Herbs provide an aromatic flavor to this classic pasta dinner that's ready in 20 minutes - perfect if you love Italian cuisine.

1 package (16 oz) vermicelli
1 tablespoon capers
1/4 cup olive or vegetable oil
2 tablespoons chopped pine nuts
1 tablespoon chopped fresh parsley
2 teaspoons chopped fresh rosemary leaves
2 teaspoons chopped fresh sage leaves
1 teaspoon chopped fresh basil leaves
1 pint (2 cups) cherry tomatoes, cut into fourths
Freshly ground pepper, if desired

Steps:

  • Cook vermicelli as directed on package.
  • Meanwhile, coarsely chop capers if they are large. In medium bowl, mix capers and remaining ingredients except tomatoes and pepper. Stir in tomatoes.
  • Drain vermicelli. In large bowl, toss vermicelli and herb mixture. Sprinkle with pepper.

A recipe I found on the internet that I have yet to try. It sounds like a really simple comfort food type of meal. I LOVE chicken so I would probably add in some to make a huge meal of it.

1 large green pepper, cut into 1/2-inch strips
1 large red pepper, cut into 1/2-inch strips
2 medium red onions, cut into wedges
2 cups mushrooms, quartered
4 garlic cloves, sliced
2 teaspoons italian seasoning
1 dash salt and pepper
2 tablespoons olive oil
8 ounces vermicelli, uncooked
1 cup chicken broth
1 tablespoon parmesan cheese
1 tablespoon parsley

Steps:

  • Heat oven to 425 degrees.
  • In 13x9x2" baking dish, stir together peppers, onion, mushrooms, garlic and Italian seasoning. Sprinkle w/olive oil: toss to coat evenly.
  • Bake 45-55 minutes stirring occasionally until veggies are brown and tender. Meanwhile, cook pasta according to package and drain.
  • Heat broth on stove until hot.
  • Remove veggies from oven; pour broth over veggies mixture, stirring until vegetables are coated.
  • Toss veggie mixture and hot pasta. Sprinkle with cheese and parsley.

1/2 lb vermicelli
1 red bell pepper, diced
1 bunch green onion, chopped (tops only)
1 can water chestnut, sliced (optional)
1/2 cup sesame seeds or 1/2 cup crushed peanuts
1/2 cup vegetable oil
1 teaspoon red pepper flakes (more or less to taste or desired heat)
1 garlic clove, minced
1/2 cup soy sauce
1/2 cup honey

Steps:

  • Cook vermicelli according to package directions (al dente). Drain and put into a large bowl.
  • Add diced vegetables.
  • In a saucepan on the stove add the oil, red pepper flakes and garlic, saute about one minute.
  • Add the soy sauce and honey and bring to a low boil for about one minute.
  • Pour dressing over pasta/vegetables and toss to coat.
  • Toss a couple of more times before serving.
  • After final toss before serving sprinkle the top with sesame seeds or crushed peanuts.

1 teaspoon chopped fresh sage leaves
1 pint cherry tomato, cut into fourths (2 cups)

Steps:

  • Cook and drain vermicelli as directed on package.
  • Toss vermicelli and remaining ingredients.
