FENNEL-APPLE SALAD WITH WALNUTS
A bright and tangy salad cuts the heaviness of the typical Thanksgiving meal. This one, with fennel, celery, apples and toasted walnuts, is all crunch, which the carb-heavy meal can generally use more of. You can make the dressing a day ahead and store it in the fridge, but don't dress the salad until an hour before serving.

SHAVED FENNEL SALAD
This is an antidote to every side salad that ever was. Instead of meh greens, it's got shavings of fennel that bend and twist but keep their refreshing crunch. It's got a lean dressing and nuggets of deeply toasted croutons, meaty walnuts, and shards of Parmesan. It has acidity and zing-lemon juice, the zest, vinegar, mint, and red pepper flakes-just in case you were worried about palate fatigue. This is what salad looks like in 2018.

Steps:
- Preheat oven to 400°F. Place bread on one side of a rimmed baking sheet and walnuts on the other side (they cook at different rates). Drizzle bread with 3 Tbsp. oil; season with salt. Toss, squeezing bread with your hands to help it absorb as much oil as possible, until evenly coated. Bake until walnuts are golden brown and croutons are deeply browned and very crisp, 8-10 minutes for walnuts, 12-15 minutes for croutons. Let cool, then coarsely chop walnuts.
- Meanwhile, combine vinegar, garlic, and red pepper flakes in a medium bowl. Let sit 10 minutes to let garlic mellow and flavor the vinegar.
- Whisk 3 Tbsp. oil into vinegar mixture, then add croutons and chopped walnuts. Season crouton mixture with some salt and toss to coat and let croutons soften slightly; set aside.
- Remove stalks and fronds from fennel bulbs. Remove fronds from stalks and coarsely chop; thinly slice stalks. Place in a large bowl. Cut fennel bulbs in half and thinly slice on a mandoline (if you have one; if not, practice your knife skills). Add to same bowl along with mint. Zest lemon half over salad, then squeeze in juice. Season with salt and toss to combine.
- Divide reserved crouton mixture among plates and top with half of the Parmesan. Arrange fennel salad over; top with remaining Parmesan and drizzle with oil.

FENNEL SALAD WITH LEMON DRESSING AND PARMESAN
Recipe video above. This Fennel Salad is a classic combination - shaved fennel with a zesty lemon dressing and shaved parmesan. It's the sort of salad you'll find on the menu of high end bistros and fine dining restaurants. It presents beautifully, tastes refreshing and even people who don't usually like fennel enjoy it because the fennel flavour is actually very mild!

Steps:
- First, place the olive oil, apple cider vinegar, and salt into a dressing bottle or glass jar, close it and shake it to blend. If you like, you can add some freshly cracked black pepper, but it's not necessary.
- Second, rinse both the fennel bulb and apple. Cut off the long stalks of the fennel and discard them. Save a few of its feathery leaves to add to the salad.
- Next, using a mandolin, select the size of the blade you prefer. I used the middle blade size, creating slivers of both the fennel and apple that aren't too thin and not too thick.
- Shave the fennel, and transfer to a salad bowl.
- Then shave the green apple. Place the slices of the apple into one pile and with a knife cut the pile into fourths. Transfer to the salad bowl.
- Drizzle with some dressing over the salad, toss, and taste. If you prefer, you can add more vinaigrette to your liking, including seasoning with more salt to your taste. Toss some of the feathery leaves in, as a garnish.
- Cover with clear wrap and chill at least one hour or more before serving.
- Serve chilled.
- Yields: 6 servings

- For the citrus dressing: In a bowl combine all the ingredients. Close the jar and shake vigorously to combine. Set aside until needed. (The dressing can be made in advance and will keep refrigerated for 2 weeks.)
- For the salmon salad: Add the rinsed red lentils to a medium saucepan and cover with 1 inch (2 cm) water. Place over high heat and bring to a boil. Reduce the heat to low, cover, and simmer for 8 minutes, or until the lentils are al dente. Test the lentils towards the end of the cooking time to make sure they don’t turn overcooked and mushy. (If you accidentally overcook the lentils, don’t throw them away. Drain and let them cool and turn them to hummus. And then cook another batch of lentils for this salad.) Drain the lentils, then rinse under cold running water. Set aside.
- In a nonstick skillet set over medium-high heat, heat the olive oil until shimmering. While the oil heats up, season the flesh side of the salmon fillet with a generous pinch of salt and some freshly ground black pepper. Add the salmon fillet, flesh side down, to the hot skillet. Cook for 3 minutes, then flip over and cook for 2 minutes more. Transfer to a plate, cover with aluminum foil and let cool for 10 minutes.
- To assemble the salmon salad: Very thinly slice the radishes using a sharp knife or a mandoline slicer. Set aside.

- Peel the base of the fennel bulb with a swivel vegetable peeler to remove the tougher outer layer. Slice the fennel very thinly using a sharp knife or shave on a mandoline. Add to a large platter or shallow serving bowl.
- Trim off the very top and base of the celery stalks and slice in half horizontally. Lay them flat on a work surface, using a swivel peeler to make thin strips. When the stalks are too whittled down to peel, use a knife to slice the remaining stalk into 1/2-inch pieces. Add the strips and pieces to the bowl along with the red onion and mint. Tangle everything together.
- To serve, top the fennel mixture with the walnuts, dates, cheese, lemon zest and a big pinch of salt. Toss gently, then add the lemon juice and a good drizzle of oil. Toss again and tasted, adding more salt, lemon juice or olive oil to taste.
