4 ounces uncooked fettuccine
1/4 cup whole milk
1/4 cup butter, cubed
3 ounces cream cheese, softened and cubed
1/3 cup grated Parmesan cheese
White pepper, optional

Steps:

  • Cook pasta according to package directions. In a saucepan, heat milk and butter until butter is melted. Stir in cream cheese and heat until melted. Add Parmesan cheese and pepper if desired; cook and stir until blended and heated through. Drain pasta and transfer to a serving bowl. Pour sauce over fettuccine; toss to coat.

1 pound fettuccine
1 1/2 cups heavy cream
6 tablespoons unsalted butter, cut into cubes
1/4 teaspoon freshly grated nutmeg
Freshly ground pepper
1 cup grated parmesan cheese (about 2 ounces), plus more for topping

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1/2 cup cooking water, then drain.
  • Meanwhile, combine the heavy cream and butter in a large skillet. Bring to a simmer over medium-high heat, whisking to combine. Whisk in the nutmeg and 1/2 teaspoon each salt and pepper. Keep warm over low heat.
  • Add the pasta and cheese to the sauce. Increase the heat to medium and toss to coat, adding the reserved cooking water as needed to loosen the sauce. Transfer the pasta to bowls and top with more parmesan.

This recipe is one of my familys favorites. My husband who is picky with this kind of sauce rated it up there with his favorite restaurant. In this I used the whole pack of cream cheese and added more milk so it would not be so thick. I also added chicken and broccoli. We dont like nutmeg so I left that out. I made ceasar salad and garlic bread with this also.

1/2 cup grated parmesan cheese
3/4 cup milk
1/4 cup butter or 1/4 cup margarine
1/4 teaspoon white pepper
1/8 teaspoon garlic powder
8 ounces fettuccine pasta, cooked, drained
1/8 teaspoon nutmeg (optional)

Steps:

  • MIX cream cheese, parmesan cheese, milk, butter, white pepper, and garlic powder in medium sauce pan. Cook on low heat until cream cheese is melted and mixture is well blended.
  • Toss with hot fettucine, and sprinkle with nutmeg (OPTIONAL). Again, I omitted this part of the recipe because we do not like Nutmeg.

18 ounces fresh fettuccine
2 1/2 cups heavy cream
1/2 cup fresh lemon juice
12 tablespoons unsalted butter
2 cups grated Parmesan
2 teaspoons grated lemon zest
Pinch freshly grated nutmeg
Salt and freshly ground white pepper

Steps:

  • Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 4 minutes. Drain. Stir 2 cups of the cream and the lemon juice in a heavy large skillet to blend. Add the butter and cook over medium heat just until the butter melts, stirring occasionally, about 3 minutes. Remove from the heat. Add the pasta and toss. Add the remaining 1/2 cup of cream, and Parmesan to the cream sauce in the skillet. Add the lemon zest, nutmeg, salt, and white pepper. Toss the pasta mixture over low heat until the sauce thickens slightly, about 1 minute.

  • Cook the pasta according to package directions. In a saucepan or skillet over low heat, warm the butter and cream. Season with salt and pepper. Place half of the Parmesan into a large serving bowl. Pour the warm butter/cream mixture over the top. Drain the pasta and immediately pour it into the bowl. Toss a couple of times, and then sprinkle in the other half of the Parmesan. Toss to combine, thinning with pasta water if necessary. 16 tablespoons unsalted butter
3 cups grated parmesan cheese (Parmigiano Reggiano is the classic)
1/2 cup pasta water (reserved during the cooking of the pasta)
1/2 cup fresh basil leaf
salt and pepper
6 large basil leaves, coarsely chopped

Steps:

  • 1. Using a food processor, finely chop the 1/2 cup of basil leaves until the consistency of pesto.
  • 2. Cook pasta until al dente in salted water according to package directions.
  • 3. While pasta is cooking, melt butter on medium-low heat in a large saucepan - do not allow to boil or the butter will separate.
  • 4. When butter is melted, measure out 1/2 cup of water from the cooking pasta and add to the butter.
  • 5. Gently stir in the grated parmesan until thoroughly melted.
  • 6 Stir the basil from the food processor into the sauce.
  • 7. Add additional pasta water as needed to obtain a smooth consistency.
  • 8. Drain the pasta and immediately add to the sauce pan, gently tossing the pasta until coated.

Since it isn't mine, I've also included the original poster's notes and attribution. Yummy stuff! Introduction: This is the real thing. You will not find a better Fettuccine Alfredo other than at Alfredo's in Rome, Italy. The secret to his sauce is in the Parmigiano-Reggiano cheese (don't even try this recipe without it), the balance of the pepper and nutmeg. For some reason restaurants never get it right. 1 cup heavy whipping cream
2 pinches nutmeg, Ground
1/2 teaspoon black pepper, Ground

  • Grate the cheese, black pepper and nutmeg if you need to.
  • Put 4 quarts of water to boil.
  • Cooking: Set small frying pan in mid-high heat. Add the butter and the cream to the frying pan and mix well.
  • Stir the sauce frequently and add the black pepper, salt and nutmeg, boil and stir frequently until the sauce becomes heavier, then reduce the heat. Add the pasta to the boiling water along with some salt and cook to your liking.
  • Once the pasta is cooked, drain the pasta and add it to the sauce. Add the grated cheese to the sauce and pasta, and mix until the cheese is absorbed by the sauce.
