This cool, tangy salad always prompts recipe requests. It must be the combination of tart cranberries, sweet pineapple and pecans in a fluffy base. I appreciate how easy it is to prepare. -Denise Goedeken, Platte Center, Nebraska

1 can (14 ounces) sweetened condensed milk
1/4 cup lemon juice
1 can (20 ounces) crushed pineapple, drained
1 can (14 ounces) whole-berry cranberry sauce
2 cups miniature marshmallows
1/2 cup chopped pecans
Red food coloring, optional
1 carton (8 ounces) frozen whipped topping, thawed

Steps:

  • In a bowl, combine milk and lemon juice; mix well. Stir in pineapple, cranberry sauce, marshmallows, pecans and food coloring if desired. Fold in whipped topping. Spoon into a 13-in. x 9-in. baking dish. Freeze until firm, 4 hours or overnight. Cut into squares.

This recipe was given to me by a friend of mine. It has been a family favorite for over ten years. I make it for Thanksgiving as well as Christmas dinner.

Number Of Ingredients 6

4 cups fresh cranberries
1 ½ cups water
5 whole cloves
5 whole allspice berries
3 cinnamon sticks
2 cups white sugar

Steps:

  • Place fresh cranberries and water in a medium saucepan over medium heat.
  • Wrap cloves, allspice berries and cinnamon sticks in a spice bag. Place in the water with cranberries.
  • Cook until cranberries begin to burst, about 10 minutes.
  • Stir in sugar and reduce heat to low. Continue cooking 5 minutes, or until sugar has dissolved. Remove from heat and allow to cool. Discard spice bag. Chill in the refrigerator 8 hours, or overnight, before serving.

  • Beat cream cheese and cranberry sauce with mixer until well blended. Gently stir in COOL WHIP; cover.

2 cups Pillsbury BEST® All Purpose Flour
1 1/2 cups oats
3/4 cup firmly packed brown sugar, plus 1 tablespoon, divided
1 cup butter, softened
1 (8 oz.) pkg. cream cheese, softened
1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk
2 large eggs
1 (27 oz.) jar None Such® Ready to Use Mincemeat
2 tbsps. cornstarch
1 (16 oz.) can whole berry cranberry sauce

Steps:

  • HEAT oven to 350 degrees F. Spray 15 x 10-inch jellyroll pan with no-stick cooking spray.
  • BEAT flour, oats, 3/4 cup brown sugar and butter in large bowl until mixture resembles coarse crumbs. Reserve 1 1/2 cups crumb mixture; press remaining mixture into bottom of prepared pan.
  • BAKE 15 minutes or until lightly browned.
  • BEAT cream cheese in medium bowl until fluffy. Gradually beat in sweetened condensed milk until smooth; beat in eggs. Spread over partially baked crust: top with mincemeat.
  • COMBINE remaining 1 tablespoon brown sugar and cornstarch in small bowl; stir in cranberry sauce. Spoon over mincemeat. Top with reserved crumb mixture.
  • BAKE 40 minutes or until golden. Cool. Chill. Cut into squares.

1 (8 ounce) carton frozen whipped topping

Steps:

  • Combine milk and lemon juice.

  • Fold in whipped topping.
  • Either spoon into 9x13x2 baking dish and freeze until firm or put into bowl and set in refrigerator until very cool.

1 cup fresh or frozen raspberries, thawed
3/4 cup fresh strawberries, halved

Steps:

  • In a large saucepan, combine the cranberries, water and sugar. Cook and stir over medium heat until berries pop, about 15 minutes. Remove from the heat; cool slightly., In a large bowl, combine the remaining ingredients. Add cranberry mixture; stir gently. Refrigerate until serving.

2 cups white sugar
½ cup freshly squeezed orange juice
¼ cup water
¼ cup freshly squeezed lime juice
1 teaspoon grated orange zest
1 teaspoon grated lime zest
1 pinch grated orange zest

Steps:

  • Stir cranberries, sugar, orange juice, water, lime juice, 1 teaspoon orange zest, and lime zest together in a saucepan; bring to a boil. Reduce heat to low; cook at a simmer until cranberries pop, about 20 minutes. Set aside to cool to room temperature.
  • Transfer cooled sauce to serving bowl, cover with plastic wrap, and refrigerate until cold, about 1 hour. Garnish with a pinch of orange zest to serve.
