- Line a meat loaf pan with plastic wrap so that it is completely covered, with lots of extra hanging over the edges.
- Cut the pound cake lengthwise in 4 equally thin rectangular slabs. Cut 1 of the rectangles in 1/2 widthwise, then cut another 1 of the rectangles in 1/2 lengthwise. You should have 2 full slabs, 2 thin rectangular strips, and 2 squares. Begin layering the meatloaf pan with 1 of the full slabs on the bottom, then the 2 strips on either side. Place the 2 squares of pound cake vertically on each end of the pan. The loaf pan should now be completely encased in pound cake.
- Lightly brush, our drizzle, the pound cake with the liqueur and leftover coffee, reserving some for the top piece. Scoop the ice cream into the cavity of the pound cake and smooth it out with a small offset spatula or your fingertips so that it is all even around the pan. Once the pan is full of ice cream, pour the remaining liqueur and coffee over the remaining piece of pound cake. Top the ice cream with the remaining piece of pound cake and press down. Cover the cake with the plastic wrap and put back in the freezer for at least an hour. Using the overhanging plastic wrap, remove the ice cream cake from the loaf pan. Place the loaf on a serving platter and sprinkle with the cocoa powder and serve.
AMERICAN FLAG ICE CREAM CAKE
This red, white and blue ice cream cake is sure to become a summer classic. It's easier than it looks, thanks to a press-in-the-pan crust made from shortbread cookie crumbs. Then it's just a matter of layering on jam and a no-churn homemade ice cream. Parchment paper templates make fast work of creating the stripes.

- Line a 9-by-13-inch metal baking pan with foil, leaving a 2-inch overhang on all sides.
- Pulse the shortbread cookies in a food processor until finely ground. Transfer the crumbs to a medium bowl and set aside. Add the freeze-dried strawberries to the food processor and pulse until finely ground. Remove 1/4 cup of the ground strawberries to a separate bowl and set aside. Reserve 1 cup of the cookie crumbs for the topping. Add the rest of the cookie crumbs to the food processor along with 1/2 teaspoon salt and the brown sugar and pulse to combine. With the processor running, drizzle in the butter and continue to process until the crumbs are coated and the mixture resembles wet sand. Press the mixture evenly into the bottom of the prepared pan. Spoon the jam over the crust and spread into an even layer with an offset spatula. Cover with plastic wrap and freeze while you make the ice cream.
- Whip the cream in a large bowl with an electric mixer on medium-high speed until firm peaks form, about 2 minutes. Decrease the speed to low. Add the sweetened condensed milk, 1/4 teaspoon salt and the vanilla, then increase the speed to medium and beat until combined and the mixture has soft peaks.
- Pour the cream mixture over the jam and spread evenly with an offset spatula. Cover with plastic wrap and freeze until solid, at least 6 hours and up to 12 hours.
- Meanwhile, cut six strips of parchment paper that are each 3/4 inch wide by at least 13 inches long. Cut a 4-by-5-inch rectangle from parchment paper as well.
- Using the foil overhang, lift the cake out of the pan and place onto a cutting board with a long side facing you. Sprinkle the reserved shortbread crumbs to cover the ice cream layer completely in an even layer. Using a fine-mesh sieve, sift the confectioners' sugar over the shortbread crumbs in an even layer until the top is completely white.
- Place the 4-by-5-inch parchment rectangle on the top left-hand corner of the cake. Arrange the parchment strips in even intervals across the cake, starting 3/4 inch from the top and stopping 3/4 inch from the bottom. Using the fine-mesh sieve, dust the reserved ground strawberries in an even layer over top of the templates. Carefully remove all the parchment templates. Sprinkle the blue sprinkles over the blocked-off corner area in an even layer. Scatter the star candies on top of the blue sprinkles. Slice the cake into 12 equal pieces using a sharp knife to serve.
MALTED VANILLA ICE CREAM
Steps:
- To make the ice cream base: Stir the gelatin into 1/2 cup of cold water in a small bowl; Set the mixture aside (this will bloom into a semi-solid state).
- Heat 2 cups of the milk in a saucepan over medium-low heat, stirring occasionally. When the milk begins to steam remove it from the heat. And stir in the gelatin. Stir until the gelatin is fully dissolved.
- Put the malted milk powder into a blender. Add 2 cups of the cold milk. Blend well, stopping to scrape down the sides with a spatula. (If there's no blender handy, just beat the malted milk well into the milk until there are no lumps).
- Pour the malted milk mixture into the ice cream maker. Add the heavy cream and stir. Stirring constantly, mix in the hot milk and gelatin mixture. Add the remaining milk, sugar, vanilla, and salt and stir until the sugar dissolves.
- To freeze the ice cream: Assemble the dasher, position the can lid, put the can in the tub and secure the crank assembly. Turn the crank to make sure everything is put together correctly.
- Find the little hole in the side of the tub near the top of the can. Make sure that the hole is open. Drop about 2 cups of crushed ice into the tub. Sprinkle the ice with 1/2 cup rock salt, evenly covering it. Repeat this process. Now someone should begin turning the crank, which remain in motion until the ice cream is frozen.
- Continue to add ice and salt in the proportion above until you have reached the top level of the can and continue cranking. In about 20 minutes the crank will become very difficult to turn. This indicates that the ice cream is done.
- Remove the crank assembly. Pull the can up a bit in the tub. Wipe the ice and salt from the lid and the top of the can. Remove the lid. Pull up the dasher and scrape it off with a rubber spatula. Most people dig in right at this point and enjoy the ice cream even though it is still a little soft. Others like to remove the can and put it in a freezer (or put the ice cream into smaller containers) and harden the ice cream for a few hours before eating.
MANGO-ORANGE-VANILLA ICE CREAM CAKE
Layering mango ice cream with vanilla and orange in this ice cream cake brings big tropical vibes to a classic flavor combination. The assembly is super simple, but leave plenty of time for freezing as you build it to keep defined layers.

- Butter an 8-inch springform pan. Cut a 7-by-26-inch piece of parchment paper; press the strip around the inside of the pan so it extends above the rim (this will allow you to build a tall cake). Lock the ring to secure the paper to the pan.
- Pulse the graham crackers in a food processor until finely ground. Add the melted butter and pulse until combined. Press the mixture into the bottom of the prepared pan and freeze until firm, about 10 minutes.
- Meanwhile, cut the carton of mango ice cream in half with a serrated knife. Return one half to the freezer. Transfer the other half to a stand mixer and let soften slightly, then beat with the paddle attachment on medium speed until spreadable but not melted. Spread the ice cream evenly onto the crust with an offset spatula. Freeze until firm, 30 minutes to 1 hour.
- Rinse out the bowl, then repeat step 3 with the vanilla ice cream, using half of the carton. Freeze the cake. When firm, repeat with the orange-vanilla ice cream, using half of the carton. Return to the freezer.
- Repeat the layers with the remaining mango, vanilla and orange-vanilla ice cream, making sure each layer is firm before adding the next. Freeze the ice cream cake until completely firm, at least 1 hour.
- Remove the springform ring and parchment. Cover the cake with whipped cream and freeze at least 10 minutes more.
VANILLA MALTED ICE CREAM

- Heat milk and malt powder in a saucepan till the malt powder is dissolved and the mix simmers. Take off the heat.
- While waiting for the milk to simmer, beat egg yolks and sugar till satiny and batter-like.
- Pour the milk into the yolk and sugar mix and stir constantly. Return the entire mix to the saucepan over the lowest heat setting.
- Constantly whisk the mix and do NOT LET IT BOIL. Let it thicken till it can coat the back of a spoon.
- Strain the entire mix into a large bowl and let it cool for about 10 minutes.
- Whisk in cream and vanilla extract. Cool and chill overnight.
- Process according to your ice cream maker.
