White Chocolate Fudge image

This is the white chocolate lovers' equivalent to heaven. Creamy sweet fudge with pecans. Serve it alongside traditional chocolate fudge for a beautiful presentation.

1 (8 ounce) package cream cheese
4 cups confectioners' sugar
1 ½ teaspoons vanilla extract
12 ounces white chocolate, chopped
¾ cup chopped pecans

Steps:

  • Grease an 8x8 inch baking dish. Set aside.
  • In a medium bowl, beat cream cheese, sugar, and vanilla until smooth.
  • In the top of a double boiler over lightly simmering water, heat white chocolate, stirring until melted and smooth.
  • Fold melted white chocolate and pecans into cream cheese mixture. Spread into prepared baking dish. Chill for 1 hour, then cut into 1 inch squares.

3 pkg. (4 oz. each) BAKER'S White Chocolate, broken into pieces
3/4 cup canned sweetened condensed milk
1 cup coarsely chopped pistachios
1/2 cup dried cranberries
1 Tbsp. lime zest

Steps:

  • Line 8-inch square pan with foil, with ends of foil extending over sides. Microwave chocolate and milk in microwaveable bowl on HIGH 2 to 3 min. or until chocolate is almost melted; stir until chocolate is completely melted and mixture is well blended.
  • Add remaining ingredients; mix well. Spread onto bottom of prepared pan. Refrigerate 2 hours or until firm.
  • Use foil handles to lift fudge from pan before cutting to serve.

1 lb white chocolate baking square
1 (300 ml) can sweetened condensed milk, regular
1 teaspoon vanilla extract
1 cup dried cranberries
1 cup pistachios, chopped

Steps:

  • Melt chocolate with sweetened condensed milk. Remove from heat. Stir in extract and fruit. Cool and chill until just firm.
  • Divide chocolate mixture in half; place each portion on a 20-inch piece of wax paper. Shape each into 12-inch log. Roll in nuts. Wrap tightly; chill 2 hours or until firm.
  • Remove paper; cut into slices to serve. Store covered in refrigerator.

1-1/2 pkg. (4 oz. each) BAKER'S White Chocolate (6 oz.)
6 Tbsp. butter
1/3 cup water
1 pkg. (3.9 oz.) JELL-O Pistachio Flavor Instant Pudding
3 cups powdered sugar
6 Tbsp. dried cranberries

Steps:

  • Line 8-inch square pan with foil, with ends of foil extending over sides. Microwave first 3 ingredients in large microwaveable bowl on HIGH 2 min. or until butter is melted; stir until chocolate is completely melted.
  • Add dry pudding mix; stir with whisk 2 min. Add powdered sugar, 1 cup at a time, stirring after each addition until blended; press onto bottom of prepared pan. Top with cranberries; press into fudge to secure.
  • Refrigerate 2 hours or until firm. Use foil handles to lift fudge from pan before cutting into squares.
