1 1/2 pounds medium shrimp, peeled and deveined (tails removed)
Coarse salt and ground pepper
6 teaspoons olive oil
2 garlic cloves, minced
1 can (14.5 ounces) diced tomatoes, in juice
1 pint cherry or grape tomatoes, halved
1/2 pound linguine
1 1/2 cups lightly packed fresh basil leaves, torn into small pieces, plus extra leaves for garnish (optional)

Steps:

  • Season shrimp with salt and pepper. In a large skillet, heat 4 teaspoons oil over high. Add shrimp; cook until opaque throughout, turning occasionally, 3 minutes. Transfer to a bowl; set aside.
  • Make sauce: To the same skillet, add remaining 2 teaspoons oil and garlic; cook over medium heat until fragrant, about 30 seconds. Add canned tomatoes and their juice, along with 2 cups water; bring to a boil. Reduce heat; simmer, stirring occasionally, until tomatoes have softened and are saucy, about 15 minutes. Remove sauce from heat; stir in cherry tomatoes.
  • Meanwhile, in a large pot of boiling salted water, cook pasta until al dente, according to package instructions. Drain; return pasta to pot. Add tomato sauce, shrimp, and basil; season with salt and pepper, and toss. Serve immediately, garnished with basil leaves, if desired.

⅓ cup red wine
1 teaspoon lemon juice

Steps:

  • Bring a large pot of lightly salted water to a boil; cook the linguine at a boil until tender yet firm to the bite, about 11 minutes; drain.
  • Heat olive oil in a large skillet over medium heat; cook and stir onion and garlic until tender, about 5 minutes. Season with basil, Italian seasoning, salt, and black pepper. Stir in fresh tomatoes and canned tomatoes; simmer for 2 to 3 minutes. Add red wine and lemon juice; simmer for 5 minutes more. 1 cup quartered cherry or grape tomatoes (about 12)
5 large fresh basil leaves, chopped, plus extra for garnish
Kosher salt and freshly ground black pepper
1 1/2 pounds medium-large shrimp, shelled and deveined
Extra-virgin olive oil
1 large clove garlic, minced

Steps:

  • In a medium bowl, toss the tomatoes with the basil and season with salt and pepper, to taste. Set aside while you prepare the shrimp.
  • Divide the shrimp between 2 (8 or 9-inch) pie pans and pat them completely dry with a paper towel. Arrange the shrimp so they lay flat and are evenly spaced in the pans.
  • Heat 2 large skillets over medium heat, or do this in 2 batches if you only have 1 pan. Season 1 side of the shrimp with salt and pepper. Add enough oil to lightly film the bottom of the pan and turn the heat up to high. Invert the pan of shrimp so they all fall into the skillet(s) at once.   • Mix first 4 ingredients then sprinkle over both sides of the shrimp.
  • In a large nonstick saute pan, heat oil over high heat until it starts to shimmer, 1-2 minute.

12 ounces pasta (You can use any pasta you like, *be sure to reserve 1/4 cup of the pasta water)
1 lb extra-large shrimp (21-25 count per pound, peeled and deveined, with the tails removed)
2 tablespoons unsalted butter
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
2 cloves garlic (finely minced)
1/4 cup dry white wine
1 pint cherry or grape tomatoes (halved)
1 cup pesto
1/4 cup reserved pasta water
juice and zest of one lemon
1/2 cup grated Parmesan cheese
1 tablespoon fresh parsley (chopped)

Steps:

  • Prepare the pasta according to the directions on the package for al dente. Reserve 1/4 cup pasta water and drain.
  • While the pasta is cooking, melt the butter in a large skillet over medium heat. Pat the shrimp dry and season both sides with salt and pepper. When the butter has melted, add the shrimp and cook for one minute. Flip the shrimp over and add the wine and garlic. Cook just until the shrimp are opaque and have formed a C-shape, which should take about two minutes. Do not overcook the shrimp.
  • Remove the shrimp with a spatula and add the cherry tomatoes to the pan. Cook for two to three minutes or until the skin on the tomatoes starts to blister.
  • Add the shrimp back to the skillet and then add the pasta and reserved pasta water. Mix well and add the pesto and lemon juice. Stir to combine. Leave the pan on the heat just until everything is heated through and then remove it.
  • Top with grated parmesan cheese, lemon zest, and chopped parsley. Serve immediately.

10 ounces fusilli pasta, (cooked according to package directions*)
1 pound large shrimp, (peeled and deveined (I buy the shrimp already prepped))
Water
White wine
3 to 4 large tomatoes, (cut into chunks)
1/4 cup basil (leaves, chopped)
1/4 cup Italian parsley, (chopped)
3 cloves garlic, (minced)
3 to 4 scallions ((green onions), sliced)
1 tablespoons Balsamic Vinegar ((good-quality))
1 tablespoon olive oil, (extra-virgin)
2 tablespoons Romano cheese, (grated)
Coarse salt (or sea salt and freshly-ground pepper to taste)
1 teaspoon red pepper flakes ((optional))

Steps:

  • After cooking the pasta, drain, and set aside in a large bowl.
  • While the pasta cooks, cook the shrimp in a little water and white wine, until shrimp are opaque in center (approximately 2 to 3 minutes depending on the size of the shrimp). Remove from heat, drain, and set aside, reserving about 1/2 cup of the cooking liquid.
  • NOTE: Shrimp should always be cooked quickly in order to preserve their sweet, delicate flavors. They are very quick to cook, and the flavor can easily be ruined by overcooking. Most shrimp cook in as little as 3 minutes - when they curl and turn pink, they are done. Properly cooked shrimp are firm with a gentle curve shape (like the letter "C").
  • Add the tomatoes, basil, parsley, garlic, scallions, balsamic, oil, cheese. salt and pepper, red pepper flakes, shrimp and cheese to the pasta and mix. If you want a little more liquid, add the cooking liquid from the shrimp. The pasta will soak the liquid up.
  • Serve at once while still warm, grate more cheese over the top of each serving.
  • This may be covered and refrigerated for up to 8 hours and served chilled, if desired.
  • Makes 6 servings.

My mom was cleaning out one of her closets and came across several folders full of recipes that she had clipped from magazines and newpapers over the years. This came from the Houston Post (no longer in circulation) 1990. The article was promoting a cookbook by Bon Appetit called "Too Busy to Cook". This is a nice, quick and easy meal!

1 lb fettuccine
1/2 cup olive oil
1 lb shrimp (uncooked)
4 large tomatoes
1/2 cup chopped fresh basil
1/3 cup sliced black olives
3 large garlic cloves
salt and pepper, to taste
grated parmesan cheese

Steps:

  • Peel and devein shrimp. Coarsely chop the tomatoes. Mince the garlic.
  • Cook fettuccine according to package directions. Drain and keep warm.
  • Heat oil in a large skillet over medium-high heat. Add shrimp, tomatoes, basil, olives, and garlic. Season with salt and pepper.
  • Cook until shrimp turn pink, stirring frequently, about 3 minutes.
  • Place pasta in serving bowl. Pour sauce over pasta and toss. Top with parmesan cheese. Serve immediately.

1 1/4 pounds medium-size shrimp
3 small zucchini, about 3/4 pound
3 quarts water
Salt to taste
3/4 pound fettuccine
2 tablespoons olive oil
1 tablespoon finely chopped garlic
2 cups cubed ripe plum tomatoes
1/4 teaspoon hot red pepper flakes
Freshly ground pepper to taste
1/2 cup coarsely chopped fresh basil leaves
1/4 cup freshly grated Parmesan or peccorino cheese, optional
2 tablespoons butter

Steps:

  • Peel and devein the shrimp.
  • Trim the ends of the zucchini and slice them thin, about 1/8 inch thick.
  • Bring the water and salt to a boil in a saucepan. Add the pasta and return to a boil. Cook, stirring, for 8 to 9 minutes, or according to package instructions. Drain, reserving 1/4 cup cooking liquid.
  • Meanwhile, heat the oil in a nonstick skillet over medium high heat. Add the shrimp and garlic and cook briefly, stirring. Do not allow the garlic to brown. Add the zucchini, tomatoes, pepper flakes, salt and pepper. Cook, stirring, over high heat for about 3 minutes.
  • Return the pasta to the cooking kettle. Add the shrimp mixture, reserved cooking liquid, basil, cheese, if desired, and butter. Toss well over medium high heat and serve very hot after checking the seasoning.

Frozen shrimp is a freezer staple that can be counted on to save dinner any night - simply thaw to use them whenever needed. Here, shrimp and spaghetti are tossed with juicy cherry tomatoes, which are gently simmered until they burst and turn saucy. This dish is best with ripe, in-season cherry tomatoes, but the aromatic fennel seeds and garlic infused in the oil will coax maximum flavor out of less enthusiastic tomatoes while adding depth to the sauce.

8 tablespoons extra-virgin olive oil
1 pound peeled and deveined frozen shrimp (16/20-count), thawed and cut into thirds
Kosher salt (Diamond Crystal)
3 large garlic cloves, gently smashed with the flat side of a knife
1 teaspoon fennel seeds
1/4 teaspoon red-pepper flakes, or to taste
2 pounds cherry tomatoes, larger ones halved, small ones kept whole
1 pound spaghetti
Handful of basil leaves, torn
Black pepper

Steps:

  • In a large skillet, heat 2 tablespoons oil over medium. Add the shrimp, season with 1 teaspoon salt and cook, stirring occasionally, until just cooked through, about 3 minutes. Transfer the shrimp to a dish and set aside. Discard any excess liquid in the pan.
  • Add the remaining 6 tablespoons oil and the garlic cloves to the same pan and cook over medium-low, turning the garlic a couple of times until light gold and fragrant, taking care not to burn them, about 4 minutes. Add the fennel seeds and red-pepper flakes, stir and cook until fragrant, about 1 minute. Increase the heat to medium and add the cherry tomatoes and 1 1/2 teaspoons salt.
  • Cook the tomatoes, stirring occasionally, until they release their juices and get saucy, 25 to 30 minutes. While the tomatoes cook, bring a large pot of well-salted water to a boil for the pasta. Add the spaghetti and cook until al dente, about 10 minutes.
  • Transfer the shrimp with any juices to the tomatoes to reheat for a couple of minutes. Taste the sauce and adjust seasoning.
  • Set the pasta pot next to the saucepan and use tongs to transfer the spaghetti to the tomatoes and shrimp. The starchy water clinging to the spaghetti will make for a tasty and silky sauce. (You can drain the spaghetti, if you prefer. If you do, reserve 1/4 cup of the pasta water to add as needed for a silky sauce.) Remove the pan from the heat, add the basil and toss well. Season with black pepper to taste and serve.
