It is a Family Favorite. In trying to eat healthier, I added Chia seeds to this recipe to increase the fiber content & lower the net carbs per serving. By doing that this recipe now has 3 net carbs per serving instead of the original 7. Using a Zero calorie sweetener keeps the sugar down to only 2 per serving, & there are 130 calories per serving. We loved this new version, I was skeptical because of the chia seeds, but my husband said it tasted the same. The chia seeds absorbs some of the liquid in the cukes as the salad sits.

- Wash Cucumbers and slice thinly as desired. Add to a large bowl.
- Using a food processor or by hand wash trim & chop the green onions. Add to a medium size bowl.
- Then add in the sour cream, splenda and spices. Stir to mix together completely.
- Add in about half of the sliced cucumbers and stir to blend into the sour cream mixture.
- Then add in the remaining sliced cucumber, & the chia seeds and stir to mix together completely.
- MY FITNESS PAL.Pour mixture into a medium size container. Garnish with sliced cucumbers and a few chopped green onions. Cover and refrigerate for at least 2 hours or so before serving to allow the flavors to blend together.

- 1. Blend sour cream, garlic powder, sugar or splenda, dill, chive, black pepper & chopped green onions together until well mixed. Then add cucumber slices, and stir to mix. Refrigerate at least 2 hours before serving. Garnish with chopped chive or green onion tops.

- In a small bowl, combine 3/4 cup sour cream, 1/2 Tbsp lemon juice, 2 pressed garlic cloves, 1 Tbsp dill, 1/2 tsp salt or to taste and a pinch of pepper. Stir and set aside while prepping salad.

- Dissolve the salt and sugar in the vinegar, add the sour cream and stir smooth. You may like more or less vinegar, salt or sugar, but don't make the dressing too sweet. Add the chives, dill and celery seed. Slice the unpared cucumbers paper-thin and combine with the dressing. Chill for 1 hour or more. Sour cream cucumbers improve in taste as they stand. The flavor of the cucumbers seeps into the dressing.
