- In large skillet sauté chicken onion and garlic in oil 5 to 7 minutes or until the chicken is no longer pink.
- Add water and tomato; bring to a boil.
- Add the rice and seasoning package; reduce heat. Cover and simmer 15 minutes.
- Add peas and olives and cook 5 to 10 minutes longer or until liquid is absorbed.
SPANISH ARROZ CON POLLO RECIPE (SPANISH CHICKEN AND RICE RECIPE)
Steps:
- Begin by sprinkling chicken pieces with salt and pepper. Then brown them in a large skillet in the oil.
- Once chicken pieces are browned, remove them from the skillet and place them on paper towels to drain.
- Meanwhile, cook onions, peppers, garlic, and rice in the oil until oil is absorbed and the rice is coated.
- After that, stir in the broth, cumin, saffron, and tomatoes.
- Arrange chicken pieces on top of the rice and bring to a boil.
- When liquids are boiling, lower the heat, and cover the pan.
- Simmer for about 40 minutes or until chicken is cooked and rice is tender.
- Garnish with olives to serve.

Steps:
- In a deep, heavy-based pot (such as a Dutch oven), heat the oil on medium high. Sauté the chicken, in batches if necessary, until golden on all sides, 7 to 10 minutes.
- Transfer the chicken to a platter.
- Sauté the sausage until browned, about 3 minutes.
- Transfer the sausage to the platter.
- Pour off and discard the excess oil, leaving about 1 Tbs. in the pan.
- Reduce the heat to medium and sauté the onion, pepper, and garlic until softened, about 5 minutes.
- Return the chicken and sausage to the pot and add the cumin, paprika, chili powder, and turmeric, if using, stirring to distribute the spices. Cook for 1 minute and then add the tomatoes, wine (or beer), and bay leaf.
- Increase the heat to medium high, stir, and cook for 2 minutes.
- Add the rice and water. Bring to a boil, cover, and reduce the heat to a simmer. Cook until the rice is done and the liquid is absorbed, about 25 minutes. (If the rice is done but still very soupy, remove the cover and cook very gently until the liquid evaporates, taking care not to burn the rice.).
- Give a toss and then let sit for 5 minutes before serving.

Steps:
- In a 5 qt pot, heat olive oil and sofrito.
- Add chicken, cook until light golden.
- Add water, sazon, adobo, chicken bouillon, tomato paste and cilantro.
- Cover and cook until chicken is done.
- When chicken is done, remove from pot and set aside.
- Add rice to same water you cooked chicken inches
- Cook rice as normal.
- When done, add chicken and cover. Leave for about 10 minutes.
- garnish with cilantro leaves. You can also add roasted bell peppers for garnish.

- In a non-stick skillet, heat oil over medium-high heat.
- Add chicken, in batches, and brown lightly on all sides.
- Transfer to slow cooker stoneware.
- Reduce heat to medium.
- Add onions and cook, stirring, until softened.
- Add garlic, salt and pepper and cook, stirring, for 1 minute.
- Add rice and stir until grains are well coated with mixture.
- Stir in saffron, tomatoes and chicken stock.
- Transfer to slow cooker stoneware and stir to combine with chicken.
- Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until juice run clear when chicken is pierced with a fork.
- Stir in green pepper and peas, cover and cook on HIGH for 20 minutes, until vegetables are heated through.
- Garnish with olives, if using, and pass hot pepper sauce, if using.
- TIP: If you are in a hurry, skip browning the chicken.
- Just make sure that all the skin is removed; otherwise the dish will be too fatty.
- *Saffron is a pungent, bittersweet spice garnered from a particular kind of crocus.
- Buy saffron in threads, not powder, preferably from a reputable purveyor.
- Turmeric can be used to convey the saffron color in a dish, but it will not replicate the unique and haunting flavour of the original.

Steps:
- Season chicken breast with salt and pepper.
- Brown chicken in skillet, 2-3 minutes on each side (with a little bit of oil in skillet so that it wont stick).
- When it's chicken is browned, remove from skillet; set aside. Cut into pieces when cool enough.
- In the same skillet, put shortening or Lard, let it melt. When melted, add green peppers and onion (use as little or as much as you like). Saute about 2 minutes.
- Add rice. Fry rice until golden brown.
- Add salt, pepper, cumin and minced garlic (or garlic powder, not garlic salt), be careful not to burn garlic.
- Add chicken, toss to coat with seasonings.
- Add hot water, slowly -- then add chicken bouillon and then tomato sauce. (don't have to use all of can, I usually use about 3/4 of the can).
- Bring to a boil, reduce heat to a simmer and cover. DO NOT UNCOVER AT ALL UNTIL ALL OF THE WATER IS EVAPORATED. This is the secret!
- When the water is just about evaporated, turn heat off and keep on stove until completely evaporated.
- Remove from skillet into a serving dish and keep covered until ready to serve.
- Serve with beans and homemade tortillas!
- *On the seasonings, I don't normally measure, I just dash here and there to my taste. If not using garlic cloves, use garlic powder NOT garlic salt. You have to keep doing it until you get it perfect. I have been making this for about 25+ years and sometimes it comes out perfect, sometimes is still needs something! Keep practicing, you'll get it!

- Sprinkle chicken pieces with salt, pepper, and garlic salt.
- Fry in vegetable oil until brown on both sides; set aside.
- Sauté green pepper, onion, and garlic in olive oil.
- Place browned chicken and sautéed vegetables into a large pot,on medium heat.
- Dissolve the chicken bouillon in the boiling water.
- Add to the pot, tomato soup, tomato sauce, chicken bouillon, and capers.
- Cook on medium heat.
- When the mixture starts to boil, add the Spanish olives, sweet peas (with juice), and pimentos (with juice).
- Add the rice and beer.
- Simmer for 2 hours.
- If it gets too thick thin with a little beer.

SPANISH-STYLE CHICKEN WITH SAFFRON RICE (ARROZ CON POLLO)
Steps:
- Pat chicken dry and season with salt and pepper. Heat oil in a 12-inch heavy skillet (at least 2 inches deep) over moderately high heat until hot but not smoking, then brown chicken on all sides, about 12 minutes total. Transfer chicken with tongs to a plate.
- Pour off all but 2 tablespoons fat from skillet and add onion, bell pepper, and salt to taste. Cook over moderate heat, stirring, until softened, about 7 minutes. Add garlic, paprika, and rice, then cook, stirring, 1 minute. Add wine and boil, uncovered, 2 minutes. Stir in tomatoes with juice, chicken broth, saffron, and bay leaf. Nestle chicken in rice, adding any juices from plate.
- Cook, covered, over low heat until chicken is cooked through, rice is tender, and most of liquid is absorbed, about 15 minutes. Remove from heat and stir in peas, olives, and salt and pepper to taste. Cover skillet and let stand 10 minutes. Discard bay leaf.
FAVORITE ARROZ CON POLLO (SPANISH CHICKEN WITH RICE)
This is a healthy family favorite. Fresh chicken is best, but in a pinch you can used frozen breast tenderloins. I use saffron rice from the health food store in place of white or brown rice. More flavor!

- Simmer chicken, garlic, and salt in water 30 minutes.
- Remove chicken, reserving 2 cups of the cooking liquid. De-bone and dice chicken. (chicken can be cooked and de-boned the night before.).
- Saute rice in oil in skillet until golden. Stir in reserved cooking liquid, chicken, salsa, cumin, pepper, and an additional teaspoon of salt.
- Bring to a boil, reduce heat, cover and simmer 15 minutes.
- Layer top of skillet mixture with tomatoes, black olives, and green onions. Cover and continue cooking about 5 minutes, or until heated through.
