My mum and aunt submitted this uber healthy recipe in the newspaper, it originally had eggs, but we tweaked it to make it eggless. Super easy! Super healthy.

Number Of Ingredients 10

500 ml banana puree or 4 large bananas
125 ml plain yogurt
250 ml sugar
1/2 cup natural bran (i prefer oat)
2 cups all-purpose flour (sifted)
1 teaspoon baking powder
1/4 cup pecans (optional) or 1/4 cup walnuts, chopped (optional)
1/3 cup raisins (optional)
1/2 cup boiling water
1 teaspoon bicarbonate of soda

Steps:

  • Preheat oven to 160 degrees Celsius.
  • Grease or spray a rectangular oven baking dish (roughly 15cm x 25 cm).
  • Mix banana puree and yoghurt well. Stir in sugar and beat till sugar dissolves.
  • Add bran, flour and baking powder to wet ingredients and mix well.
  • Now add bicarb to boiling water and add this to your mixture and stir well. Bake at 160 degree Celsius for 45 minutes to an hour or till the cake is golden brown.
  • A skewer might come out slightly sticky as this cake is very moist and dense. The cake should pull away from the sides of the dish on its own.

6 ripe bananas
1 cup sugar
1 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda

Steps:

  • Mash the bananas, sugar and vanilla together.
  • Sift the flour, baking powder and soda together.
  • Mix the liquid with the dry and pour into a 7.5 x 3.5 x 2 inch loaf pan.
  • Put into a preheated oven at 350°F for one hour.

I know, I know, this site certainly doesn't need another banana bread recipe...but this is truly a wonderful, moist, nearly fat-free loaf. There's just the fat in the eggs, and you could probably substitute Egg-Beaters (although I've never tried it). Even my "why do we have to eat healthy" family love it....and they all swear to hate any baked goods made with whole wheat flour!

1/2 cup unsweetened applesauce
1 cup brown sugar (I'm sure this could be reduced)
2 eggs
1 teaspoon vanilla
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1 cup ripe mashed banana
1/2 cup nonfat sour cream

Steps:

  • Preheat oven to 350 degrees.
  • Spray loaf pan with non-stick cooking spray.
  • Mix applesauce, sugar, eggs and vanilla.
  • Add flour and baking soda, mix well.
  • Add bananas and sour cream till blended.
  • Pour into loaf pan and bake for 70 minutes.
  • Note: If you don't have enough banana to measure 1 cup, use additional applesauce for the balance.

ALMOST NO FAT BANANA BREAD

This bread is surprising moist and has a wonderful flavor. For a little variation, you can add nuts or raisins.

1 ½ cups all-purpose flour
¾ cup white sugar
1 ¼ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
2 egg whites
1 cup banana, mashed
¼ cup applesauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.
  • In a large bowl, stir together flour, sugar, baking powder, baking soda and cinnamon. Add egg whites, bananas and applesauce; stir just until combined. Pour batter into prepared pan.
  • Bake in preheated oven for 50 to 55 minutes, until a toothpick inserted into center of loaf comes out clean. Turn out onto wire rack and allow to cool before slicing.
