1/4 cup whipped cream cheese
1/4 cup sugar
1 tablespoon butter
10 slices white bread, cut into 1-inch cubes
15 miniature peanut butter cups, quartered

Steps:

  • In a large microwave-safe bowl, combine the cream, chocolate chips, cream cheese, sugar and butter. Cover and microwave on high for 2-3 minutes or until chips are melted; stir until smooth. Add the bread cubes; toss to coat., Place half of the bread mixture in a greased 8-in. square microwave-safe dish. Sprinkle with peanut butter cups; top with the remaining bread mixture. Microwave, uncovered, on high for 1-1/2 minutes or until peanut butter cups are melted. Serve warm.

This layered dessert can turn any dinner party into an unforgettable experience. Kishta is a double cream of thick consistency that can be bought from Middle-Eastern pastry shops or supermarkets. A good substitute is double cream or fresh cream.

9 ounces white bread, grilled
2 cups water
1 1/2 cups sugar
1 tablespoon fresh lemon juice
1 teaspoon rose water
350 g peas
1 cup milk
1 1/2 tablespoons cornflour
2 tablespoons rose water
80 g shelled and chopped pistachios

Steps:

  • Chop the grilled bread in a food processor on low so as to get coarse but small chunks.
  • Spread the crumbs at the bottom of a rectangular medium size serving plate -about 25 centimetres/10 inches- with a 6 cm/about 2 ½ inches edge.
  • To prepare the syrup dissolve the sugar in the water and let it boil for a few minutes adding the lemon juice in the process. Add the rose water after you remove it from the heat. Pour it hot over the bread so as to soak it completely.
  • With the back of a fork press the layer of sweetened bread against the bottom of the plate to obtain a more compact layer.
  • In a small casserole mix thoroughly the kishta the milk and corn flour and bring to boil on medium heat stirring constantly with a wooden spoon. Cook over low heat for a few minutes or until the cream pudding is thick enough to cling to the back of the spoon. Remove from the heat and add the rose water.
  • Spread the pudding over the bread mixture covering it completely. Sprinkle a thick layer of pistachios on top and let cool. Refrigerate for a few hours before serving. If you are using fresh cream add 3 tablespoons of corn flour to three cups of fresh cream and cook the same way as kishta adding the rose water last.

I made this for Christmas day lunch, experimenting with microwave recipes found in "Christmas Microwave Know-How". The recipes are designed for a 650/700 watt microwave, and mine is a little larger, so I adjusted cooking times accordingly, cooking for slightly shorter times than suggested. I was very pleased with how simple it was to turn out an attractive and delicious pudding! The original recipe called for 2 tsp of instant coffee powder, but my children don't care for coffee, so I subbed 2 tsp of cocoa powder instead, for a chocolate pudding. Next time, I will fold in some chopped chocolate, or chocolate chips, for a richer pudding. I might also substitute some of the milk for cream, maybe about 150 ml. A tblsp of rum might be nice too!

50 g soft brown sugar
6 teaspoons cornflour
3 teaspoons plain flour
2 teaspoons cocoa powder
500 ml milk
1 egg white
3 egg yolks
25 g butter (melted)

Steps:

  • Sift together the brown sugar, cornflour, plain flour and cocoa powder, and then whisk together with the milk in a large bowl.
  • Microwave at 100% (High) for 7 - 71/2 minutes, until thick, whisking every 2 minutes.
  • Lightly beat the egg yolks, and mix in 6 tbls of the hot custard. Blend thoroughly, then stir the yolk mixture into the remaining custard.
  • Microwave on High for another 1 - 2 minutes, or until thick. Beat in the butter, then cover with cling film and cool.
  • Whisk the egg white until stiff, and fold into the custard. Pour into individual glasses. You might like to top it with a swirl of whipped cream!

  • Preheat oven to 375 degrees F (190 degrees C).
  • In 1 1/2 quart casserole dish, mix together sugar, cornstarch, cocoa, salt and 1/2 cup of milk until smooth. Once it is mixed well, stir in remaining milk. Microwave on high for 5 to 8 minutes or until thick; stir halfway through cooking.
  • In a small bowl, place a small amount of the hot mixture and beat together with egg yolks. Stir back into original mixture in casserole dish. Microwave on high for 1 1/2 to 2 minutes or until thickened; stir frequently. Blend in butter and the 1 teaspoon of vanilla. Pour mixture into pastry shell.
  • To Make Meringue: In a small bowl, beat egg whites and cream of tartar until foamy. Gradually stir in 2 tablespoons of sugar at a time until stiff peaks form; stir in vanilla. Spread meringue over top of pie filling.
  • Seal rim of pie with aluminum foil, then bake in preheated oven for about 8 minutes or just until meringue gets browned.
