THICK CHOCOLATE PIE
A firm, no ooze, no weep pie. Use better chocolate for a better pie. I use a flat whisk for this recipe. Recently made with all dark brown sugar, liked it even better. Texture is best if you allow pie to sit out of fridge for 30 minutes before serving.

Steps:
- Combine sugars, starch, gelatin and salt in med sauce pan.
- Add milk gradually while whisking.
- Add chocolate.
- Cook and whisk over med heat till mixture boils 1 minute, remove from heat.
- Place egg yolks in a medium bowl and whisk. Gradually pour 1 cup of hot mixture into egg yolks, whisking constantly.
- Whisk egg and chocolate mixture back into remaining chocolate mixture.
- Return to medium heat, whisking constantly till mixture boils 1 minute.
- Remove from heat and add vanilla.
- Stir till cool and thickened slightly.
- Pour into pre-baked pie shell and cover pie surface with plastic wrap.
- Refrigerate overnight.
- Serve topped with sweetened whipped cream.
QUICK CHOCOLATE MERINGUE PIE
This recipe comes courtesy of Diane Rasberry of Baton Rouge, Louisiana. She says the chocolate filling of this pie is balanced out by the not-too-sweet meringue topping.

- Preheat oven to 375 degrees. Place pie crust in plate on a rimmed baking sheet; bake until crust is golden, about 20 minutes. Cool completely; set aside.
- Put a fine-mesh sieve over a medium bowl; set aside. In a medium saucepan, off heat, whisk together 2/3 cup sugar, the cocoa powder, flour, and 1 tablespoon cornstarch. Gradually whisk in evaporated milk. Whisk in egg yolks.
- Place pan over medium heat; whisking constantly, cook until the first large bubble forms, about 5 minutes. Reduce heat to low; whisking constantly, cook 1 minute.
- Immediately pour mixture through prepared sieve into bowl. Stir in butter and vanilla. Pour warm filling into baked crust; cover surface directly with plastic wrap. Chill at least 2 hours and up to 1 day.
- Preheat oven to 450 degrees. Using an electric mixer, beat egg whites, remaining 1/3 cup sugar, and remaining 1 teaspoon cornstarch until stiff peaks form. Spread meringue on top of filling, right up to edge of crust; bake until meringue is lightly browned, 5 to 7 minutes. Serve immediately.

- Mix cornstarch, 2 tbls sugar and water and cook over low heat till mixture is clear -- remove from heat -- in a bowl, whip egg whites until peaked and then slowly add the heated cornstarch-sugar-water mixture.
- Beat until creamy.add salt and 6 tbls sugar and beat again till fluffy -- Pile on your pie and bake in a 350* oven till meringue is gold tinged, usually 20-30 minutes.

- Blend cornstarch and cold water in a saucepan. Add boiling water, and cook until thick and clear. Cool completely.
- Beat egg whites till foamy. Gradually beat in sugar, beating until stiff and glossy. Add salt and vanilla, and slowly beat in cold cornstarch mixture. Beat quickly for several minutes. Spread meringue on filled, cooled 9-inch pie.

- For crust: Combine flour and salt in food processor.
- Add chilled shortening and pulse until grainy.
- With machine running, drizzle in ice water until dough masses together.
- Gather dough into ball, flatten between two pieces of wax paper, and refrigerate one hour.
- Meanwhile, prepare filling by beating egg yolks in a saucepan.
- Stir in sugar, salt, cornstarch, and buttermilk.
- Cook over medium heat, stirring constantly, until mixture is thickened and boils.
- Remove from heat; stir in 3 oz melted chocolate.
- Add butter and vanilla, stirring until butter melts.
- Place wax paper over filling and refrigerate until cold.
- Once dough is chilled, preheat oven to 350°F and roll out into 12-inch circle on floured surface.
- Place in 9-inch pie pan and trim edges.
- Lightly line crust with foil and fill with rice or beans.
- Bake 10 minutes; remove foil and beans; return to oven and bake another 8-10 minutes until lightly browned.
- Remove from oven and cool completely on wire rack.
- Once crust is cool, evenly spread chilled filling into crust.
- Preheat oven to 400°F.
- For meringue, beat egg whites, tartar, and salt until foamy; add sugar a tablespoons.

- 1. Mix the 2 tblsp. of sugar, cornstarch and water in a sauce pancook till clear then cool.
- 2. Beat the egg whites with salt ans vanilla until thick.
- 3. Add 6 tblsp. of sugarand beat well add cooled cornstarch mixturebeat till creamy firm stiff peaks.
- 4. Pile on pie making sure edges are sealed to crust then bake in a 350 degree preheated oven for 30 min or untill golden brown.
CHOCOLATE PIE
Steps:
- For the crust: In a food processor, pulse the graham crackers and sugar until crumbs form. Pour in the butter and continue to pulse until the crumbs are coated. Press the mixture firmly into the bottom of a 9-inch pie plate. Set aside.
- For the filling: In a small saucepan, heat the milk until hot but not simmering. To a medium saucepan, add the sugar, flour and cocoa and whisk together well. Lightly beat the egg yolks (saving the whites for the meringue) and pour into the flour mixture. Slowly add the hot milk, stirring. This will create a paste in the beginning, ensuring that the chocolate and flour blend smoothly. Place over medium heat and cook, stirring constantly, until very thick, about 5 minutes. The mixture will start to bubble sporadically; continue to stir and cook for another 2 minutes. Remove the pan from the heat and stir in the butter, vanilla and salt. Stir until the butter is completely incorporated.
- Pour the filling into the crust and chill in the refrigerator, about 45 minutes.
- For the meringue: Preheat the oven to 325 degrees F. With an electric mixer, beat the egg whites with the salt until stiff. With the mixer running, gradually add the sugar and beat until the whites are smooth and glossy. Spread the meringue on the pie, reaching the edges of the crust to seal in the filling. Bake until brown, 15 to 20 minutes. Cool completely before serving.
