- For the oregano vinaigrette: In a medium bowl, whisk together the olive oil, vinegar, Dijon, honey, dried oregano and some salt and pepper to combine.
- For the salad: Set aside 2 tablespoons each of the feta and pistachios for serving, then add the remaining feta and pistachios to a large bowl. Add the spinach and watermelon, drizzle over the dressing and toss to coat. Transfer to a serving bowl and garnish with the reserved feta and pistachios.

- Mound the baby spinach onto individual plates and top with the watermelon, red onion, feta cheese, and chopped basil. Or you can toss them altogether in a large serving bowl.

- Sprinkle each plate with a small amount of the finishing salt.
- Serve immediately.

- Slice the watermelon lengthwise about 1/3 of the way from the top.
- This will be your bowl so you may have to slice a small portion off the bottom in order for it to sit flat.
- Either ball or chunk the watermelon flesh.
- Hollow out the watermelon shell completely.
- Ball or chunk the remaining melons.
- Chunk the pineapple.
- Mix all the fruits in the melon bowl.
- Combine the juices, water and sugar together.
- Pour over the fruits and toss lightly.

I really wanted to showcase the 18 year aged balsamic I recently purchased so I have made this quick and fresh watermelon blueberry salad. The balsamic brings out the freshness of the watermelon and blueberries and saltiness of the feta cheese. This is a great side dish to bring to a cookout or a wonderful light refreshing snack to eat whenever you want! I'm sure this won't be a problem but try to eat it up the same day you make it otherwise the liquid from the watermelon and dressing will make the cheese wet. Here is a little more about the oil and vinegar used in this recipe: Koroneiki Olive Oil: Koroneiki is a Greek olive that is small in size but high in levels of poly-phenols, the natural antioxidants found in plants that may reduce the risk of heart disease and cancer. This olive oil is very robust and a great staple olive oil for any cook's kitchen. Aged Balsamic Vinegar: It is aged 18 years in chestnut, oak, mulberry cherry and ash barrels.
