Breakfast quiche is the answer to all your breakfast prayers! This savory breakfast pie is sure to become a staple in your home.

1 Pie Crust
1 cup mushrooms (sauteed)
1 cup bacon (diced)
1 cup Mozzarella cheese (shredded)
3 eggs
1 cup heavy cream
1 tsp salt (adjust to taste )
1/2 tsp black pepper (adjust to taste )

Steps:

  • On a lightly floured surface, unroll the pastry. Transfer the crust into a pie pan (8-9 inches wide and 2 inch deep). Trim pastry off the edges of the pie pan.
  • Cover the pie crust with parchment paper. Fill it with rice or peas to hold the pie crust down. Bake at 350 °F for 30 minutes. Remove the pie crust from the oven, let it cool down and remove the rice from the crust.
  • Fill crust with mushrooms, bacon and sprinkle with mozzarella.
  • Whisk eggs together with heavy cream, pour over filled pie crust.
  • Bake at 375 °F for about 30 minutes or until a knife inserted near the center comes out clean.

1-1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 cup cold butter
3 to 5 tablespoons ice water
FILLING:
12 bacon strips, cooked and crumbled
1/2 cup shredded pepper jack or Monterey Jack cheese
1/2 cup shredded sharp cheddar cheese
1/3 cup finely chopped onion
4 large eggs
2 cups heavy whipping cream
3/4 teaspoon salt
1/4 teaspoon sugar
1/8 teaspoon cayenne pepper

Steps:

  • Combine flour and salt; cut in butter until crumbly. Gradually add 3-5 tablespoons ice water, tossing with a fork until dough holds together when pressed. Wrap and refrigerate 1 hour., Preheat oven to 450°. On a lightly floured surface, roll dough to an 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Line unpricked crust with a double thickness of heavy-duty foil. Bake 5 minutes; remove foil. Bake 5 minutes longer; remove from oven and cool on a wire rack. Reduce heat to 375°., Sprinkle bacon, cheeses and onion over crust. Beat remaining ingredients until blended; pour over top. Bake until a knife inserted in center comes out clean, 30-35 minutes. Let stand 10 minutes before cutting.

Number Of Ingredients 8

2 (8 ounce) cans pillsbury refrigerated garlic butter crescent dinner rolls (8 rolls each)
1 (8 ounce) package cream cheese, softened
3 eggs
1 small onion, chopped (1/4 cup)
1 (9 ounce) box frozen spinach, thawed, squeezed to drain
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup shredded mozzarella cheese (4 oz)

Steps:

  • Heat oven to 350°F
  • Spray 16 (2 3/4x1 1/4-inch) muffin cups with non-stick cooking spray.
  • Separate each can of crescent dough into 8 triangles.
  • Press 1 triangle on bottom and up side of each muffin cup.
  • In large bowl, beat cream cheese with electric mixer on medium speed until smooth.
  • Add eggs, one at a time, beating well after each addition.
  • Stir in onion, spinach, salt and pepper until well mixed.
  • Fold in cheese.
  • Fill each cup to the top with egg mixture (do not overfill).
  • Bake 15 to 20 minutes or until knife inserted in center comes out clean and edges of rolls are golden brown.
  • Remove from pan; serve warm.

1/2 lb sausage, cooked and drained
2 cups cheddar cheese, grated
2 cups potatoes, raw,grated,rinsed in cold water and squeezed dry
1 green onion, minced
5 eggs, well beaten

Steps:

  • Preheat oven to 425F.
  • Spread sausage evenly in bottom of prepared pie shell.
  • Sprinkle cheese, potatoes and onion over sausage.
  • Pour eggs over all.
  • Bake for 5 minutes, reduce heat to 375F and bake 45-55 minutes, until lightly browned and well set.

3 cups frozen hash browns (thawed)
1/2 lb bulk sausage, browned, drained and crumbled
6 tablespoons green peppers, chopped
2 tablespoons onions, chopped
10 eggs
1/2 cup milk
1 (10 ounce) package frozen chopped spinach, thawed
3 dashes hot sauce (to taste)
1/4 cup cheese, shredded

Steps:

  • Preheat oven to 350. Spray 12 muffin cups with cooking spray. If.
  • using silicone muffin pan no need to spray.
  • Thaw spinach in microwave and squeeze to drain well.
  • Line each muffin cup with about 1/4 c hash browns.
  • Beat together eggs and add remaining ingredients except for cheese. Divide between muffin cups. Top with 1 tsp of cheese on each one.
  • Bake at 350 for 30-35 minutes until set in middle. Remove from muffin tin and cool.
  • Place 2 in sandwich bag and freeze. Remove from bag, warm in.
  • microwave on paper towel 1 - 1 1/2 minutes.
  • Cheese or meat is optional. Also can use any shredded or chopped vegetables such as broccoli, zucchini, etc. in place of spinach.
