CROCK POT MAC & CHEESE - OAMC

Crock Pot Mac & Cheese - OAMC image

This is my kids favorite homemade version of mac and cheese. It does contain canned soup. If you're not a fan - don't try it! This freezes and reheats really well. I usually double this on a cooking day and it fills my 6 quart crock pot to the brim.

Provided by JillAZ

Categories     Cheese

Time 3h15m

Yield 10 serving(s)

Number Of Ingredients 6

1 lb macaroni noodles
10 ounces condensed cheddar cheese soup
8 ounces sharp cheddar cheese, shredded

12 ounces evaporated milk
1 cup milk

  • Cook macaroni noodles according to package directions. Drain. ( I usually slightly undercook them - until barely al dente).
  • While noodles are cooking, combine soup, cheeses and milks in a crockpot. Stir to combine.
  • Add cooked, drained noodles and stir well.
  • Cover and cook on low for 3 hours.
  • To Freeze:.

  • To Serve:.
  • Thaw in fridge. Reheat in microwave or place in baking dish that has been coated with cooking spray. Bake at 350 degrees for 20-25 minutes or until hot.

FAVORITE MAC & CHEESE- OAMC

Favorite Mac & Cheese- OAMC image

Make and share this Favorite Mac & Cheese- OAMC recipe from Food.com.

Provided by Munchkin Mama

Categories     Cheese

Time 1h

Yield 3 pans, 12 serving(s)

Number Of Ingredients 9

3/4 cup margarine or 3/4 cup canola oil
3/4 cup flour (can use up to half whole wheat if desired)
6 cups milk, warmed
6 bouillon cubes or 2 tablespoons instant bouillon granules
12 ounces cream cheese
6 cups sharp cheddar cheese, shredded
30 ounces dry pasta, cooked (2 lbs., I like rotini)
1 1/2 cups buttery crackers, crushed (like Ritz)
1/2 cup butter (1 stick) or 1/2 cup margarine, melted (1 stick)

Steps:

  • Make a white sauce: In a large heavy bottomed teflon sauceman or stock pot, melt/warm the 3/4 cup butter or oil over low heat. Add flour and stir until smooth. Cook the mixture until it begins to bubble. Do NOT let brown.
  • Gradually add the milk, stirring constantly. When the sauce has thickened (be patient; this could take 15 minutes or so.), stir in the bouillon.
  • Add in softened cream cheese until smooth.
  • Next add in the cheddar cheese until melted.
  • Finally, stir in the cooked pasta.
  • Press into 3 greased 1 1/2 quart or 2-quart baking dishes. (I like to use disposable foil containers for easy clean-up).
  • Combine cracker crumbs and butter. Store in 3 baggies and attach to macaroni and cheese dish.
  • Label and freeze.
  • To serve: Take out of freezer and thaw in refrigerator the day before serving. Sprinkle cracker mixture over macaroni and bake at 375 degrees for about 30 minutes or until the edges are bubbly.

MY FAVORITE MAC N CHEESE

My Favorite Mac N Cheese image

This is the creamiest, most yummy homemade mac-n-cheese I've ever eaten. Most homemade macaroni and cheese is grainy, to me, but not this one! And you can make it on the stove top for a quick meal, or in a crockpot for later. You can also make this up and freeze it for OAMC. I like to add sliced hot dogs mixed in for fun, or add cooked broccoli, peas, or whatever you like mixed into your mac-n-cheese.

Provided by Piper Lee

Categories     < 60 Mins

Time 40m

Yield 4-6 serving(s)

Number Of Ingredients 9

2 1/2 cups elbow macaroni, uncooked
4 tablespoons butter
3 cups grated medium cheddar
1/2 cup sour cream
1 cup milk
1 (10 3/4 ounce) can cheddar cheese condensed soup
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon dry mustard

Steps:

  • To cook on stove top:.
  • Cook macaroni until al dente, or doneness you prefer; drain, then return noodles to pot. In a separate saucepan, melt butter, then add cheese, sour cream, condensed cheddar cheese soup, milk, salt, pepper, and mustard; stir until completely melted, then pour over cooked noodles and mix well; serve immediately.
  • To cook in crockpot:.
  • Boil macaroni noodles for 5 minutes; drain and set aside. In a saucepan, melt butter, then add cheese, sour cream, condensed cheddar cheese soup, milk, salt, pepper, and mustard; stir until completely melted. Butter the inside of a slow cooker and place in the noodles; then pour the melted cheese mixture onto the noodles and mix until well combined. Cook on low for 2 to 2 1⁄2 hours stirring a couple times during the cooking. Test once in a while to check if the noodles are cooked to the softness you prefer, then serve.

TEST KITCHEN'S FAVORITE MAC AND CHEESE

Test Kitchen's Favorite Mac and Cheese image

Our ultimate mac and cheese relies on three different kinds of cheese -- American, cheddar, and Parmesan. For easier grating, put the block of cheese in the freezer for five minutes first.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Pasta and Grains

Time 30m

Yield Serves 6 to 8

Number Of Ingredients 9

1 pound short pasta, such as elbow macaroni, cavatappi, or rigatoni
Kosher salt and freshly ground pepper
3 tablespoons butter
1/4 cup flour
2 teaspoons mustard powder
3 cups warm whole milk, warmed
1 cup (4 ounces) finely chopped American cheese
2 cups (8 ounces) grated sharp cheddar
1 cup (2 ounces) grated Parmesan

Steps:

  • Boil pasta in a medium pot of boiling salted water until al dente, about 2 minutes less than per package instructions. Drain, reserving 1 cup pasta water.
  • Return empty pot to medium heat and add butter. When butter melts and foams, add flour and whisk until darkened slightly, 1 to 2 minutes. Add mustard powder and whisk to combine. Slowly whisk in milk. Bring to a boil, then reduce heat to medium and cook, stirring often, until thick enough to coat the back of a spoon, 3 to 4 minutes.
  • Reduce heat to low and add cheese in 3 batches, starting with American. Follow with cheddar and Parmesan. Whisk to fully combine after adding each cheese. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Add pasta, stir to coat, and serve.

HEARTY MAC & CHEESE

Hearty Mac & Cheese image

This was adapted from an Ellie Krieger recipe. I made a few of my own tweaks. A friend of mine challenged me to find a mac & cheese recipe that wouldn't leave us feeling like we ate our entire body weight in fattening dairy. I know it sounds strange to use squash as the base for the cheese sauce, but it actually worked. The dish doesn't taste like squash. It's nice and creamy with a crispy, browned top. If you're looking for a light alternative to many people's favorite comfort food, give this a try.

Provided by Diet It Up

Categories     Cheese

Time 1h

Yield 8 serving(s)

Number Of Ingredients 12

1 lb pasta, whole wheat (I like Barilla plus)
2 (10 ounce) packages winter squash puree, frozen (I used Cascadian Farms brand)
2 cups 1% low-fat milk
6 ounces extra-sharp cheddar cheese, grated
2 ounces monterey jack cheese, grated
1/2 cup part-skim ricotta cheese
3/4 teaspoon salt
1 teaspoon mustard powder
1/8 teaspoon cayenne pepper
1/4 cup parmesan cheese, grated
1/4 cup seasoned bread crumbs
2 teaspoons olive oil

Steps:

  • Preheat oven to 375 degrees. Coat a 9 X 13 baking pan with olive oil or cooking spray.
  • Bring a large pot of water to a boil. Add pasta and cook until al dente, about 6-8 minutes. Drain.
  • Meanwhile, place the frozen squash and milk in a medium saucepan and cook over low heat until the squash is fully defrosted. Turn the heat up and cook until almost simmering. Add the ricotta cheese. Use an immersion blender to make sure the squash, milk and cheese is nice and smooth (this isn't necessary, but it helped the consistency).
  • Remove the pan from the heat and stir in the Cheddar, Monterey Jack, salt, mustard and cayenne. Add drained macaroni to the cheese sauce and transfer to the prepared baking dish.
  • In a small bowl, combine the bread crumbs, Parmesan and olive oil. Sprinkle over the top of the mac & cheese. Bake for 20 minutes. Then broil for 3 minutes to crisp-up the top.

OUR FAVORITE MACARONI AND CHEESE

Our Favorite Macaroni and Cheese image

Creamy, cheesy macaroni with a light, crunchy topping: This is the macaroni and cheese that dreams are made of. A hit of ground mustard brings an unexpected kick to this guaranteed crowd pleaser.

Provided by Rhoda Boone

Categories     Cheese     Pasta     Side     Kid-Friendly     Frankenrecipe     Macaroni and Cheese     Cheese Week     Cheddar     Parmesan     Small Plates

Yield Serves 12

Number Of Ingredients 20

For the topping:
2 tablespoons unsalted butter, plus more for baking dish
2 tablespoons extra-virgin olive oil
2 cups panko (Japanese breadcrumbs)
2 large garlic cloves, minced
2 ounces finely grated Parmesan (about 1/2 cup)
1/2 teaspoon kosher salt
For the macaroni and sauce:
2 teaspoons kosher salt, plus more
1 pound dried elbow macaroni
1/2 cup (1 stick) unsalted butter
6 tablespoons all-purpose flour
4 cups whole milk
3/4 cup heavy cream
1/2 teaspoon ground white pepper
1 1/2 tablespoons mustard powder
16 ounces coarsely grated extra-sharp cheddar (about 6 cups)
2 ounces grated Parmesan (about 1/2 cup)
Special equipment:
9- by 13-inch baking dish

Steps:

  • Preheat oven to 400°F with rack in the middle of oven. Butter the baking dish.
  • Make the topping:
  • In a large skillet over medium heat, heat butter and oil until butter foam subsides. Add panko and garlic; cook, stirring, until crumbs are golden brown, 4-6 minutes. Transfer crumbs to a medium bowl, stir in Parmesan and salt, and set aside.
  • Prepare the macaroni and sauce:
  • Set a large, covered pot of salted water over high heat to boil. Add macaroni and cook until just al dente (avoid overcooking). Drain macaroni and set aside.
  • In a large wide pot over medium-low heat, melt the butter. Sprinkle flour over butter, whisking to incorporate and make a roux. Cook, stirring constantly with a wooden spoon, until roux is light golden, about 4 minutes. Gradually pour in milk and cream, whisking constantly to incorporate and make a béchamel sauce. Raise heat to medium-high and bring sauce to a low boil, whisking constantly. Reduce to a simmer, whisking occasionally, and cook until béchamel sauce is thick and coats the back of a spoon, about 3 minutes more.
  • Add 2 tsp. salt, pepper, and mustard powder. Add the cheeses in three batches, whisking until each addition is completely melted before adding more. Remove from heat.
  • Add the drained macaroni to the pot with the cheese sauce and stir well to coat. Transfer macaroni mixture to the buttered baking dish and place on a rimmed baking sheet. Sprinkle topping evenly over macaroni and bake until golden and bubbling, 18-22 minutes. Let cool 15 minutes before serving.
