1 packet (1 ounce) Hidden Valley® Original Ranch® Salad Dressing & Seasoning Mix
2 pounds small red potatoes, quartered

Steps:

  • Place potatoes in a gallon-size Glad® Food Storage Bag and add oil; seal bag. Toss to coat. Add salad dressing mix and toss again until coated. Bake in ungreased baking pan at 450 degrees F for 30 to 35 minutes or until potatoes are brown and crisp.

Easy to make and super flavorful salt and vinegar roasted potatoes are inspired by my favorite salt and vinegar chips! Potatoes are boiled in salted vinegar water until tender then seasoned and roasted in the oven until perfectly crispy. Serve with sour cream or your favorite chive onion dip.

2 1/2 pounds yukon gold potatoes, cut into 1-2 inch pieces ((about 5 potatoes))
1 cup + 3 tablespoons white distilled vinegar
1 tablespoon + 1 teaspoon kosher or sea salt
3 tablespoons olive oil
1/2 teaspoon black pepper
for serving: fresh chopped chives, sea salt and sour cream

Steps:

  • Add the potatoes, 1 cup vinegar and 1 tablespoon of salt to a large pot and add water to cover by 1 inch. Bring to a boil, reduce to medium-high heat and simmer until fork tender, about 25-30 minutes.
  • Preheat the oven to 450 degrees. F and line a baking sheet with parchment.
  • Drain the potatoes and return to the pot. Add 3 tablespoons olive oil, 1 tablespoon of vinegar, 1 teaspoon salt, and 1/2 teaspoon black pepper; toss together. It's okay if the potatoes fall apart.
  • Transfer the potatoes to the prepared baking sheet and spread into a single layer. Bake for 25-30 minutes, or until crispy. Once done, toss the potatoes with the remaining 2 tablespoons of vinegar.
  • Garnish with chives and sea salt, if using. Serve with sour cream.

Farmhouse Baked Eggs with Cheddar & Potatoes image

3 tablespoons unsalted butter
1 1/2 pounds red-skinned potatoes, diced
1/4 cup chopped flat-leaf parsley
2 large cloves garlic, minced
Kosher salt and freshly ground black pepper
8 large eggs
1 cup shredded extra-sharp white Cheddar cheese (about 4 ounces)

Steps:

  • Preheat oven to 400 degrees F.
  • Melt butter in a large cast-iron skillet over medium heat. Add potatoes and cook, stirring occasionally, until tender and brown, about 15 minutes. Stir in parsley and garlic. Season with salt and pepper, to taste, and remove from heat.
  • Make 4 shallow depressions in potatoes and break 2 eggs into each. Transfer to oven and bake until egg whites are cooked and yolks are still runny, about 10 minutes. Sprinkle cheese over eggs and continue baking until cheese melts, about 1 minute more. Serve immediately.

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Mix olive oil, garlic powder, parsley, and salt together in a large bowl; add potatoes and stir until coated. Mix bacon and onion into potato mixture. Spread potato mixture onto a baking sheet.
  • Roast in the preheated oven until potatoes are tender and crisp, about 30 minutes. Toss potatoes with Parmesan cheese and top with lemon zest.

6 tablespoons unsalted butter
1/3 cup all-purpose flour
1 quart milk
3 cups shredded sharp Cheddar cheese
3 cups shredded Gruyere cheese
2 cloves garlic, smashed
1/2 teaspoon freshly ground pepper

1/2 teaspoon freshly grated nutmeg
7 medium Yukon gold potatoes, unpeeled, cut in 1/2-inch thick coins
1/4 cup chopped fresh parsley, for garnish

Steps:

  • Preheat the oven to 300 degrees F. Melt 4 tablespoons of the butter in a large, oven-safe high-sided skillet over medium-high heat. When the foam subsides, add the flour and cook, stirring constantly, until it has the consistency of wet sand, about 3 minutes. Remove from the heat and whisk in the milk, little by little. Put the saucepan over high heat and bring to a boil, whisking constantly. Lower the heat and whisk in 2 cups of the Cheddar, 2 cups of the Gruyere, the garlic, pepper and salt. Whisk until the cheese is melted, then stir in the nutmeg. Add the sliced potatoes to the pan. Scatter the remaining 2 tablespoons butter and the remaining 1 cup Cheddar and 1 cup Gruyere over the top. Bake in the oven for 45 minutes, then increase the oven temperature to 400 degrees F., and bake until the potatoes are fork-tender and the top is bubbly and golden brown, about 15 minutes more. 2 cups potatoes
1 cup milk
1/4 cup margarine
2 tablespoons sugar
1 1/2 teaspoons salt
1 (8 g) envelope fast rising yeast
4 cups flour
1 teaspoon olive oil
1/2 teaspoon honey
1/2 teaspoon water

Steps:

  • Peel and boil about 6 small potatoes in salted water in a small saucepan. In the meantime, measure the milk, margarine, sugar and salt together. When the potatoes have cooked through, drain them and mash in the milk mixture. Transfer into a food processor and pulse until smooth. By now, the mixture should have cooled to about 110 degrees. Sprinkle in the yeast and let rest for 10 minutes.
  • Place the flour in the bowl of a stand mixer and attach the dough hook. Pour in the potato mixture and run the mixer for 10 minutes. Coat the dough ball with half of the olive oil and roll it around in the bowl. Cover the bowl with a moist cloth and let rise in a warm place for about 30 minutes or until doubled.
  • Using a floured surface, knead the dough about a dozen times; coat it with the remaining olive oil and return it to the bowl. Cover with the moist cloth and let it rise again in a warm place for about 30 minutes or until doubled.
  • Use cooking spray to coat two loaf pans. Punch the dough down, form it into two separate loaves and set it into the pans. Cover it and let it rise one final time in the warm place for about 15 minutes. Preheat the oven to 375 degrees.
  • Mix the honey and water together and brush it over the surface of the loaves. Bake for approximately 30 minutes or until a rich golden brown, and hollow sounding when tapped. Cool for 5 minutes, then remove from pans to cool completely.

Original recipe comes from "Best of Country Cooking 2003" by Reiman Publications with my own personal tweakings (of course)!

5 lbs potatoes, peeled & cubed
1/2 lb bacon
3 green onions
3 cups cheddar cheese, shredded, DIVIDED
3/4 cup sour cream
1/2 cup milk
4 tablespoons butter
salt & pepper, to taste

Steps:

  • Place potatoes in large pot, cover with water; boil until fork-tender.
  • While that is cooking, fry bacon; drain & crumble; slice onions; set aside.
  • Preheat oven to 350; grease a 3-quart casserole dish; set aside.
  • Drain the potatoes, dump into mixing bowl, add sour cream, milk, butter, salt & pepper; beat on medium-low until light and fluffy.
  • Stir in TWO cups cheese, bacon crumbles, and onion slices.
  • Transfer mixture to prepared dish, sprinkle remaining cheese over the top.
  • Bake (UNCOVERED) for 30 minutes OR heated through--cheese will be melted & bubbly.
